HACCP• The American Space Agency – NASA – was anxious to ensure that astronauts did not

get ill from the food they were eating.

• The Pillsbury Company were commissioned to devise a way of guaranteeing safe food based on prevention and not relying on expensive end product testing

• They devised the HACCP system

• How does HACCP work ?

• HACCP works by systematically considering each step in any food business and identifyingwhat hazards to food safety might be present at the step.

• The company then decides how to control what happens at each step to eliminate thehazards or reduce them to an acceptable level.

• It is important to understand that HACCP only concerns food safety. Quality issues such asappearance of the product are not considered

wash basin, out of date food, mouldy food, signs of pests, broken equipment.• To report if you are ill, especially if you have diarrhoea, vomitting or boils• To wear the protective clothing provided• To keep yourself, your protective clothing and your equipment clean• To keep food at the correct temperature (keep it chilled or keep it hot)• To cook food thoroughly and cool it quickly
