Wild winter taking its toll on salt supplyBy ALEX SOULIER

BOLINGBROOK – TheBolingbrook Village Boardwas expected to approve anexpenditure to purchase moreroad salts from the State of Illi-nois on Tuesday night.

The board and the publicworks department are hopingto acquire an additional 500tons of bulk rock salt from Car-gill, Inc. through the IllinoisJoint Purchasing Program.The salt will cost $25,275, ac-cording to Bolingbrook MayorRoger Claar.

This year, Bolingbrook al-

located an annual budget ofabout $126,375 for road saltsand related services. The extra500 tons would put the villageabout 20 percent above theoriginal budget, according tovillage board documents.

All of the community’s roadsalts are provided by the statethrough the Illinois Joint Pur-chasing Program.

The Joint Purchasing Pro-gram allows the public worksdepartment to acquire salts,but the village must then payback 100 percent of what it asksfor. As a result, the winter saltsupply may contain leftoversalt from the previous season,

or several tons of new roadsalts provided by the state.

So far, the village has usedup the nearly 2,500 tons ofsalt it purchased prior to thiswinter, plus the surplus thatremained following the 2012-13season.

“We are approaching ourbudget for this year – it is cer-tainly something we are verymindful of,” said Lucas Rick-elman, head of public works.“Our primary concern is tomake sure the roads are safe,and we use everything at ourdisposal in order to keep theroads as safe as possible.”

ment have had their hands fullthis year between near recordsnowfall and temperatures.

January ranked as Chica-go’s third snowiest winter and10th coldest on record, accord-ing to the National WeatherService. About 33.7 inchesof snow hit Chicago and thesuburban area while tempera-tures averaged 15.7 degrees– 8 degrees below the annualnorm.

“It’s not just the snow thattakes a negative toll on theroads,” Rickelman said. “Thefrigid cold and the ice can bothlead to us deploying the salttrucks.

“Overall, this winter hasbeen very rough because thesnow and cold has been relent-less. It started around the newyear and has yet to let up.”

Rickelman – who was incharge of the village’s snowremoval for eight years beforetaking over for former Boling-brook Public Works DirectorMike Drey last year – said thatwhile this season’s extremeweather is unusual, it is notunheard of.

“We went through a lot ofsalt in the winter of 2007-08,”Rickelman said. “There wasover 50 inches of snow thatseason.”

BOLINGBROOK – The par-ents of a mentally and phys-ically disabled teen say highschool staff members forcedher to clean a bathroom andthreatened to lock her insidelast year.

On Feb. 5, Gregory and LisaMcNeal filed a lawsuit againstthe Valley View School Districtand Bolingbrook High School,as well as Lauren Hughes,

Susan Krueger and MelissaSoncek, who are identified asteachers or teacher’s aides.

The McNeals claim theirdaughter, Jada, was mistreat-ed while attending the highschool’s special education pro-gram Feb. 13, 2013, when shegot her menstrual cycle andhad to change her diaper andmenstrual pad with assistancefrom Krueger and Soncek.

The complaint says JadaMcNeal has cerebral palsy,requires a wheelchair and a

diaper, and is legally blind inone eye. She also needed an as-sistant to get on and off the busand use the washroom.

“[After they’d come out]Hughes ... informed Jada thatshe had made a mess in thewashroom, that she left tissuepaper in and around the toi-let, that she left blood in andaround the toilet and that shewas required to clean up boththe tissue paper and blood,”the lawsuit claims.

When reached for comment,

Bolingbrook High School Prin-cipal Michael White said thewomen named in the lawsuitdo an excellent job and arewell-trained. He had no addi-tional comments.

The lawsuit claims thethree women failed to verifythe blood belonged to Jada andforced her to mop up blood inviolation of the OccupationalSafety and Health Administra-tion without any kind of pro-tective clothing.

“Hughes then physical-

ly threatened the wheel-chair-bound mentally andphysically disabled minorthat she would ‘lock her inthe bathroom if she ran overanother person’s foot with herwheelchair,’” the suit claims.

