    The popular types of Asian foods Chinese, Japanese, Thai and

    Indian are paired almost exclusively with white wines. Whilematching food with wine is subjective and your personal preferences

    should always rule, the white wines I like to serve with these dishes

    are ones that are served chilled and may even have a slight sweetness

    to them.

    The reason red wines dont work as well is because the tannin in

    red wine, originating from the grape skins, seeds and stems, clashes

    with the delicate textures of Asian food. Tannins are desired in wine

    when paired with foods with some fat content. The tannins cleanse

    the pallet of the fattiness with each sip. Thus, big, tannic wines like

    Cabernet Sauvignon are served with big, fatty foods, like steak. Pinot

    Noir or Beaujolais wine from France, popular red wines with little

    tannin, often work well when combining with Asian food. A wine-enthusiast friend of mine likes his Thai food with shiraz from

    Australia, which is a peppery, full-bodied red with rich tannin.

    Although Ive never tried this combination I would probably agree

    with him if the dish included meat.

    White wines that are crisp with acidity and have a little sweetnor residual sugar, blend well with the fish, vegetables, black pepp

    spices and stir-fried methods used in Asian foods. Usually, my first

    choice is to drink Riesling with these dishes, for its flowery aromas

    tingling texture and mild sweetness. It complements the saltiness o

    soy sauces or the spicy heat from wasabi. But on the other hand I a

    like drier whites, such as Fum Blanc for its vegetal qualities.

    If you want to look further than these options, try Riesling and

    Gewrztraminer wines from Germany, or the Alsace region of Fran

    They are a little more complex than the domestic wines and will

    match up with the most flavorful Asian dishes.

    June brings heat, and with it, lots of things happen in the cellar.Over the winter and into early spring, with cellars cold, wines in

    barrel tend to slowly blurb along, the yeasts gently doing their thing

    with the last percent or two of residual sugars or the bacteria finishing

    up the conversion of malic to lactic acid, both of which are good for

    aroma and mouthfeel, but come the warmth of late spring, the wines

    in barrel come alive again because heat speeds up reactions just like

    in your high school chem lab which means decision time once

    again.

    For whites, generally Chardonnay but occasionally Sauvignon

    Blanc or another oaked variety, this is when the secondary malolactic

    fermentation finishes if it has not already, and with the exception of

    those who are going for a long time in barrel, this is when the

    previous falls white wines are bottled. Some whites, like Sauvignon

    Blanc or Riesling, generally made in steel the whole time, would be

    released immediately, the freshness and vibrancy preserved for exactly

    how appealing these wines are when young.

    Most producers, however, would bottle oaked whites and then

    allow them to age under glass for at least a few months, if not longer.

    This is not just about bottle shock from bottling, which does tend mute or cause otherwise great wines to taste a bit off for a month o

    two. No, the anaerobic conditions actually allow the wines to agai

    undergo a slow maturation, bringing out more mouthfeel and

    complexity through the lack of oxygen. This is why the wines wa

    up when opened they have returned to aerobic conditions,

    activating bouquet and flavors through the reintroduction of oxyg

    Red wines, of course, take a parallel but different trajectory than

    the whites. Just about all reds spend time in oak, and spring will

    mean time to transfer, or rack, again as every few months barrels

    need to be topped up to reduce the oxygen of headspace, and the

    best way to address this is to conslidate into fewer barrels. This

    causes a gradual reduction of the overall wine in the cellar as barre

    wines are racked out of their homes and then into either a new bar

    or a tank, some folks deciding to maintain the integrity of each win

    lot while others allow for a general mixing in a larger tank before

    going back to individual barrels again.

    Any given red spends eighteen to twenty-four months in this

    cycle, and along the way, each racking creates a natural fining effec

    particles fall out of solution and end up in the belly of each barrel.

    These lees provide for complexity but also possible microbial

    contamination, which is why the monitoring of each wine in barre

    and as it is racked is most important of all we can taste and smel

    problems far quicker through sensory monitoring, and knowing thSpring brings warmth, and warmth speeds things up, simply mean

    paying closer attention rather than necessarily doing anything at al

    As I hope is clear, the reality of winemaking is that every step o

    the process presents a series of options. Regardless of which are

    chosen, or not, each time the winegrower chooses to tweak or not,

    rack or not, how often, the logistics of the racking, etc., all leave an

    impact on the final wine. While the processes are scientific,

    measurable, and generally predictable, the application is where

    experience and creativity come to the fore. Those willing to

    experiment intentionally create an alternate path for their wines,

    choosing differently at the moments above, while those calling

    themselves minimally impactful or conservative seek to decide ordisturb as little as possible. There is no one right answer, which is

    what makes winegrowing so much fun. If we knew all the answers

    ahead of time, thered be no point in doing it since wines tend to

    have mnds of their own. Consider that when you pop the next bo

    and enjoy!

    Do not be intimidated for any reason. That is rule number one

    (and there are very few real rules after that). For the most part, going

    wine tasting is about the easiest thing in the world, especially here inCalifornia where wineries and tasting rooms abound. You can find

    wineries specializing in red wines of all types, those that are famous

    for their white wines and others who pour sparkling wine. It is a

    matter of doing a little research and planning your day. Most tasting

    rooms open around 10 a.m. and close between 4:30 and 6 p.m.

