Is it from "food", or "air", or "surface" contact? Which interface, i.e. the gastrointestinal tract, the lungs, or the skin, gets the biggest dose of the environment..., and which shoulders the greatest burden for defense against hazards. Of the three systems, which has the greatest potential for negative and positive health impact? and which is most likely to provide us with the best outcome for the least amount intervention? Will we be able to find a correlation between our most expansive environmental "interface" and our "efforts" to effect health change? The surface area of the intestines is equivalent to a football field. Because this is a huge interface, and the intestines are "nutrient filters", plenty of safeguards exist for protection from the environment: enzymes, acids, hormones, immune cells, reflex pathways, and rapid cell renewal (wikipedia). The human lungs have considerable surface area as well, roughly the size of one half a tennis court. One might ask the question, what organ systems in our bodies encounter the greatest "environment-org an system" interface, and where are the

greatest "relative" risks of environmental impact. Is it from "food", or "air", or "surface"

contact? Which interface, i.e. the gastrointestinal tract, the lungs, or the skin, gets the biggest dose of the environment..., and which shoulders the greatest burden for defense against hazards. Of the three systems, which has the greatest potential for negative and positive health impact? and which is most likely to provide us with the best outcome for the least amount intervention? Will we be able to find a correlation between our most expansive environmental "interface" and our "efforts" to effect health change?

QUESTION:

ANSWER: Wikipedia has a great page of cut

and dried fruits and vegetables (yes, that was a terrible pun). It lists so many phytochemicals and their sources in different foods that likely no one will really try to memorize it. It lists chemical categories as well, and on the surface it seems pretty boring. HOWEVER, the upside of viewing such facts is to alert us all to just how pitifully and woefully deficient our current USDA (FDA?) approved nutritional labeling is, and how we have been led down the rosy path of thinking that if we get a tiny bit of iron, calcium, a little protein, and not too much salt and sugar, that we are being nourished. Truth be told, we are not being hourished. The actual benefits from injesting foods rich this long list of phytochemicals (Linus Pauling Institute at Oregon State University) have not even begun to be known.

Go Green, Go Red, Go Yellow, Go Purple, Go fresh and Go unprocessed.

Flavinoids and carotenoids appear to be the most abundant phytochemicals on this list. One only has to conjure up the vision that plants and people have evolved together therefore it seems a reasonable assumption that there are hefty benefits from the partnership.

The take home message is simple. If it is in a can and has a nutrition label that is identical to the labels for adjacent foods, then its probably not worth eating.

SOLUTION:SIMPLE! -- and the approach to solving the nutrition puzzle is quite easy to remember. -- If it looks like its been breaded. ground, fried, pried, patted, packed, pressed, pulled, twisted, crunched, coated sweetened, floured, or dressed... don't eat it. If it looks like the rainbow, and is fresh. Go for it.

A new variation on the YouTUBE educational videos was posted for June.

The initial concept of these videos was to engage school-age kids with its graphics while teaching them the value of eating raw and minimally processed foods (primarily

fruits and vegetables). By using animation to show MORE than the food's nutrients typically listed on the label on a can or

package, it sends a message that the important nutrients are as yet, given in USDA lists and are mostly found in fresh foods. In this series of "Eating A-Z" videos, nutrient values at or above 6% of the the RDI (recommended daily intake) also called the MDR, or minimum daily requirement, were generally used as a cutoff for listing the nutrient as a a good source of a "nutrient dense component of a food". Sometimes lower levels were shown.

The graphics are meant to be fun, entertaining, and educational. The aim of the educational content is to empower all individuals to make good choices that will ehnance their lives and promote their longevity and good health.

Pink Ribbon Girl member recognized as Unsung Hero Congratulations to Pink Ribbon Girl board member Banita Bailey, who’s been nominated for, and received, the Cancer Family Care’s 2012 Joslin Haggart Yeiser Unsung Hero Awards. The annual award payed tribute to acts of quiet heroism shown by patients, caregivers and oncology professionals. Banita was nominated by three individuals in the patient category for her remarkable contributions to Pink Ribbon Girls and the Growing up Female and Windows of Susceptibility breast cancer projects; as well as her compassionate support of fellow survivors. 2 c sliced zucchinisalt and black pepper2 tbs extra virgin olive oil1 c cooked brown rice2 tbs grated Parmesan cheese

How big can a zucchini get -- almost 3 feet!!!What is the optimal size for a zucchini to be picked - around 8 - 10 inches, the larger, the tougher -- but large zucchini can be baked.Can the zucchini flowers be eaten? Firm, fresh slightly open blossoms can be cooked and eaten as well (check wikipedia for preparation instructions).

Zucchini is very low calorie (about 15 calories per 100 g). It is low fat, and contains reasonable amounts of folate (7%), potassium (5.5%) and vitamin C (14%), vitamin A (6%), vitamin B2 (6%) and manganese (19%).

Put zucchini in baking dish, add olive oil, salt and pepper and stir to coat zucchini. Spread zucchini out on bottom of baking dish, roast for about 20 min, remove pan from oven, turn zucchini, return to oven for another 20 min or until tender. Add rice, stir gently, sprinkle with Parmesan and serve.

Stand in front of a wall at arm’s length. Place your palms on the wall at shoulder height, fingers spread out, middle fingers pointing toward the ceiling.

With slight pressure on the wall, draw your belly back towards the opposite wall, as if to lengthen the tailbone and raise your ribs.

Step by step, begin to walk the legs back, bending at the waist, while also walking your hands down the wall to form an right angle (L-shape), keeping your back straight and your arms and head pointing towards the wall.

Repeat for 10-20 breaths. Move to the forward bend pose after a few breaths.