The five-count lawsuit saidthe disregard for the girl’ssafety and infliction of emo-tional distress should awardthe McNeals damages of atleast $250,000. The parties arescheduled to appear in courtMay 27.

Governor signs bill to ease traffic on interchangeSUBURBAN LIFE MEDIA

BOLINGBROOK – One ofthe final obstacles holdingback the Interstate 55 andWeber Road interchange con-struction project near Boling-brook has been cleared.

Legislation sponsored bySen. Jennifer Bertino-Tar-rant, D-Shorewood, in theSenate and Rep. Natalie Man-ley in the House was signedinto law by Gov. Quinn on

Feb. 3, allowing the IllinoisDepartment of Transporta-tion to move forward withthe project to ease traffic inthe area.

A law passed seven yearsago designated 200 acres ofland in Crest Hill as surplusstate property and reallocatedit for sale. The proceeds of thesale – estimated in 2007 to bringas much as $30 million – wereto be used to help pay for im-provements to the Weber Road

and Interstate 55 interchange.The land remains un-

soldand because the lawidentified the land sale as thefunding source for future con-struction and the road projectcould not begin without thatrevenue stream, according toa release.

The signage of State Bill1219 will allow IDOT to moveforward despite the land stillbeing unsold.

“I am grateful that the

governor understands theimportance of this construc-tion project and our need tomove forward, independent ofwhether the land is ever pur-chased,” Senator Bertino-Tar-rant said.

Will County officials esti-mate an average of 31,700 vehi-cles travel on Weber north ofthe interchange each day and31,000 travel south of it.

IDOT estimates that an av-erage of 107,800 vehicles travel

each day on I-55 south of theinterchange and 133,700 travelnorth toward the entrance ofI-355.

“Will County is one of thefastest growing areas in theentire nation,” Bertino-Tar-rant said. “It is imperativethat this roadway can handleour increased traffic and thatresidents and commuters areable to travel safely. Thisroad project will accomplishthat.”

BOLINGBROOK – A Chicagoman has been charged with armedrobbery and battery for a Oct. 7incident outside of a Bolingbrookoffice.

Michael McCarroll, 38, 6432S. Peoria, Chicago, allegedly bat-

tered and robbed a 48-year-old manoutside his workplace, police said.

McCarroll and two other menallegedly approached the victim atthe entrance of the office, 6 Terri-torial Court, and inquired aboutjob openings before McCarrollknocked him to the ground andthe three offenders took cash and a

wallet, according to police. The vic-tim then fled into the business andnotified a co-worker, police said.

The incident was investigatedand detectives were able to linkMcCarroll to the case, accordingto police.

Bolingbrook Police ProblemOriented Policing Unit served the

warrant on McCarroll and tookhim into custody in Chicago. Hewas interviewed, processed andtransported to the Will CountyAdult Detention Facility.

The incident remains underinvestigation. It’s unclear if po-lice have identified the two othersuspects.

ROMEOVILLE – Basketballenthusiasts will get to playon NBA and college-calibercourts when Romeoville’s newAthletic and Events Centeropens, after the village boardof trustees approved a contractto install removable courtsFeb. 5.

The board during their reg-ular meeting last week at Vil-lage Hall approved a $463,000contract with Connor SportsFlooring, a Salt Lake City-based company that specializ-es in basketball court flooring,to install six more basketballcourts in the center.

“[Part] of the impetus for

this is interest in the center,”Mayor John Noak said, refer-encing plans to host a majoryouth basketball tournamentaffiliated with NIKE in April.“You’ll start to understandwhy this is becoming a veryexciting facility.”

The courts are being paidfor through tax increment fi-nancing district funds, withfunds coming back throughthe hotel-motel tax and conces-sion sales.

Connor Sports Flooringis the official surface of theNCAA Men’s and Women’s Fi-nal Four tournaments. It alsoinstalled the courts for profes-sional and college teams likethe Boston Celtics, OklahomaCity Thunder, University of

Florida and University of Lou-isville.

