Need a Bigger Sugar House?No syrup producer has ever said I think my sugar house is too big. Now with the open house weekends, and sugar housesthat are open to the public space has become even more precious with the added distractions and need for additional bar-rels, R/O rooms, filter presses, etc. Working space is important, because if you are comfortable around the evaporator itis much easier to operate. Using a conventional reversible flow 3x10 evaporator as an example, a producer will need atleast 180 square feet to operate the evaporator, and even that may be tight. With a 3x10 Cross-Flow Evaporator, additionalspace is needed to clean the spare pan, and room to remove and replace the existing syrup pan. This evaporator willrequire at least 130 square feet of space in the sugar house.

Solution! The Revolution has the exact same draw-off point all the time so that barrels, filtering, and working space canbe established and never change. Crowds of people can flow around you without interfering in the necessary functionsof running the evaporator. A 3x10 Revolution evaporator only requires about 100 square feet of space in the sugar houseto operate the evaporator.

Make Lighter Syrup!Flow reversal and down time cause sap within the evaporator to mix becoming more uniform and ruining the gradient cre-ated during peak boiling conditions. This mixing causes batches of syrup to become larger and darker, which will in turnmake them more difficult to draw out of the evaporator without going beyond syrup.

Solution! The Revolution Evaporator drastically reduces this mixing that happens during flow reversal and eliminatesmixing during down times for pan changes.

Take a 3x10 evaporator, for example, with a standard reversible flow evaporator over 40 gallons of sap within the pans hasto reverse directions and mix in the process making two or three large batches of syrup before the gradient is fully estab-lished again in the pans. With the Revolution only about 10 gallons of that sap has to be reversed in the syrup pan, mean-while the flue pan keeps boiling and maintains its established gradient. This will reduce the time before the first batch isdrawn off after reversal and after one batch the gradient is re-established and the evaporator is at optimal performancefor syrup quality.

Now compare to a cross-flow system where pans must be changed. The gradient in the evaporator is lost as soon as thefire goes out and instantly the mixing begins. For the next 15-30 minutes while the pan is being drained, changed, refilledand the arch restarted all of the liquid is mixing in the evaporator. This will cause the next 2-4 batches of syrup to belarger than normal and the result is that syrup will be darker.

Spend More Timein the Woods andIncrease YourProduction!Every serious syrup producer islooking for ways to spend a littleextra time in the woods to find andfix vacuum leaks so they can getmore sap. One way to do that is byboiling higher concentrate toreduce fuel costs and save time.The side effect of that is that weincrease the amount of syrup madeper hour, and the syrup pan getsdirtier faster requiring more fre-quent changing of pans on a crossflow evaporator. In the most effi-cient set ups, it takes 15-30 minutesto completely execute the panchange and resume peak boiling.This process is bad enough to exe-cute once a day, but in many casesthis process may be needed asmany as six to eight times per day.That could mean 30 minutes to 4hours of the boiling time wasted,not getting any sap processed.

Solution!The Revolution Evaporator is areversible flow system that allowsyou to continually process sap atpeak evaporation rates from begin-ning to the end of the day. The sim-ple 4 valve flow reversal takes lessthan 2 minutes to execute, and is aneffective way to limit nitre and sugarsand build up within the syrup panso that the evaporator does notneed to be shut down during anyboiling day. Not only is this a hugetime saver, less fuel will be usedbecause once the evaporator is hotat the beginning of the day it stayshot, and the BTU loss from start upis once per boil, instead of severaltimes per day.

Cross-flow pans also finish syrup at the front of theevaporator where there is typically less heat. This isa problem because often times the second compart-ment, which is hotter, will want to finish syrup beforethe syrup compartment. This will cause bigger batchesof darker syrup as well. With a Revolution evaporatorthe syrup compartments finish near the back of thepan where the heat is greater, allowing for more con-sistent, smaller batches of syrup.

Consistency is the number one key to making lightersyrup, The Revolution is by far the best evaporator formore consistent operation and the result is moreconsistent quality syrup.

