came to Ireland over 20 yearsago. He has previously worked in thethree-Michelin star Alain Chapel nearLyon, in the two-Michelin star Le Carredes Feuillants in Paris, and with KevinThornton for nine years. He opened Dax in1994.

PAUL FOLEYProprietor, The PigeonHouse, Delgany and ThePigeon House, Clontarf

Restaurateur Paul Foleyopened the award-winning Pigeon Housein Delgany in 2014, and then the PigeonHouse in Clontarf, with chef Brian Walsh.The pair previously worked together inDownstairs in Clontarf, from 2010 to 2014,where they won a Michelin Bib Gourmand.

PUBSJOHN GLEESONProprietor, Gleesons ofBooterstown and incoming chair of theLVA

John Gleeson is the second generation ofhis family to own and run the award-winning Gleesons of Booterstown.Previously vice-chair of the LVA, he willshortly take over as chairman, whileGleesons will soon undergo majorrennovation and expansion, becoming aboutique hotel.

LIAM KEENANGeneral manager Ireland,DeliverooLiam Keenan has been with

Deliveroo for over a year and ahalf, initially in the UK before returninghome to oversee Deliveroo's Irishoperations at the start of 2017. Prior to that,Liam worked at Google in Dublin, Singaporeand Toyko. His time at Google was primarilyspent working on their strategy andoperations unit for Europe and APAC'sadvertising business, before switching tosupporting Ecommerce, Gaming and Appclients in South East Asia.
