Champagne & Chocolate 2012 Recipe Series Chocolate Covered Oreo Cake Pops Ingredients: 1 lb. chocolate 8 oz. softened cream cheese 18 oz. package of Oreo cookies Directions: Crush the Oreo cookies into fine crumbs (you can use a food processor or blender, or place the cookies in a baggie and crush with a rolling pin). Mix the crumbs with the softened cream cheese. Roll the mixture into balls and place on a lined tray. Place the balls in the freezer to firm for about 15-20 minutes. After the Oreo balls are chilled, melt your chocolate according to the instructions that came with your chocolate. Ideally, use a double boiler. Do not let the water touch the bottom of the double boiler. Only let the water simmer. Do not allow it to boil or you may burn the chocolate. (If you must use a microwave, melt on medium heat for short periods being very careful not to overheat the chocolate.) Insert stick into middle of each ball, and dip each ball in melted chocolate. Immediately roll chocolate dipped ball in topping (if desired). Place on a lined tray and refrigerate until set. Decorate cake pop as desired and return to the refrigerator to set.
