David Lecanda Few meals represent the Mediterranean cuisine as the artichoke. Around this vegetable, originally from Africa, get born and it's raise the main idea of FLORES DE ALCACHOFA, a small culinary laboratory where the pleasure doesn’t fight against the healthy way of eating, here the Latin essence does not draw boundaries around ourselves, instead of it, we cross the Atlantic Ocean and we pay tribute to the Ibero-American gastronomy which we love, admire and respect. After many years of investigation, we have managed to decipher the mysteries of this mythological vegetable. Considered as pioneers because the flower form presentation, we render homage the Spanish variety Blanca de Tudela, small and long, green color, one of the main claims for years in EL PIMIENTO VERDE, considered by the clients as a little miracle cause its texture and flavour, inimitable no matter how many try to copy the formula. From the Spanish garden our letter is nourished. Fresh vegeta- bles and fruits are combined with the traditional Mediterranean cuisine, with fishes from our coasts; being an inevitable referent the monkfish, savage from the Cantabric waters, the excellen- ce of flavour and the texture of national meats, as the Iberian Extremenian pig, the suckling lamb from Riaza or the black breed from Ávila raised in our feedlot at Herradón de Pinares, Ávila. AMÉRICA In this space, mix of colonial style and tropical atmosphere, our kitchen team create an imaginary bridge between the Medite- rranean food style and the streets of America Latina, bringing to you their tacos, guacamole, arepas, tequeños or ceviches, that bring us color and fun on the table. I would like to mention the special coffee from our independent roaster, CAFESSITO. A treat for the palate made up of selected microlotes of the best farms in America and Africa. For breakfast, lunch, snack, dine or just share a drink or a cocktail with friends when night falls, the FLORES DE ALCA- CHOFA door will always be open. Thank you very much for visiting us. Cheers!