    Before you start off pack a few essentials:Water (plenty of

    water) and something to snack on crackers or a baguette. Many

    wineries have picnic areas and there are plenty of delis and bakeries

    that can make up a lunch for you, or make your own. Which brings

    us to eating and drinking, the kind that doesnt directly involve wine.

    Be sure to nibble during the day and make sure you make time

    for lunch. Two tips: drink at least twice as much water as you do

    wine, and remember that you dont have to drink everything poured

    into your glass. There is a reason tasting bars have dump buckets and

    a pitcher of water to wash out your glass.

    That said, here are some tips that have proven to be helpful and

    are designed to help make the sensory adventure of wine tasting all

    the more enjoyable.

    Dont be afraid to ask questions. Time and time again I have

    heard knowledgeable winery workers say that there is no such thing

    as a stupid question, and they mean that.

    You can drink what you want, in the order you want. If you

    only like reds, say so; if you dont like sweet wines, speak up. But theidea of starting with whites, then going on to reds and then sweet

    wines is a good guide.

    Zinfandel is red. I am sure you know that but it never hurts to

    remind everyone.

    If there is a particular wine you want to try and it is not on

    the list, ask. There might be a bottle around that was opened for a

    trade tasting or by the winemaker. Most tasting rooms are happy to

    pour a little if you show enthusiasm.

    If you plan to take wine home with you, either in the car or on a

    plane, buy a cardboard box with Styrofoam wine inserts. Fill it

    during the day and this keeps wine from rolling around in the trunk.Check out the smaller wineries. It is a revelation.

    Take notes on the wines you most enjoyed.

    Take advantage of tours when the winery offers them, but keep

    in mind that they take anywhere from 20 minutes to well over an

    hour, so one a day is plenty.

    Buy wines that you can only find at the winery. These often

    include smaller (375 ml) bottles of limited production Ports or

    dessert wines. Dont buy a wine you can get at a supermarket back

    home. Youll pay more, and besides, whats the point?

    Look for tasting rooms in towns. Many of these are cooperative

    tasting rooms, where in one place you might find wines from a doz

    or more small-to-medium premium producers. They are scattered

    throughout the area and more are opening all the time.

    Dont give too much thought to ratings and vintages. Its like

    art: if you like it, its a good wine. It is as simple as that.

    Remember that you dont have to do the driving. It takes no

    more than a phone call to rent anything from a Town Car or restor

    classic convertible to stretch limos and a 20-passenger bus. All hav

    drivers that will stow your wine for you and the local companies

    know the area. As to taking that wine home, ten people sharing on

    of those impossibly long limousines is fine and fun, but if you all

    plan to buy a couple of cases the trunk which is no bigger than a

    normal luxury cars is going to fill up fast and youre going to finyourself filling the interior floor with boxes and using cases of

    Cabernet as footrest.

    Tell the transportation company what you have in mind and lis

    to their advice. They know the territory and the people and

    personalities.

    Know your limits. If you get close to it let others taste and you

    can listen. It beats ending the day in a blur, and if need be calling a

    taxi is cheaper than the alternative.

    And if at a seated tasting, dont be afraid to leave a gratuity.

    This year marks the 40th anniversary of Chamisal Vineyards, a milestone that we

    are honored to celebrate with our extended family of employees, neighbors and

    customers. In 1973 Chamisal became the first winery to plant vines in Edna Valley, a

    gamble that paved the way for one of the most renowned and beautiful wine regions

    of California. Our roots here are deep, and as we reflect on the past, we are honored

    to build on this foundation, continuing the legacy of careful vineyard nurturing and

    inspired winemaking that is the essence of Chamisal Vineyards.

    History

    Chamisal was the first vineyard planted in the Edna Valley appellation. It was

    developed by the Goss family, who named the estate for the fragrant Chamise, a

    native white-flowered shrub that thrived on the property. The vineyard went

    dormant several years later but was purchased in the early 1990s by a visionary who

    recognized its near perfect combination of soil and climate and potential for

    producing incredible wine grapes. Renamed Domaine Alfred, the vineyard was

    replanted to a wide range of clones across five grape varieties mainly variations of

    Pinot Noir and Chardonnay but also Grenache, Syrah and Pinot Gris.

    When we took ownership of the estate in 2008, we decided to restore the original

    name Chamisal Vineyards to honor its place in Edna Valley history and especially

    its importance to our core identity. It is this exceptional vineyard that allows us to

    make our bold and distinctive wines.

    VineyardLocated half-way between San Francisco and Los Angeles, the

    Edna Valley is recognized as one of the premier Chardonnay and

    Pinot Noir growing regions in California. With the Pacific Ocean a

    mere few miles away, the coastal fog and breezes create one of the

    states longest growing seasons, extending the amount of time grapes

    hang on the vine to develop flavor. Combining this climate with the

    calcareous and volcanic soils of the Chamisal Vineyard, the result is

    fruit with exceptional flavor and wines with intensity and

    concentration, balanced by good acidity.