The company will installsix of its QuickLock basketballcourts in the center, whichwill be portable and can be re-moved to reveal artificial turffor soccer and other events inthe winter months.

The village planned for thecenter, located on the corner ofNormantown Road and Route53 and fully opening aroundApril 1, to become a catalystfor attracting new business tothe Route 53 corridor.

“A lot of people worked onthe plans and put a lot of timein it,” Noak said of when thevillage was deciding how todevelop the corridor. “We alsolooked at how other communi-

ties did it. This was a collabo-rative effort.”

Noak added how the centergives a boost to existing busi-nesses in the area and attractspeople from outside Romeo-ville to the city center.

Hosting the NIKE tour-nament, which includes 370teams with the best high schoolbasketball players in the Mid-west competing in front ofbrand name college coacheslike University of Kentucky’sJohn Calipari and Duke Uni-versity’s Mike Krzyzewski, isan example of how the centerwill help drive local business

in Romeoville, Village Manag-er Steve Gulden said.

The board also updated andorganized the zoning code toreflect current times, changedthe liquor code to allow condi-tional licenses for businesseswanting to include video gam-ing and liquor on their estab-lishments, and voted to raisethe motel-hotel tax from 6 per-cent of rent to 9 percent of rent.

Also on Feb. 5, the boardcongratulated Director ofParks and Recreation Kel-ly Rajzer on an exceptionalworkplace award won by thedepartment.

BenedictineUniversity invitesgubernatorial rivals to debate

LISLE – Benedictine Univer-sity will play host to the finaldebate before the 2014 primaryfeaturing the Republican can-didates running for governor.

The university has invitedthe four candidates – state Sen.Bill Brady, R-Bloomington,state Sen. Kirk Dillard, R-Hin-sdale, state Treasurer DanRutherford and Bruce Rauner– who are vying to run againstincumbent Democratic Gov.Pat Quinn in November.

Brady, Dillard and Ruther-ford have committed to attendthe debate, while Rauner hasnot yet responded, accordingto the university.

The debate will be held from7 to 9 p.m. March 6 at the Danand Ada Rice Center on the uni-versity’s main campus in Lisle.

Benet students attend National March for LifeSUBURBAN LIFE MEDIA

LISLE, IL – Recently, 38students and five chaperonesfrom Benet Academy joinedrepresentatives from through-out the Diocese of Joliet on ajourney to Washington, D.C.

The purpose of their trav-els was to participate in theMarch for Life on Jan. 23 insupport of the sanctity of allhuman life from conception tonatural death, according to arelease from the school.

The trip began Jan. 19 witha 14-hour bus ride. Upon ar-rival in Washington D.C., thestudents visited many of thetop attractions including theSmithsonian Institution andthe Holocaust Memorial Mu-seum.The group concluded theday with an evening visit tothe Lincoln Memorial.

On Jan. 21, despite heavysnow, the group visited theAir Force Memorial and then

proceeded to Arlington Na-tional Cemetery where theywitnessed the changing of the

guards and a wreath laying atthe Tomb of the Unknown Sol-dier.

They then proceeded tovisit the graves of John F.Kennedy and Robert Kennedy

where the eternal flame is lo-cated. The group finished theday with a visit to the Basilicaof the National Shrine, on thecampus of the Catholic Univer-sity of America, for the Vigilmass prior to the beginning ofthe March for Life.

On Jan. 22, the group awokeearly to attend the Youth Massand Rally at the DC Armory,which officially began the 2014March for Life.

After the mass the studentsbraved the cold and snow asthey marched through theentire National Mall, withspecial stops in front of theCapitol and Supreme CourtBuildings.

Benet Academy ChancellorAbbot Austin Murphy O.S.B,joined them for the March forLife. Upon completion of theMarch the group had one lastmeal together before boardingthe buses for the long bus rideback to Benet Academy.

