1. Alabama: Alabama barbecue doesn’t discriminate. You’ll find a little bit of everything throughout the state, but there is one distinct barbecue element to the state, barbecue chicken smothered in a mayonnaise-based white sauce emerged from this state, specifically in North Alabama.

2. North Carolina: This state is brimming with barbecue. It has two distinguishing types: Lexington or Piedmont, and Eastern. Eastern style is thought to be one of the original types of barbecue, where the sauce is thin, vinegar-based, includes red pepper and sugar and has very few enhancements. Lexington style, often found in Western North Carolina, mixes a little red into the sauce with additions like ketchup or tomato paste.

3. Texas: One thing reigns supreme in Texas and that’s barbecue beef brisket. You’ll likely encounter some braggarts in this area in your lifetime, if you haven’t already. Texas primarily focuses on beef, and the sauces

vary in different parts of the state. Some add molasses, while others use a tomato-based sweet sauce.

4. South Carolina: This state has a hodgepodge of offerings, but the mustard-based sauce is unique to the state. It’s sweet and tangy and quite possibly the most notable barbecue aspect of the state.

5. Memphis: This Tennessee delight uses something a lot neater, and a bit different, than the others: a dry rub of paprika, garlic, cumin, chili powder and a few other secret spices. Ribs are often the Memphis barbecue of choice.

6. Last, but certainly not least, is Kansas City: This barbecue is often sausage, beef, chicken or pork. Its sauce is extra thick, extra sweet and extra tomato-based. The most noteworthy element of this barbecue is its charred exterior. Some of the KC folks continue smoking their meats until they have a charred exterior. It’s extra tasty.

Fire Up the Barbecue - It’s Grilling Time

When you think of July, the hot summers days and humid nights, one word that inevitably comes to mind is “barbecue.” I’m talking noun form and verb form both. Some people prefer the indoor barbecue method, using the oven or a slow cooker, but technically, that doesn’t qualify as a barbecue. The origin of the word focuses specifically on outdoor cooking over an open flame, and any kind of meat will do—pork, chicken, beef or seafood—whatever the chef prefers.

Despite the nearly unbearable heat of July, you’ll find people everywhere nationwide hovering over their grills to prepare their favorite barbecued meats for friends and family. You’ll likely even encounter different types of barbecue styles, depending on the region of the U.S. But region and type don’t go hand-in-hand. In fact, you’ll find any of the below regional barbecues anywhere in the U.S.

Spotlight on Rufous Hummingbirds

Known for the jarring, high-pitched song, the Rufous hummingbird is small in a family of tiny birds, but that doesn’t stop them from being assertive. They are known to be fairly combative in nature. They are territorial, and as such, scare other creatures away from their nesting areas. The male birds have a copper-like glow to them and defend even the flowers from which they find nectar. They chase away all who encroach upon their space, even bigger, more aggressive birds.

Rufous hummingbirds are especially unique in their migration patterns, which span from Mexico to Alaska. They travel 4,000 miles just to find their special home every year. During winters in Mexico, they can be found in mostly pine and oak wooded areas. Their prime breeding grounds can be found along the Pacific Northern coast and mountain areas. Rufous hummingbirds travel as far as south-central Alaska to nest, farther than any other type of hummingbird.

Despite this fact, though, the bird is definitely a nomad of sorts. Some of the Rufous hummingbirds have been known to appear east of the Mississippi River! That’s pretty far off course. But it sounds like these beautiful birds are keeping their options open. They are noted to be particularly vulnerable to the effects of climate change.

Patriotic Fruit Skewers

INGREDIENTS• 10-12 long wooden skewers cut in half

• blueberries, bananas, strawberries

• 2 cups plain or vanilla yogurt

• 1/4 cup honey

• 1/2 tsp ground cinnamon

INSTRUCTIONS

Thread the fruit onto each skewer so that they

come together to form the American flag. In a medium bowl, stir together

yogurt, honey, cinnamon and serve as a dip. Enjoy!

Some foods help keep your heart in shape; others help your bones. What keeps your brain and memory healthy? Try these:

Here’s one more reason to get up and get moving this summer: It might help your memory.

The results of a six-month study hint at a possible link between exercising and improved memory for seniors dealing with some mild forms of cognitive impairment. Of course, any changes in memory or thinking can be precursors to more serious conditions or side effects of certain medications. However, for those experiencing mild changes in cognition due to aging, exercising as little as twice a week seemed to be beneficial in helping them to stay sharp.

More research is needed to determine just how much of an impact exercise can have on the aging brain. Until then, the Alzheimer’s Association and other organizations are embracing these new findings and hoping you do too.

Foods to Keep Your Brain Healthy

Studies suggest that eating at least a half-cup of blueberries, or one cup of strawberries, on a weekly basis may help stave off cognitive decline. Berries have anthocyanidins, whose antioxidant and anti-inflammatory ef fects may keep the brain in shape.

adults found that a daily serving of spinach, kale, collard greens or arugula appeared to maintain cognitive health to the extent that participants were considered to be 11 years younger than people who rarely or never consume such veggies.

Green Leafy Vegetables Eggs contain choline, which is an important

brain nutrient. In a study of 1,400 people, participants with high intakes of choline scored better on visual and verbal memory tests than those who ate less foods with choline. In addition, people with a high intake of choline over the long term seem to have better MRI brain scans, suggesting that choline may protect people against dementia.

Galaxies rotate, just as Earth and other planets do. However, their spin is remarkably consistent, regardless of size. The Discover Magazine website reports that scientists have determined that all galaxies rotate approximately once every billion years, whether they’re massive spiral galaxies or small irregular dwarfs.

Researchers measured the velocities of hydrogen in the outer discs of a variety of galaxies differing in size. The measurements allowed them to calculate the rotation period of each galaxy. “Discovering such regularity in galaxies really helps us to better understand the mechanics that make them tick,” one scientist says.
