A Message fromDoug Egly, General Manager

Dear Black Diamond Members:

The cooler weather up north has signaled its time to return to Black Diamond. We are seeing the return of a lot of our membership and we are happy to have you back home. We have planned a Welcome Back Party for Thursday November 20th so mark your calendar and make your plane reservations to be back for the season-beginning party. Chris, our new Club Manager, will have a great schedule of events for the upcoming season and he will be working with the Advisory Board House committee to plan some great social events. You will be seeing some new faces in the near future, Bryan will be hiring an additional golf professional to help make your Golf Shop experience even that much better. Jeff is back in full swing with his lesson program so sign up early for he is in great demand. Chris will be hiring a new dining room manager to help better serve our membership. With all the additional events planned, we look forward to seeing you at the Club more often.

On a POA note, we hope you enjoy the new community lights along the road ways. We think it adds a great new look to the community along with the road work that is being done throughout Black Diamond.

Finally, it is that time of year that the real estate team will be showing a lot of real estate to prospective new members and residents. Please welcome them and show them what makes Black Diamond so special, the people. If you would like to help the real estate team and volunteer to play golf or have dinner with a prospect, please contact Kerry at the Welcome Center.

See you at the Club,

Doug

Membership and Real Estate Corner Summer at Black Diamond has proven to be a busy and successful sales season. There have been 23 real estate transactions for a total of almost $7 million in sales, doubling the transactions from 2013. Our sales office has participated in roughly 80% of all transactions in Black Diamond. The three factors contributing to our success…our on-site staffed sales center, the fact that our agents work in Black Diamond exclusively, and our lead-generating web site. Of the 23 transactions, 16 obtained memberships from current or previously resigned members. Our latest Full Golf Members are Troy and Jennifer Anderson from Columbus, Ohio. Please extend the usual warm Black Diamond welcome when you see them at the Clubhouse or on the Practice Range. Call our office today to discuss your real estate goals and needs.

A Message from Matt DiMaseDirector of Golf Course Maintenance

Attention Members: October started off a little warm, but I think we are settling into the historical weather pattern that has attracted members to Black Diamond.

With the cooler nights and mornings we are seeing our overseed on the Quarry Course and Ranch Course really start to mature. Both courses have also received their first fertility application in October and this month we will be applying a pre-emergent on the Ranch and Quarry. The Highlands will be sprayed with a pre-emergent in early December - this is due to the stage the rye-grass will be in.

In November we will finish over-seed by completing the Highlands Course, as well as, Diamond Dunes, the Clubhouse lawns, and the back of the driving range.

I would like to take this time to ask all members to please remain off all courses when they are closed. This is not because we are hiding anything (like I had one member say to me when I approached them) but it is because we apply certain products at certain times and it is for your safety and the safety of the golf course. Select products we use do “track.” An example of “tracking” is if we spray a pre-emergent on the Ranch Rough during course closure and someone drives through the rough, then onto the fairway, the result will be tire tracks where the rye-grass will not germinate due to the pre-emergent. This actually happened. Or, if we spray around greens with a selective herbicide and someone walks through the herbicide before it dries, then onto the green, the results will be burnt or potential turf loss in a foot print pattern. This too happened. Thank you for everyone’s cooperation regarding course closures.

Switching gears, we are eliminating the black traffic stakes at the end of the fairways. We ask members to please take the nearest exit point towards the cart path when approaching the greens.

On a similar topic, please keep in mind, Par 3’s are always cart path only.

It is nice seeing everyone return and I look forward to seeing you on the courses!

Thank you for your cooperation regarding course closures, course signage, and directional signs.

Defending Jacob by William Landay is a fast, compelling, and compulsively readable courtroom drama. When a 14 year old middle school student is stabbed to death near his school, District Attorney Andy Barber takes the case until his son’s fingerprints are found on the bloody clothing. Barber is off the case and out of his office, devoting himself solely to defending his son. As Barber attempts to prove his son’s innocence, Landay explores uncomfortable territory. Even Barber’s never-before-disclosed heritage as the son and grandson of violent men who killed becomes potential courtroom fodder, raising the question of a “murder gene.” Within the structure of a grand jury hearing a year after the murder, Landay gradually increases apprehension. He raises personal and painful ethical issues pertaining to a parent’s responsibilities to a child, to a family, and to society at large. Can a tendency toward violence be inherited? Is the capacity for murder a genetic disposition? These are among the topics the Black Diamond Reading Group will be discussing when it meets on Thursday, November 20th. William Landay is the author of the award winning novels Mission Flats in 2003 and The Strangler in 2007. A graduate of Yale University and Boston College Law School, he was an assistant district attorney before turning to writing. He lives in Boston, where he is at work on his next novel of suspense. Contact Faeth Houle for more information.