OurSpring Breakers sessions (ages 5 to 15) are always popular butthis year, they are scheduled to coincide with a trip to the DuP-age Children’s Museum.

Registrations for both programs are taken separately. Sonow you have a fun place to spend spring break and a field tripto look forward to also!

For those with a sweet tooth, we are offering Delightful Des-serts, (ages 13 and older), a chance to make delicious treats toenjoy and share. Lunch Bunch will take us (ages 16 and older)out to three local golf course restaurants for some first-classmeals with friends. The first trip is March 16 to P.B. Mulligan’sat the Prarie Bluff Public Golf Course in Lockport. Bring yourappetite!

Looking forward to playing outdoors again? Sign up forBusy Bodies (ages 4 to 12). Starting in April, we’ll drive todifferent parks every Tuesday after school for fun on the play-ground! Another after school program with varied activitiesin our community is Saved by the Bell, for ages 14 to 22, takingplace Wednesdays starting in April. Teens Only, for ages 13 to19, will give you a good start to your weekend, starting mid-April on Fridays.

halo to the Berwyn Public WorksDepartment for a great job insnow removal. Unfortunately,the police department has beenlax in enforcing the ordinancesconcerning cars left on thestreets for more than three daysand have failed to ticket thosethat have violated that ordi-nance. Too bad.

dents informed of the negativeeffects of the so-called smartmeters? The radiation thatemits within 50 feet of themeters can affect living things– people, animals and plants.Security is another issue, andthe meters show when resi-dents are not home for a periodof time. The savings of moneyis an issue but so is our healthand security. If you Google insmart meters on the Internet,immediately it will come upwith smart-meter dangers. Andthere’s many, many listings.

Antibiotics kill pathologicbacteria and infections but they also kill good bacteria andcause gut dysbiosis (imbalance). This dysbiosis can lead topathologic bacterial, yeast and parasitic infections as well asfood allergies.

Digestive system inflammation is associated with IBS,Crohn’s, Celiac and Ulcerative Colitis. It is due to stress,poor diet, toxins and food allergies. Digestive inflammationleads to production of cytokines (inflammatory cells). Thesecytokines travel in the blood to the brain and inflame thebrain cells. The brain (mesencephalon) in turn controlsthe digestive system. This leads to a vicious cycle resultingin an inflammatory cascade which exponentially worsensover time. Successfully managing digestive conditionsinvolves balancing the nervous system, digestive system andimmune system as well as improving the diet, decreasing gutinflammation and detoxifying the body.

Irritable Bowel Syndrome (IBS) is a digestive disorderthat includes abdominal pain, discomfort, bloating andalternating constipation and diarrhea. The cause is unknownbut theories include toxic overload, intestinal infections,inflammation from stress and poor diet generalizedcondition of the digestive system poor signaling from thebrain to the digestive system for proper function.

Non Celiac Gluten Sensitivity is a digestive condition thatinvolves gluten sensitivity like Celiac Disease but is notan autoimmune disorder. stairs to see his new bedroomlast week, the only sound tobe heard was the 6-year-old’sscreams of, “Awesome!”

With red and blue walls, a

hand-painted cartoon jet, he-licopter and Captain Amer-ica adventure scene, the Wo-odridge boy looked on at hisnewly renovated bedroomwith true awe.

The dream bedroom was

created by Special Spaces Chi-cagoland, a nonprofit groupthat designs and constructsbedrooms for children fightingcritical illnesses.

Samuel was diagnosed withAcute Lymphoblastic Leuke-mia in March 2012.

For his mother, Donna Tav-olino, seeing a smile on the faceof her son warmed her heart.

“It’s bittersweet,” she said.“It stinks that we’re in thisposition in the first place butthen you find all these peoplewho have so much good intheir hearts and who are will-ing to do things for you andyour family.”

One morning almost twoyears ago, Samuel woke up sick.His mother thought it was a si-nus infection but the next day hewas diagnosed with leukemia.

