CHICKEN BURRITOS Ingredients: 6 or more white or whole wheat tortillas 1 chicken breast per person 1 box of Mexican style rice 1 packet of burrito seasoning 1 can of refried beans 1 head of iceberg lettuce 2-3 cups of cheddar cheese 1 large jar of salsa 1 container of sour cream Additional Toppings: Guacamole 20 OCT Directions: 1. In a skillet over medium-high heat, drizzle a tablespoon of vegetable oil in the heated pan and place cubed chicken in spreading out evenly to cook. Once the chicken has turned from pink to white (about ten minutes), mix the burrito seasoning with the amount of water indicated on the package and pour overtop of the chicken cooking for another 5 minutes on medium heat until the sauce thickens. 2. Cook the Mexican style rice according to the package directions and let cool for 5 minutes. 3. In a medium sized bowl, empty the can of refried beans into the bowl, stir well and heat in the microwave for 30 seconds, remove from microwave, stir well once more and heat for another 30 seconds. 4. Start with your tortilla, spreading the warm refried bean paste on first followed by a large spoonful of rice and then another spoonful of chicken. Top with lettuce, salsa, cheddar cheese and sour cream and wrap your tortilla. Serve with guacamole! Preparation: 40 minutes Yield: Varies You can also use ground beef or pork instead of chicken, or leave meat out entirely for a vegetarian-friendly option!
