EXTRA-VIRGINOLIVE OILAPULIANS organic extra virgin olive oil (with very low acidity) is produced:

• in a single territory• by a single producer• with a single type of olives• from hand-picked wholesome olives (bracatura)• by the olives cold working pressure (max 37°)• the time interval between harvesting and milling doesn’t exceed 24 hours in order to guarantee freshness

Apulians extra-virgin olive oil is of very high quality, it is cold extracted in a continuous two phase olive mill. The olives are processed rigorously within 24 hours from picking, which takes place in November-December of every year. The olive oils so obtained have very low acidity and very low peroxide value. They are obtained as if they were a real olive juice without undergoing any kind of industrial preparation, filtering, polishment or sophistication during the processing. They are raw, pure oils that preserve all the organoleptic and chemical-physical characteristics of an intense fruity oil, with a slightly bitter aftertaste, typical flavour of the“coratina” variety extra-virgin olive oil.

Artisan pasta made from Apulian durum wheat flour using bronze wire drawings, harvest static frames and drying at very low temperature. The result is a product with intense fragrance and marked increase in size during cooking.

Description of the production cycle

Pasta is obtained by mixing simple ingredients: durum wheat flour, water, natural flavors and spices to lend pasta a particular color; the process consists of some simple stages:

KNEADING, COMPRESSION AND WIRE DRAWING

The durum wheat flour is kneaded with a certain amount of water that varies depending on both the type of bran and the shape of pasta being produced. Kneading produces the hydration of the amid and proteins, which develop the gluten and the complex reticulum that ties the amid grains. Through the following stage called "gramolatura" or compression, the well kneaded dough becomes homogeneous and elastic as a result of a further modification and stability of the reticulum and takes its typical feature. The dough, pushed through the die plates, assumes the shape of the chosen pasta and acquires those qualitative characteristics that are found during cooking. For the rainbow or multicolor shapes, the colored phyllo doughs are superimposed in number and variable colors chosen from time to time, obtaining a block that passes through blades and cutting machines assuming a shape which is then modeled by the operator's hands.

DRYING

The newly shaped pasta stills contains 30% water, which is carefully eliminated during the whole process with variable duration depending on the adopted drying technology and the type of pasta being produced. The product is ventilated with hot air and appropriate temperatures (37° - 38°) in order to reduce the humidity contained in it evenly and homogeneously; this procedure is very delicate because an excessive drying speed might modify the feature and quality of the product. At the end of the drying process, pasta is cooled down to room temperature to allow the product to pass from plastic state into vitreous state.