After 30 days of rigorouschemotherapy, Samuel was de-clared in remission. He still isbut has about another year oftreatment left.

“The first year was horriblebut now he gets the same [treat-ment] regime,” Donna Tavolinosaid.

“He’s a tough kid. He nev-er complains and never cries.He’s a very special kid.”

The bedroom remodel is the14th room makeover for theNaperville-based Special Spac-es Chicagoland, according toKelly Knox, branch founder.

She said the organizationusually creates one bedrooma month, adding that they’realready booked for all of 2014and have a wait list for 2015.

For each room design, Knoxfinds a sponsor – ColdwellBanker in Samuel’s case – andthen begins the eight-weekprocess, she said, adding thatmost rooms take about 10 to 12hours to complete.

“This is so gratifying everyday ... it’s absolutely amazing,”Knox said. “This is the best

also works with From One Kid2 Another – a Naperville-basedcharity started by Knox’s neigh-bors, Peggy and Kelly Chinn.

About five hospitals fromthe area reach out to SpecialSpaces, along with familymembers, friends and neigh-bors with children in need, ac-cording to Knox.

“Every child who’s sickdeserves some happiness andthat’s what we’re doing,” Knoxsaid.

Once a child is chosen, ateam from Special Spaces inter-views the child to get an under-standing of his or her favoritecolors, themes and wishes.

At the room reveal lastweek, Donna Tavolino saidSamuel’s new room is “abso-lutely perfect.”

“[Special Spaces] is oneamazing charity that doesamazing things,” she said, add-ing that she and her husbandMark hope to become more in-volved with the organizationin the future.

Seeing her son excited andhappy during the reveal wasall that mattered, according toDonna Tavolino.

“He’s ecstatic,” she said.“And 10 minutes of happinessfor him to forget what he hasto go through is absolutelypriceless.”

While the family will nev-er be worry free, she said oncethe treatment is over, there’sa 90 percent chance it won’tcome back.

“Samuel’s gone throughmore in life than I ever have,”the mother said. “…No kidshould have to go through this.”

DOWNERS GROVE – Thaifare has become more com-monplace over the years, and,like many other adopted cui-sines, often more American-ized. Breading, cream, sugarysauces and less traditionalspices frequently are incorpo-rated. Thai Pot seems to resistthat temptation, offeringauthentic flavors and food, togood result.

During my first visit tothe restaurant, I stoppedby for lunch. Tucked into astrip mall in Downers Grove,the storefront eatery has abright, appealingly decoratedinterior.

The full menu is not avail-able midday, when the restau-rant focuses on a selectionof weekday lunch specials,which are fairly diverse andvery well priced. For justunder $8, you get soup, theappetizer of the day and awell-portioned entree.

The meal started with asimple yet delicious chick-en and jasmine rice soup. Itreminded me of my mom’sbest chicken noodle, but thejasmine and a smattering ofother Thai spices gave it anextra layer of savory thatreally set it apart. All thecomponents were cooked well,and the broth had an almostbuttery texture.

The aromatic fish sauceand spices in the red currywith tofu, which usuallyare muted by lots of coconutsauce, wafted my way as theserver approached the table.The emphasis was on thespicy chili sauce in the curry,a dish overflowing with veg-gies and tofu.

The tofu itself melted in my

mouth. It was boiled, not fried,giving it an eggy texture.

After the satisfying lunch,I was curious to check out thefull menu, and followed up an-other day with a dinner visit.

I started with an order ofShrimp Cigars – admittedlychosen because of the greatname. They were big plumpshrimp, tail-on, alongsideThai basil and a bit of onion,all wrapped and fried in awonton wrapper. The visualwas a great one, and the pre-sentation allowed the shrimpto stay the star.

My entree of spicy basilleaves with chicken had agreat blend of flavors, partic-ularly the sauce. It containedjust enough basil to add a nicepunch. I would have likedeven more of the gravy, sim-ply because it was so good.

