San CayetanoThe soil conditions of San Cayetano come from volcanic rocks, rich in nutrients that are constantly submitted to analysis to ensure ideal conditions for plant nutrition, keep productivity and avoid and control pest and diseases.

A complex network of coffeeducts allows overcome the mountains by gravity, using the minimum amount of water to bring the product quickly to a modern processing wet milling factory; in which through high-tech equipment and efficient process, the cher-ries are pulped and classified, using minimal amounts of water, which is recycled and decontaminated before being returned to its natural environment.

DescriptionIt was around 1880 when former Colombian president Mariano Ospina Rodríguez introduced coffee to Fredonia, Antioquia. Later, in 1910, his son, Tulio Ospina planted the first coffee crop in the farm of San Cayetano. Its volcanic soils, wealth of water, and extraordinary climate make it the ideal place to cultivate the high-est quality coffee. For over 100 years, the Ospina family has been working, generation by generation, with local farmers to bring you an exceptional product. PAYANA® Thanks to its exclusive roasting process and equipment, this coffee originates from the Naturales, from which we are imparted a delicate acidity that reminds us of its origins, a chocolate flavor that vividly brings us back to the times of our ancestors and a smooth body like that of fines wines.

ORIGIN: To make this coffee, the entire fruit is roasted, harvested and dehydrated. There is no recourse to mecanical extraction processes so all the layers of the fruit are used: the pulp, mucilage (from which fructose is caramelized), parchment, almond and embryo.FRAGRANCE: Red wine, dark chocolate, black tea, sometimes red berries like colombian blackberry, strawberry and raspberry, other times blueberries, or a mix of all these berries. The coffee also has tones of tamarind, hibiscus and other flower fragrances.AROMA: Deep dark chocolate aroma with a variety of spices and nuts. Red berries and red wine aromas are at times also present, depending on the origin of the coffee and grain size selected for roasting.TASTE: Wholesome refreshing mix of coffee and tea with tropical fruit. Slightly acidic, smooth body and deep lasting taste.

PAYANA® coffee is grown on unique farmland, because it is important to us to offer clients the highest standards of specialty coffee.
