WASTED! AT THE CHEF’S TABLE
Chef Rudi Liebenberg and his team have creatively
captured their philosophy of respect for entire
ingredients in their new “Wasted! at the Chef’s Table”
experience on request at the inimitable restaurant in
the heart of the hotel’s kitchen.
Not only are our chefs no longer hiding unwanted
food under the chopping surface – Rudi has long
commandeered a brigade that keeps all “waste”
above table – he has inspired them to come up with
a fabulous five-course menu made from the unwanted,
the “fashionably rejected” parts of fruits and
vegetables, meat and fish used in the kitchen.
And so, shunned cauliflower and broccoli stalks
become atjar, cordials are made from ginger trimmings
and buchu, or from pineapple peels, fruit rinds are
made into jams, preserves and marmalades, and carrot
tops are transformed into pesto.
Our chefs invite you to join them on this journey of
discovery and to learn, see and taste how every part
of each ingredient is respected.
The Wasted! menu is available Mondays to Saturdays
at lunchtime at the Chef’s Table at a cost from R370*
for a five-course meal including fruit cordial and a shot
of kombucha.
TEA SOMMELIER EXPERIENCE
To celebrate the tradition of afternoon tea Belmond Mount
Nelson Hotel introduces a Tea Sommelier, the first of its kind in
South Africa.
The Tea Sommelier, purveyor of the art of taking tea, is on
hand to guide guests through various tea masterclasses,
including a traditional tea ceremony, complex tea tastings and
fine dining food pairing.
The expertly-trained Tea Sommelier is a fount of knowledge
on the vast library of over 40 teas available for guests in the
Tea Lounge, including 13 new leaf blends introduced for 2018.
Tea ceremonies include a traditional Gongfu Tea Ceremony,
dating back thousands of years, connecting guests in a calm
and relaxing way with the tradition of drinking tea using high
mountain oolong leaves in a fragrance and flavour-filled seven-
step infusion process.
For those keen to learn more about pairing loose teas with fine
dining cuisine, the Executive Head Chef and Tea Sommelier
work together to pair canapes and delicacies, such as
macaroons or salmon, with accompanying tea from across the
world to awaken all senses.

IF ONLY TREES COULD TALK Enjoy a zippy one-hour self-guided walking tour of ten
trees in our expansive gardens, which reveal many
fascinating threads of Cape Town’s history.
Trees such as the eighty Canary Island palms that line
the driveway entrance, or the nearly 200-year old wild
Olive Tree have borne silent witness to the colourful
ebb and flow of historic events in the Cape and indeed
of this historical 119 year old property.
For those who are keen to delve deeper into the
gardens, tours are available with local guide
Angelina Paynter, who is available Monday to Thursday
often tours in English, German and Italian.
Angelina can also extend the tour to include the famed
neighbouring historical Company’s Gardens, one of the
city must-see highlights, to uncover more on the history
of the Cape.
SELF-GUIDED HISTORICAL WALKING TOUR
Take a walk back in time through the estate that was
inspired by Table Mountain and the British naval hero
Lord Horatio Nelson - Mount Nelson.
Follow the walking guide and discover its rich heritage
which has borne witness to many of the City of Cape
Town’s historical moments .

CYRIL COETZEE Cyril Coetzee is perhaps best known for his two
commissioned portraits of Nelson Mandela; one of which was
used as the design for an international stamp
commemorating Mandela’s 90th birthday and the second is
a double portrait of Nelson Mandela and Graça Machel on
the occasion of their wedding. Having lectured in Art History
at Wits University, Cyril left academic life in 1990 to become
an artist and freelance lecturer. He has since exhibited his
work locally and internationally, with his paintings often
included in public and private collections, including the
Johannesburg Art Gallery and the Standard Bank in London.
He has won a number of awards, including a Vita Art Award
and the Helgaard Steyn Award.

PAINTING CLASS WITH CYRIL COETZEE
Make your own artistic masterpiece under the guidance
of talented painter Cyril Coetzee. Classes are suitable for
all levels of expertise, and each person is coached
individually to bring out their creative best.
Sessions lasts three hours. Classes are priced from R700*
per person for groups of up to 8 or from R3,000* for one-
on-one tuition.
SELF-GUIDED CONTEMPORARY ART WALK
We have created a self-guided walking tour of the
contemporary art within the hotel.
On the first Thursday of every month walk downtown
and discover galleries – there are 30 within a 1km radius
– as well as restaurants and shops which all stay open
until late in the evening.

PLAY TENNIS LIKE A PRO
Belmond Mount Nelson Hotel is proud to be the only
hotel in the city to have two beautiful floodlit tennis
courts as well as a resident coach, Barkie McKrea. Barkie
was a professional tennis player who in his day practised
with Boris Becker.
For over twelve years Barkie has been coaching our
guests and he has the most incredible ability to analyse
someone’s game within the first ten to fifteen minutes
of playing. He has also been unanimously recognised for
considerably improving your game within the first two
to three lessons.
Barkie teaches all levels, solo or in groups.
Equipment is available to hire from the hotel.