Thai Pot’s greatest strengthis its commitment to au-thenticity. Thai is one of myfavorite cuisines – I love theAmericanized versions justas much as I love the onesstraight from the recipes ofThai grandmothers – and ThaiPot managed to throw in acouple flavors I hadn’t experi-enced before.

Diners who would like topush their boundaries a bit,or those who already relishthe more traditional flavors,will want to find out what’scooking at Thai Pot.

The Mystery Diner is anewsroom employee at Sub-urban Life Media. The diner’sidentity is not revealed tothe restaurant staff before orduring the meal. Only positivedining experiences will resultin published reviews.

JOLIET – Losing hasn’tbeen a frequent occurrence forBolingbrook’s boys basketballteam this season, but the Raid-ers sure know how to respondto a loss.

After three losses earlierthis season, the Raiders twiceresponded with emphaticwins, and that trend continuedFriday with a 76-54 win againsthost Joliet West.

The Raiders, coming off a57-54 loss against Joliet Cen-tral on Feb. 4. used a 12-0 runat the start of the fourth quar-ter to turn a close game into a59-40 lead on the way to a com-

fortable win.“Joliet West got really

physical and was hangingwith us,” Bolingbrook coachRob Brost said. “It took usawhile to shake them. Wehave a tough bunch of kidswho are coachable, and that’sreally important.

“This was our seventh con-secutive road game and obvi-ously our goal at the beginningof the trip was to go 7-0, but westubbed our toe [against JolietCentral]. To our guys’ credit,we had two really good practic-es [after that] and were able towin tonight.”

With the win, Bolingbrook(15-4 overall, 8-1 in confer-ence) maintained its one-gameadvantage in the SouthWestSuburban Blue over Home-wood-Flossmoor.

For three quarters, Westhung tough and overcame anearly 10-point deficit. But asthe fourth quarter got underway, Bolingbrook’s run creat-ed some separation.

Two players off of thebench led the key run. ShakurTriplett had 12 of his 16 pointsand Brodric Thomas all of his10 points in the fourth quarter.

“I’ve got to give it up to myteammates since they’ve beenhelping and supporting me,”Thomas said. “I didn’t have mybest game against Joliet Cen-tral, but they helped me bringit out today by playing as hardas I could. I happened to be inthe right spots at the right timeand knocked down shots.”

Thomas got things start-ed in the final quarter with a3-pointer and Triplett followedwith a jumper to put the vis-itors up by 12. After JoshuaDillingham (13 points, 12 re-

bounds) made a converteda three-point play, Triplett(eight rebounds) added a slamand Thomas hit a layup.

“We battled them for aboutthree quarters and then theyput up 12 points pretty quick-ly on us,” Tigers coach NickDiForti said. “You have to cap-italize on turnovers against ateam like Bolingbrook becausethey have so many weapons.”

While the Tigers (7-12, 2-7)committed 15 turnovers com-pared to Bolingbrook’s 22 mis-cues, the guests owned a 37-19edge on the boards.

C.J. Redmond scored 15points for the Raiders while Ju-lian Torres contributed eightpoints and seven rebounds.

Our mothers and grandmoth-ers thought of all potatoes asinterchangeable. They’d bake orboil whatever they found in thegrocery store for dinner. Thatgrocery store didn’t offer manychoices, just the same mealyRussets, waxy red-skinnedtubers and gnarly spuds fromMaine, earth still clinging tothem, week after week.Fast forward a couple of gen-

erations, and we have learnedto get better flavor and textureif we treat potatoes as individu-als. We don’t need to settle foronly three or four variations.The produce section of the su-permarket heaps up a revolvingrainbow of potatoes every week,including yellow Yukon golds,white creamers, Peruvian pur-ples and sandy brown Russets.And sizes from new potatoes assmall as pearl onions to Russetsas nearly large as footballs. (OK,I exaggerated.)Writers have dreamed up en-

tire cookbooks featuring noth-ing but potatoes. We still liketo pair them with sour creamand bacon, but we can applythose ingredients to Yukon goldsturned into potato soup insteadof plain-old baked Russets.We still mash them, but know