Make it Easy, Keep it Simple, Save Syrup Pans!Changing sides of the evaporator is a hassle that no sugar maker enjoys, andswitching syrup pans in the middle of a boil can be messy and wastes precioustime. The use of R/O technology and now increasingly higher concentrate levelsmake these processes even more daunting, and frequent. The result is producersnot changing sides or pans as often as they should and the syrup pan ends upscorched, burnt, or warped from the nitre and sugar sand burning down to thebottom of the compartments. This will lead to a shorter syrup pan life.

Solution! With 4 Valves, all within one square foot, the flow of the syrup pan isreversed, and the draw-off valve location never changes. Never slow the boildown, and maintain the consistent gradient in the evaporator. Hassle-free changesso that the syrup pan gets reversed before the build up is bad enough to burn on.This will get even the largest syrup producers through an entire day with no downtime.

The Patriot Evaporator is a reverse flow system featuring two floats, one for the flue pan and one forthe syrup pan. The Inferno Wood-Fired Arch features LeaderEvaporator's forced draft system installed using thespecial dome-shaped forced air grates, and properlysized air blowers with speed controls. Combining theforced draft with the special air tight front allows theblowers to be run at high levels to create more turbulencein the fire box. That turbulence will increase the BTU outputof your wood, and increase your fuel efficiency. Some secondaryair is also injected through the front of the arch. Smaller archeshave air coming in through the door casing, while on the larger archesthe air comes in through the door itself. It is very important with theadditional heat these arches generate, that the arch be properly insulated during installation whichincludes fire bricking sides and front with properly rated bricks and refractory materials (not includedwith the arch). The “American”set of pans isavailable in sizesranging from the 2'x6' fora small producer, to the 6'x18'for the large producer.

The Leader WSE Welded Set of Pans is aeconomically produced evaporator toreplace the soldered 2x6 King Jr., 2x6 PMand 2x4 Vt. Special that were so popular forbeginning sugar makers. This evaporator istig welded of 20 gauge bright annealedstainless steel just like our larger weldedevaporators. The Leader WSE featuressolid stainless steel connections andclamps with teflon gaskets. The three-com-partment syrup pan is rotated to changesyrup compartments. These pans comewith a four-foot long flue pan for 2x6 modelsand a two-foot long on the 2x4 models.

(Draw-off side must be designated at thetime of purchase.) At this time, the pans areonly available in drop-flue models.

Hoods &Stack

The idea of preheating the Maple Sap prior to entry in the flue pan is not a newidea. Many methods of preheating have been tried over the years with a varianceof results. Through research and actual field testing by the Northeast ForestExperiment Station, we feel the parallel flow preheater, combined with a steamhood that is reasonably tight, will offer the most in increased efficiency.

Parallel Flow Copper Preheater Assemblies come complete with brackets,adjusting rods and condensate trays.

NOTE: For best performance and efficiency, the above preheater assembly should be usedwith a tight fitting steam hood, damper controlled.

Specially designed forced draft system, with variable speed control, combusts wood more completely; whichmeans you get more heat per cord of wood. More heat equals faster boiling and increased production. This efficientcombustion yields less ash too, saving you costly clean out time.

Graduated channels equalize air distribution for improved heat flow, so wood burns at consistentlyhigher temperatures. Boiling point is stabilized even after recharging because higher internal arch tem-perature assures faster ignition of new wood.

Leader Half Pint Evaporator

Ideal for the backyard Sugar Maker with 15 to 50 taps, this dandy little unit has beenredesigned and improved to make operation easier and more efficient.

The evaporator pan is made of stainless steel and divided into three sections. A reservoir panallows for manually feeding preheated sap into the evaporator pan while maintaining boil.

The redesigned arch is made from 18 gauge galvanized with cast iron door and steel legs. The new draft control and grate system allowfor faster, hotter fires. A steel collar is attached to the back of the arch to accommodate a standard 6" smoke stack (not included).

The arch is designed to be bricked using standard 1/2 and full fire bricks (not included).

This unit is shipped standard UPS and comes with easy to follow instructions. No special tools are required and assemblytakes about one hour.

The FILTER PRESS is a “MUST” for sugarmakers who pack in glass because other

methods don't filter as clear.