Black Diamond Foundation A PRO-AM That “Makes a Difference”

The 12th Annual Black Diamond Foundation Pro-Am will take place on Tuesday, January 20, 2015. The Pro-Am annually raises over $60,000 to help less fortunate individuals and families in Citrus County help themselves. Good Golf, Good Food. Good Friends and giving back to the community you live in . . . just doesn’t get any better! This year we are limiting the field to 30 teams to enhance the speed of play, which will contribute to the overall enjoyment of the day. We are pleased to welcome back Crystal Automotive as our title sponsor. Their generosity and support over the years has been outstanding. As in the past, we have planned a full day of activities with a number of Sponsors and Pros already pledging their support and participation. With your support, the Foundation has raised over $1.3 Million since 2003. The Pro-Am is the single largest fund raiser for the Foundation, representing over 40% of the funds raised to date. Our volunteer staff has enabled the Foundation to give back 98.5 cents of every donated dollar, a contribution which is unmatched by any other sizeable charitable organization. To date, the Foundation supports over 20 agencies in Citrus County thereby enriching the lives of individuals and families who need a helping hand. There have been a number of success stories and here are some highlights:

• Through Daystar Life Center, helped distribute more than 1 million pounds of food to 12,500 Citrus County families since 2006

• With the Thanksgiving Feeding Alliance, helped provide and distribute Thanksgiving dinners to 7,000 Citrus County families since 2008

• Since 2004, provided 800,000 pounds of food to over 40,000 people and gifts for 13,000 children at Christmas in conjunction with the Family Resource Center

• Provided $200,000 in post-secondary scholarships

• Funded 90 matches for Citrus County children with a Big Brother or Big Sister since 2003

• Worked with the Habitat for Humanity, fully funding the building of a home in Citrus County – the first and, to date, only local neighborhood to do so.

There are many more examples of how your dollars have been used to help others. As a member of the Black Diamond community you should feel a tremendous sense of pride and accomplishment. Your support has and will continue to make a huge difference in many lives. So again, mark your calendars for Tuesday, January 20, 2015. With your support and participation it truly will be a Pro-Am that “Makes A Difference.”

Hello Members: November marks the beginning of my fifth month here at Black Diamond Ranch, I am happy to say. This month will bring some new events, as well as, some heavily upgraded events. On November 7, 2014 there will be a reception at 7pm for the November 8th Black Diamond Ranch Invitational Car Show. The Car Show will be on the #1 fairway of the Highlands Course, to be held from 9am-3pm. Please come by and see the cars. It is a free event for spectators and there will be food booths, music, and tours of our newest model home. Also, we have started a “two entrées for $25.00” night, which will be held on Wednesday November 5th. I look forward to hearing Chorale practice this month in anticipation of the December show! Wine dinner will be held on Thursday the 13th this month, and we will have a guest violin player for the evening. We will be hosting a “Welcome Back” party on Thursday the 20th in the Clubhouse. Boutique Noel will be held on Sunday the 23rd. Finally, Thanksgiving Buffet will be held on the 27th from 11am to 3pm. I look forward to seeing those of you who will be in town. December is weeks away. If you need to plan a holiday event at the Clubhouse, please contact Emma Bradley at 746.3440 ext. 220 or her email is [email protected]. See you at the Clubhouse.

Recipe of the Month - Chef KennyBanana Cream Pie

Rum pastry cream: 500 gr milk½ vanilla bean (scraped)6 yolks125 gr sugar45 gr cornstarch50 gr butter4 gelatin sheets (bloomed)45 gr rum (Meyers)

In a pot place the milk and vanilla bean to a boil. In a bowl mix the yolks, sugar and cornstarch and pour over the hot milk, strain and return to the stove over a medium high heat stirring constantly using a whisk until a very thick consistency and the cornstarch is completely cooked. About 4 minutes. Remove from the heat and whisk in the gelatin and butter until well dissolved. Add rum. Let it cool down completely in the fridge and whisk again using the kitchen aid to smooth it out and have some air on it.

Crust for 1 pie:1 ½ cup graham cracker crumbs90 gr soft butter3 tablespoons sugar¼ teaspoon salt

In the kitchen aid with the paddle attachment, mix everything until well combined (like a paste consistency). Press the mixture down to the ring mold to make sure it gets the entire bottom and the side of it and bake at 325 F for 8 minutes. Let it cool down at room temperature.

Chocolate Ganage2.6 oz chocolate bittersweet1 oz milk chocolate1/3 cup plus 1 tablespoon heavy cream

Heat up the heavy cream and pour over the chocolates to melt them, stir with a spatula to make sure is completely dissolved, keep at room temperature.

Banana paste:¼ cup butter¼ cup light brown sugar5 ripe bananas cut into slices¼ cup dark rum (Meyers)½ cup banana extract (brand mec 3, from paris gourmet)2 teaspoons lemon juice

In a sauté pan, place the butter and sugar until the butter is completely dissolved, add bananas and sauté until very tender and falling apart, add rum and keep cooking until a thick consistency. Remove from the stove and add the lemon juice and the banana extract. Puree everything until a very thick and paste consistency. Place it into a bowl and put some plastic on top to avoid any skin.

Whip cream:2 cups heavy cream3 Tablespoons powder sugar1 ½ tablespoons rum (Meyers)

Whip everything in the kitchen aid until hard peaks.

To assemble:Brush the crust liberally with the ganage in order to cover it completely on the bottom and the sides. Refrigerate for 5 minutes so the ganage is set, place the banana paste on top of the ganage about ½ inch up and then the pastry cream another ½ inch, refrigerate for about 5 minutes and place the whip cream on top. Decorate with chocolate shavings. Keep in the refrigerator.
