OPTIMUM NUTRITION AND INSPIRED LIVING ________________________________________________________________________________ ________________________________________________________________________________ www.eaternalhealth.co.uk email: [email protected] tel: 07938 597016 GL Per Serving: 9 Ingredients 410g Black beans soaked & cooked (200g dried) 188g butter or coconut oil melted 8 Halawi dates or Neglet noor 9 tbsp cacao powder (65g) 125ml maple syrup 1 ½ tsp vanilla extract (optional) 4 eggs 2 handfuls of chopped walnuts Method Heat oven to 175°C/Gas mark 5 I soaked the beans for about 10 hours, and cooked them for about 2 hours until soft. Drain. Mix all the ingredients together with the exception of the walnuts & the butter/coconut oil – let it cool first. Add the walnuts. Pour into a greased and lined cake tin and bake in the oven for 45 minutes. Cool in the tin, then cut into 12 squares. Keep in the fridge in an airtight container. Serve on its own or with a dollop of yogurt and blueberry/blackberry compote. TIP Halawi dates are much lower in sugar than Medjool dates., but this cake is still high GL. Great with cherries in kirsch for a special occasion And it improves in the fridge! Black Bean Brownie – Serves 12