we can avoid peeling if we usepretty red-skinned potatoes.And we can skip the butter andcream in those mashed potatoes,getting them to equal delicious-ness using golden olive oil and afew cloves of garlic instead.Today’s cooks feel confident

enough to experiment withgrandma’s scalloped potatorecipe, adding two extra cheesesto her basic white cheddar whilesticking with her Idahoes, nowbetter than ever thanks to im-proved agricultural techniques.I’ve used blue and Parmesan

cheeses with the cheddar here,but I’m not afraid to shakeup my own recipe with a littlegouda or smoked Havarti orasiago. Three hot potato recipesfollow:

Olive Oil and GarlicMashed Potatoesmakes 6 to 8 servingsn 3 pounds medium red-skinnedpotatoes, skin onn 3 large cloves garlic, innerskin onn 1/2 cup extra virgin olive oil,plus additional if neededn salt and fresh ground pepperto taste

Bring the potatoes and garlic toa boil in a pot with enough waterto cover. reduce heat to a simmerand cook, uncovered, until pota-toes are tender, about 30 to 35minutes. Drain. return potatoesonly to the pot, cooking for just aminute or two to evaporate extramoisture.

Transfer potatoes to amixingbowl. squeeze the garlic from theskins; add to the potatoes. Beatwith an electric mixture until fluffy.(Do not use a food processor.)Then beat in the olive oil. seasonwith salt and pepper and servehot.

Roasted Potato Soupwith Sour Cream and Baconmakes 4 to 8 servingsn 4 thin-skinned medium pota-toes, e.g., Yukon gold, skin-on,sliced 1/4-inch thickn 2 t olive oiln salt, ground black peppern 6 thyme sprigsn 6 slices bacon, coarselychoppedn 1/2 cup sour creamn 2 t minced chives

Heat oven to 375 F. Toss thepotatoes in oil and a half teaspoonsalt. spread them on a rimmedbaking sheet; bake uncovered untiltender, 35minutes. Transfer to apot.

Pour 1 cup boiling water intothe baking sheet; swirl to deglaze,then pour the water into the potwith potatoes. Add 5 cups boilingwater and thyme sprigs; covertightly and set aside for 1 hour.meanwhile, cook the bacon untilcrisp. set aside to drain on papertowels.

remove and discard thymefrom the pot. Puree the potatomixture until smooth, addingmore water if too thick. Add saltand pepper. reheat the soupover low heat.

Pour the hot soup into bowls.Dollop with sour cream; sprinklewith bacon and chives.

Scalloped Potatoes

with Three Cheesesmakes 12 servings. A cook actu-

ally can hold potatoes for about 30minutes before bringing them tothe table: Let them stand at roomtemperature. Cover and re-warmin 375 F oven, 20minutes.n 3/4 cup grated extra-sharpcheddarn 3/4 cup crumbled bluecheesen 1/2 cup freshly grated Par-mesann 4 pounds Russet potatoes,peeled, cut into 1/4-inch thickroundsn salt, pepper, to tasten 1/4 cup finely chopped onionn 3 t all-purpose flourn 1/2 stick buttern 3 cups whole milk

Preheat oven to 400 F. Lightlybutter a baking dish. mix cheesesin a bowl.

Arrange half of potatoes inbaking dish, overlapping slightly.sprinkle with 3/4 teaspoon salt,1/4 teaspoon pepper. sprinkleonion over, then four. Dot with 2tablespoons butter. sprinkle halfthe cheesemixture over. Top withremaining potatoes, salt, pepper,butter and cheese.

Bring milk to a simmer. Pourmilk over potatoes (it will notcover completely). Cover bakingdish tightly with foil. Bake 45min-utes. Uncover dish (liquids maylook curdled). sprinkle potatoeswith cheesemixture. Bake uncov-ered until potatoes are tender andcheese is deeply golden, about 45minutes. Let stand about 15 min-utes before serving.
