Oh, what a beautiful day it was in Tuscaloosa on May 6th! Not a cloud in the sky and a perfect breeze to help make celebrating Alex’s graduation the best it could be. When I wrote last month that I may shed a few tears ... I was so wrong! I had river falls running down my cheeks and it didn’t stop for 3 days! Alex is now on his way to the many new adventures the world holds for him. To say that I am proud is an understatement. My heart beams with pride and joy for all of his accomplishments. Do you have a dream that you’ve cast aside over the years? It’s never too late. There is proof, Bill Mohr just achieved his dream at the age of 105. According to CBS Philly, Bill Mohr’s journey marked his 105th year of life, traveled a winding road. It was 1926, and a 15-year-old uniformed Bill Mohr was forced into a different reality. “After my Sophomore year, my mother said ‘Bill, your father’s plant is moving. We have to move up there, for him to keep his job,’” said Mohr. Bill had to get a job himself, the Prep was left behind. Work filled his days, World War II filled his mind, but Josie filled his heart. At 105, life markers come in big numbers, Bill and Josie have been married for 70 years. No regrets, except one, he told his daughter, “I regret I was not able to finish my high school years at St. Joe’s Prep.” “He wanted to finish so badly,” said his daughter, Jodie Hartshorne. Enter teacher Bill Conners and Prep’s president, who could only see one solution. “We need to give him a diploma. Had Bill graduated with his class, this would have been his 85th reunion, so it is perfect,” Conners said. “If I die tomorrow, I’m not going to ask the Lord for anything. He has given me everything I need over the years.” Pull a Bill: don’t compare yourself to anyone else, and work toward your goals at your own pace. As long as you never give up, you will never fail.

We Made It!!Oh, what a beautiful day it was

in Tuscaloosa on May 6th! Not acloud in the sky and a perfectbreeze to help make celebratingAlex’s graduation the best itcould be.

When I wrote last month that Imay shed a few tears ... I was sowrong! I had river falls runningdown my cheeks and it didn’t stopfor 3 days!

Alex is now on his way to themany new adventures the worldholds for him. To say that I amproud is an understatement. Myheart beams with pride and joy forall of his accomplishments.

Do you have a dream thatyou’ve cast aside over the years?

It’s never too late. There isproof, Bill Mohr just achieved hisdream at the age of 105.

Ms. Evelyn Morrison

Congratulations to Ms. EvelynMorrison on being June’s Residentof the month. Evelyn has beenpart of the Belmont family for twoyears now and is always upbeatand ready for the next activity.You can guarantee to find herexercising, playing cards, orgetting ready for an afternoonof Bingo.

Evelyn says she came fromhumble beginnings. She grew upon a small farm in Dyess, AR, andattended Dyess High School. Shewent on to become a high schoolalgebra teacher and you can stillfind her today with that pencilbehind her ear.

She met and married HughMorrison and they had threedaughters. Something you mightnot know about Evelyn is that she

dated Johnny Cash before he wasa star. They both came from thesame small town and she said thathe was “quite the gentleman.”Evelyn, you are a pleasure to bearound and always keep uslaughing, don’t ever lose thatsense of humor!

Cash, grew up in the same smalltown of Dyess, Colony inMississippi County, Arkansas. RayCash brought his family to Dyessin 1935, when PresidentRoosevelt’s administration createda space for farming families andan experiment in Americansocialism. With no money down,the Cash family was given 20 acresof fertile bottomland and afive-room house in which to live.The family home, which is nowowned by Arkansas StateUniversity, has been restored. Thehouse contains exhibits related tothe establishment of the colony,lifestyles of typical colonists, andthe impact that growing up inDyess had on Johnny.

DISCOVERIESSpanish Cuisine... Muy bien!Gazpacho...The ripest

tomatoes, olive oil, garlic, bread,peppers and cucumber areblended until smooth, thenchilled and poured into bowls orglasses. In southern Spain, peoplehave it every day in the summerand there is always a jug on thecounter in tapas bars.

Paella...Ingredients for paellaValenciana include chicken orrabbit, saffron, runner beans andbutter beans. But the all-important element is the rice,ideally the bomba or calasaparravarieties grown on Spain’seast coast.

Tortilla Española...Eggs,potatoes, onions... that’s it! Somepurists even consider that addingonion is a gastronomic crime. Thepotatoes and onions are slow friedin olive oil then mixed with thebeaten eggs for the flavors to mixbefore cooking. Add chorizo,ham, spinach, zucchini orwhatever you have in hand tomake a tasty meal out of nextto nothing.

Gambas al ajillo...In any tapasbar, the aroma of sizzling prawnshits you and you have to ordersome. To recreate it at home, justfry some sliced garlic and greenchili in olive oil, add prawns andparsley. Delicioso!

Tostas de tomate y jamón...

Black pigs roam among the Holmoak trees in western Spain insearch of the acorns that givemarbled magenta Ibérico ham itsnutty flavor. Rub thick pieces oftoast with garlic and tomato, pouron some olive oil and top withslices of jamón for a quick,delicious lunch.

Patatas bravas...all versions ofPatatas bravas involve chunks offried potato. Bravas sauce is madewith Spanish paprika, olive oil,flour and stock – but nevertomatoes.

Pollo al ajillo...Any Spaniardwill tell you that the best garlicchicken is abuela’s (grandma’s).Unpeeled cloves of garlic are friedin olive oil to flavor it, and thentaken out before adding pieces ofchicken. Then the garlic goes backin with some rosemary, thymeand some dry sherry or whitewine.

Cochinillo asado...This verytasty and tender dish is eitherroast suckling pig or lamb in hugewood-fired ovens.

Pisto...The Spanish version ofratatouille consists of onions,garlic, zucchini, peppers andtomatoes that are slow fried inolive oil.

Turrón...Spaniards devourmassive amounts of turrón, oralmond nougat, at Christmas. It’smade from locally-grownalmonds mixed with honey andegg white.