Filters the cleanest and the clearest with the least amount of effort, in theshortest amount of time, for increased quality. This quick-action press, filtershot syrup right off the evaporator at the rate of 2 gallons per minute beforethe syrup has a chance to cool. This speedy process virtually eliminatesreheating for the canning process.

Springtech High Brix Expansion Kits: • These special expansion systems are designed for 1600 gph machines and larger with the series/parallel flow system. This sys-

tem features a special turbo high pressure pump to boost membrane performance for syrup producers seeking high concentratesap above 10 percent. With this system the R/O performance will be increased to its original specifications, while producing thehighly concentrated sap. For example a 2000 gph R/O Machine, if concentrating to 15 percent alone, the flow would bedecreased to around 1200 gph due to the high operating pressure required. With the expansion kit installed, the machine wouldbe restored to 2000 gph while producing the high concentrate sap. Available in three configurations listed below:

Springtech Elite Series Innovations: • High flow rinse and wash cycles complete in about an hour. • Compact design on wheels. • Patented dual function stainless steel impeller pump keeps motor high and dry and creates pressure and recirculation with one motor. • Machines 1600 gph and larger feature the option of operating in series flow, or parallel flow for optimal concentrating and washing. • Illustrated instructions for all operating cycles are on the machine. • Wash tank, inline feed pump screen, and directional valves for changing cycles are all installed on the machine as standard equipment.

Springtech HERO Features: • An inline reverse osmosis machine that does not require a concentrate tank. Simply plumb the machine into the feed line to the evaporator and it will increase your processing rate by 35-40 gallons per hour. Works great with small evaporators and is very simple to operate. Small enough to be disconnected and taken out of the sugar house for warm storage if necessary. Operating pressures are very low, keeping the membrane performance high, and membranes very easy to clean.

Designed as a drop-line tubing, this is ourmost flexible offering. This tubing has beentested and has shown a remarkable bondto tubing fittings that is nearly impossible tobreak by spinning or tension. Black Plastic TubingAfter the 2005 season, Bradley Gillilan came to our woods in Ohio anddesigned a new wet-dry line tubing system that combined multiple tanklocations into one convenient spot for pick up. Leader’s line of tubing fittings is co-designed by some of theindustry’s top syrup producers. All of our exclusive line of fit-tings feature the same design features because a strongerhold and better seal means less leaks and lots more sap.

The Square Block Baseof the fitting increases theoverall strength and dura-bility of Leader fittings.

The Third Taper to thebase block increases fit-ting strength and offersa third contact point forthe tubing, whichincreases the holdingpower and seal of thefitting.

The Distance between the Firstand Second Barb is crucial toallowing tubing to collapse behindthe first barb and create the ultra-strong hold needed for today’smodern tubing systems.

The Outside Diameter ofthe barbs have been maxi-mized to do a better jobholding and sealing today’stubing, and almost elimi-nate minor vacuum leaks.

The Leader Check Valve Adapter was invented by Dr. Timothy Perkins, Director of theUniversity of Vermont’s Proctor Maple Research Center. Co-designed and co-testedwith Leader Evaporator and the staff of the Proctor Maple Research Center, this spoutsystem is going to extend the maple sugaring season and has shown in testing a sub-stantial increase in maple sap production as a result.

During the natural course of the maple syrup season, within a maple sap tubing systemthat has vacuum installed to help increase sap production, there are a variety of circumstances where sap revers-es flow within the tubing system and returns into the tap hole of the maple tree. These circumstances include sim-ple leaks that form in the system, turning vacuum systems on and off, the natural freezing and thawing within the maple tree, anda few other smaller reasons. This has two negative effects on the maple sap production of the tubing system. Bacteria from theplastic tubing throughout the system is introduced to the tap hole, and some of the sap that has already been harvested gets re-absorbed into the maple tree.

Bacteria is the way a tree closes down the tap hole to end the maple season. If bacteria from the tubing system returns into thetap hole, this process is accelerated and consequently the tap hole will close prematurely. As the tap hole begins to close fromthis natural process, the sap runs will continually shrink regardless of the weather conditions. This is one of the reasons why newmaple sap tubing systems almost always out produce systems with previous years of use, and why the older the system gets, thetougher it is to reach the high production numbers that so many maple syrup makers are looking for.