    ClonesOur wines extraordinary flavor and complexity come largely

    from our vineyards diverse clonal selection. With 25 different clones

    of five different varietals, our clonal diversity provides us with a

    subtle yet distinct spectrum of flavors from which to create our final

    blends. The resulting wines are nuanced and complex, capturing the

    complete expression of each particular wine grape as well as the

    natural characteristics of our historic vineyard.

    WinemakingLed by Winemaker Fintan du Fresne, a native of New Zealand

    whose first crush at Chamisal was in 2006, our winemaking

    philosophy encompasses a natural approach that is all aboutbringing our special vineyard to life. All vineyard work is done by

    hand. During harvest, we take as many as four passes through eac

    block to ensure the fruit is picked at ideal ripeness. We ferment a

    age each lot separately, tailoring our winemaking, such as the kin

    of French oak we use, to highlight the characteristics unique to ea

    particular clone and vineyard block. From our painstaking work i

    the field to the careful handcrafting of our wine, our style is abou

    allowing each varietal to shine, expressing our vineyards naturally

    bold and complex flavors.

    Summer is an exciting time at Niner Wine Estates. The plant life in front of the

    hospitality center including the white meidiland roses, olive trees and fragrantprovence lavender are all in full bloom; as is the beautiful surrounding Heart Hil

    Vineyard. The flora must have gotten word that Niner Wine Estates is planning on

    welcoming guests throughout the next several weeks during their summer events.

    In general, the Niner Wine Estates summer event calendar has a common them

    live music, fresh food and wondrous wines. Each event invites guests to enjoy the

    spacious and well-appointed outdoor patio space, which overlooks the demonstrat

    winery and Heart Hill Vineyard, while sipping on Niner Wine Estates wine and

    enjoying live music performed by local musicians. There is a new food frenzy

    occurring in Paso Robles wine country: mobile gourmet food trucks. A selection of

    these food purveyors are featured on big event weekends at Niner, such as Fundaro

    Foodstrea, Haute Skillet and Kunfushion. Each mobile gourmet food truck has a

    unique offering from typical wine country deli items and pulled pork sandwiches t

    tacos al pastor and Asian-fusion stirfry. Upcoming events include a Fourth of July

    Celebration, Live & Local Music Saturdays to be held on select weekends, a Labor

    Day Celebration as well as a food and wine pairing cruise in Morro Bay.

    Furthermore, the Niners want to capitalize on all the wonderful, fresh produce

    growing in the area by hosting a series of hands-on, chef taught cooking classes in

    their Education Kitchen. Each cooking class is designed to be interactive, educatio

    and most importantly, a fun way to experience the gracious wine country lifestyle.

    When developing the Hospitality Center several years ago, Pam and Dick Niner kn

    that they would include a state-of-the-art, restaurant grade, education kitchen in th

    plans. The Niners, having traveled around the world, are enamored by the

    relationship between wine and food, which seems to be universal, and wanted toshare their experience with residents and visitors of Paso Robles. The chef and them

    of the cooking classes vary from month-to-month, but some common themes are

    Spanish Tapas, The Wonderful World of Crab and Farm to Fork, where students

    actually go on field trip to visit a local, organic farm to pick their produce for that

    days class. Each class ends with a wonderfully prepared meal, each course paired

    perfectly with Niner wines, of course.

    STANGER Vineyards is making a name for itself as one of the

    premier boutique wineries in Paso Robles. The STANGER estate

    vineyard is located on the Westside of Paso Robles in the famed

    Willow Creek region, and at 1500 ft elevation, has views of all the

    neighboring properties. The vineyard is planted to Cabernet

    Sauvignon, Syrah, Tempranillo and Pinot Noir. In addition to

    meticulous vineyard management and artistic winemaking, each

    STANGER Vineyards bottling is held until the wine is at its peak

    before being released to the public. The current wine list includes

    2009 Tempranillo, 2006 Syrah, 2007 Cabernet Sauvignon, and the

    2008 Bench Blend of 50% Cabernet Sauvignon, 38% Syrah and

    12% Tempranillo. STANGER Vineyards welcomes guests to either of

    their two tasting rooms daily from 11:00 a.m. to 5:00 p.m. Their

    Westside Tasting Room is shared with Poalillo Vineyards at 7970

    Vineyard Drive. On the Eastside of Paso Robles, set amongst beautiful

    rolling hills is the second tasting room located at 5225 Highway 41 in

    Creston. Each location offers a flight of STANGER wines for a

    nominal $10 fee, which is refunded upon purchase. Heres an insider

    tip: before visiting, contact General Manager/Winemaker, JP, to

    arrange a private tasting or even a possible glimpse of their elusive

    Pinot Noir! For another unique experience, check out the Barrel

    Program at STANGER Vineyards. The program offers the participant

    an exclusive opportunity to own a barrel inside the STANGER

    winery. The barrels can be filled with Cabernet Sauvignon, Pinot

    Noir, Syrah or Tempranillo. The barrels are 100% new French or

    Hungarian Oak. After the wine is aged for two years, the owner wi

    receive four cases (or 48 bottles) of the wine as well as the beautifu
