Campus Dining Interview (Chartwells)

May you tell us a little bit about Chartwells? A division of a campus group with a straight contract

dining and go into a place knowing how many people they are feeding.

They’re also serving Google Company, Hospitals, Elementary Schools etc.

How many other campuses does Chartwells serve in California? Is there products you offer at other campuses that you don't offer here? Is there a possible chance that your company could bring them to our campus?

It’s union based environment. Other campus offer Indian foods and not here at CSU

Stan. Trying to get Panda Express and Chinese foods.

What process does it take change the menu?currently trying to get Panda Express on campus

but it its going to take about a yearvariety is often added but the process always

takes a long time Is the menu ever expanded or reduced? Why?

There options are small because of the size of the small grill

They go to local restaurants to see what can be possible to make at our kitchens

Campus Dining Interview (Menu)

Is the Stanislaus dining menu going to have any future changes? Add a yogurt/smoothie bar and Panda Express Students according to the survey have also

been wanting these, it shows he gets involved with what students think and want.

What policies does the company have to follow with the menu? Certain quality of food needed, such as certain

grades of meat/produce Have to support school All food service providers must follow strict

guidelines as to how food is made and handled, as well as quality of the food.

Page 17: Campus Dining Cristiana German Dilpreet Rajania Joulie Thao Vanesa Barcenas Xylina Faller

Campus Dining Interview (Menu)

How do you establish menu prices? Have to compare themselves to other

businesses on market and compete with them Need to be proud of what they are serving Because they are serving a very specific

audience, they can create quality products the customer will like. Just like restaurants do, they must also take into account how much ingredients will be bought, how many people will buy, and labor and location costs.

Page 18: Campus Dining Cristiana German Dilpreet Rajania Joulie Thao Vanesa Barcenas Xylina Faller

How does Chartwells maintain the food quality and consistency? Everything made by Chartwells is made

fresh every day all the way down to the bread baked in there own bakery. Chartwells takes pride in quality which is the best way to maintain quality.

Has Chartwells had a Taco Truck before? Yes but it was removed from the university

What went wrong? The location of the Taco Truck was very

poorly chosen for it had been situated near the “MSR” building.

Could there be a possibility to bringing one back? A local yogurt vendor called “vida vitale”

 will be coming soon

Campus Dining Interview (Taco Truck)

Campus Dining Interview (Proposal)

Can a dollar menu be a plan to bring a CSU Stanislaus dining in the future? The quality of the food served with a dollar menu is

not a respectful amount and does not pass certain inspections that Chartwells has to go through. Also the company would not be able to look at their customers in the eye and tell them they they are serving them the best food possible. Chartwells prices are reasonable compared to Wing Stop across the street from campus there prices are cheaper and compared to the mall the prices are still lower. You get a way better quality becauase of the price you are paying. Chartwells does offer full health coverage to all their employees who some have been working with them for over 15 years. So because of the standards a dollar menu can not be brought to Stanislaus Dining Hall.

Page 21: Campus Dining Cristiana German Dilpreet Rajania Joulie Thao Vanesa Barcenas Xylina Faller

From all the answers of the survey we got that the students who eats at the campus dining, says that the prices are expensive. Those who doesn’t eat there brings their own lunch or don’t have enough time.

From our interview with Scott Smith, we understand that Chartwells is a straight contact and it is a union based environment. We also learned that Scott is planning to change the menu and trying to add Panda Express and other restaurant, but it will at least take a year or two. Overall, Mr. Smith says that he compares their business prices with other markets and competing with them that’s why our prices at the dining is so high.

Overall Thoughts