By introducing a check valve system at the tap hole, we can effectively eliminate the backflow of sap from the tubing system, and as a result, increase the sap production in two ways:

1. Sap that leaves the hole during short sap runs cannot be pulled back by the tree as it freezes.

2. We now know that bacteria closes the tap hole, and this system does not allow contaminated sapfrom the tubing system to be pulled back into the trees during the natural freezing and thawingcycles, each time a mechanical releaser trips, leaks occur, or vacuum pumps are shut off.

Introducing the

During the 2009 maple season, 12,000 of the Check Valve Spout Adapters were tested at dif-ferent maple sugaring operations. The common theme among all of the maple syrup producerswho tested the adapters for us was that early in the season they may have been getting a littlebit more sap from the tubing systems with the Check Valve Adapter, but at the end of the mapleseason, the Leader Check Valve Adapter was severely out performing any of their other plastictubing systems. In most cases, maple producers reported that the maple sap tubing systemswith the Leader Check Valve Adapter installed was the only system that was still running at theend of the season.

Leader Evaporator conducted a series of tests on thecommonly used styles of vacuum pump in the maple industryto see what pumps have the best performance for the demands of today’s maplesyrup producers. What we found was that each style of pump has advantages andlimitations that make them right for some producers and wrong for others.Below you will find a brief description of each style of pump that we currentlycarry and what we like about them.

Oil cooled vs. Water cooled: This debate really comes down to location. The water or oil within the pump is a lubricant, coolant, and seals the work-ing parts together so that the vacuum can be created. Water works well at low temperatures (under 60 degrees F.),but requires tanks, constant supply, and either a heated room, or anti-freeze. Oil can work well at much higher tem-peratures (up to 150 degrees F.), but requires filter changes, and draining of condensation water. Oil gives producersmore flexibility to locate a pump, and does not require any type of heated space, but requires scheduled maintenanceof oil and filter changes that are repetitive costs (usually annual). Water is more environmentally friendly, and as longas the supply of water is constant, lower maintenance.

The Two-Stage KinneyWater Cooled Vacuum PumpThe highest vacuumlevels of any pump wehave tested, with thetwo-stage design thispump is capable of 28+inches Hg. What isunique is that the pumpstill has reasonableCFM levels even at theextremely high vacuum levels.Not as forgiving as a floodsystem, but this pump will have the power to overcomesome leaks in woods that are well maintained. Thesepumps do require more set-up with a tank for water, someplumbing to feed the pump with water, an exhaust sys-tem, constant water supply, and heated facility. Thesepumps will function best with 40-55 degree F water.

Variable Speed Systems or “Variable Frequency Drive (VFD)”VFD’s are a very effective way of detecting vacuum leaks within a tubing system. With the use of a VFD,producers can oversize a vacuum pump to ensure high vacuum at all times, even when leaks are presentand use the hertz meter on the VFD to determine the severity of the leaks in the woods. These systemswill cut power consumption substantially and qualify for energy efficiency grants. All systems feature 3-phase motors, and a built in converter from 3-phase to single phase power within the VFD unit. Pricing forthese systems is available upon request and can be added to most electric vacuum pumps, however it maynot be economical to add to pumps under 5HP.

Available in both Electric andGas powered models, thesepumps are ideally designedfor producers who struggle tofind time for leak repair. Therotary vein pump increasesCFM levels substantially asvacuum levels begin to drop.This means you maintaingood vacuum even with someleaks. A standard FloodSystem is capable of running22-24 inches Hg dependingupon style. Some assemblyrequired.

The Tut-Hill Oil Sealed LiquidRing Vacuum Pump

These simple littlepumps are compact andvery effective in situa-tions where producerswant to maintain 26+inches Hg. Perfect forsmall to mid-size produc-ers, but may require ade-quate time in leakrepairs. They do notgenerate High CFM lev-els as vacuum levels

drop, so a single leak may have a larger impact on highvacuum levels.