At Belmond Mount Nelson Hotel we pride ourselves on our green initiatives which in addition to our Wasted! At the Chef’s
table experience, include a worm farm, Cape honeybee hives and our water conservation initiatives. The below activities are
ideal for families looking to spend time with nature.
VERMICULTURE
Belmond Mount Nelson Hotel was the first luxury hotel in South Africa to practice ‘vermiculture’. The hotel’s ‘worm farm’ was
awarded ‘Best Single Resource Management System – Waste’ in the Imvelo Responsible Tourism Awards. A custom designed
worm farm was established on the hotel property to manage the disposal of much of the hotel’s organic waste. A special
breed of earthworm processes leftover organic waste and the end-product – ‘vermicast’ or ‘worm tea’ - is rich in nutrients and
is used as fertiliser and soil conditioner for the property’s magnificent gardens. Guests are welcome to learn more about our
worms and help feed
CAPE HONEYBEE
The hotel has set up three bee hives not only to harvest honey for our guests but also to support the survival of the Cape
Honeybee – they are important pollinators of plants and this particular subspecies is under threat. We also have unveiled a
unique art exhibit, a triptych of illustrations crafted from dead bees, which highlights their endangered status.
HELP IN THE GARDENS
Along with visiting our Cape honeybees and helping to feed our worms, those with green fingers can assist the gardeners with
planting seeds and learn more about our water saving initiatives.

FYNBOS SUNSET WALKS
Belmond Mount Nelson Hotel offers guests a unique
opportunity to discover the remarkable diversity of the
Fynbos of the Cape Floral Kingdom on Table Mountain,
one of the world’s Seven Wonders of Nature.
Enjoy a ramble along the lower slopes of Table Mountain
with a dramatic outlook over Camps Bay and the Atlantic
Ocean, with an expert mountain and Fynbos guide who
will share interesting stories about the “Big Five of
Fynbos”– the plant families of Proteas, Ericas, Restios,
Bulbs (Irises and Lilies) and Daisies – and uncover many
aspects of the natural and cultural history of the Cape and
Table Mountain.
The Fynbos Sunset Walks will last 2 and a half hours and
takes place in the afternoon so guests can enjoy
sundowners from an elevated position on
the mountainside.
Bookings are recommended and are subject to availability,
a 24-hour notice period is preferred. From ZAR 1 600* per
person for two guests, ZAR 875* per person for three to five
guests and ZAR 650* per person for six to eight guests.
HOPE & HARVEST TOUR
Guests have the opportunity to visit one of South Africa’s
most successful and entrepreneurial township farms in
Khayelitsha – Abalimi Bezekhaya’s* vegetable garden
called Moya we Khaya (spirit of home). The trip starts
with a guided tour past many of the well-known
townships such as Langa and Gugulethu, learning about
township life, before arriving at Mama Kaba’s beautiful
organic vegetable garden, Moya we Khaya. Guests will
meet Mama Kaba and enjoy a cup of tea with her as they
hear her story about how she started with a small
neglected piece of municipal land and how she turned
one small farm into one of the most successful
gardening and farming initiatives in the country.
Belmond Mount Nelson Hotel has been buying
vegetables, herbs and salads from Abalimi Bezekhaya’s
Harvest of Hope programme for the past four years, and
the chefs are always wanting more produce from them.
After tea, visitors can take a walk through the garden
with Mama Kaba and pick their preferred produce for
their authentic farm to fork salad to be prepared for
lunch at the hotel by our Chefs.
The cost of the tour is from R1 500* per person for two
guests and from R875* per person for a group of four
guests. Includes a donation of compost or seedlings for
the Moya we Khaya garden as well as the farm fresh
salad for lunch.

FIRST LIGHT MORNING WALKS
See the majesty of first light on a dawn walk,
in partnership with Leica Sport Optics. We’ll provide
you with a pair of Leica Trinovid 8x42 HD binoculars
to encounter the captivating flora and fauna of
Table Mountain in truly magical light.
Choose to take a private tour with an expert guide
and photographer, or join a larger group for
an unforgettable team hike. Alternatively, set off on
your own with the help of our map. Delicious
breakfast boxes keep you energised. 24-hour
advanced reservations required.

Join guide Kate Crane Briggs, an expert in art and
architecture, for a truly unique tour. Explore the hotel’s
119-year-old estate, the historic Company’s Gardens and
downtown Cape Town, and see the city like never before.
The tour can also be tailored to your interests—whether
that’s visual arts, architecture, cuisine or literature.
Priced from R2000* for one or two guests, with a R5008
