Following are a few key areas that set our steaks apart and allow us to offer you the Ultimate Steak ExperienceTM.

GradeSome online steak providers chose to offer grades of steak less than USDA Prime or USDA Choice. These steak offerings may be more affordable but do not carry the distinct flavor, marbling, or texture. Chicago Steak Company only offers USDA Choice and USDA Prime steaks.

The highest grade you can buy, USDA Prime beef represents only 2-3% of all American beef. Described by the United States Department of Agriculture as “The ultimate in tenderness, juiciness and flavor”, it is a coveted designation that any beef seller would be proud to boast. However, because only a small portion of all US beef earns this grade, and demand for it is so high, many beef sellers are unable to offer it. More than likely, if it’s not labeled USDA Prime – it’s not. USDA Choice is the second highest grade assigned to beef that has slightly less marbling than USDA Prime.

Hand Selected and Hand CutIt really does start with the quality of the beef. Even within the USDA Prime and Choice grades there are differing qualities. Variations in marbling, texture and color are just a few of the variables that can affect flavor and tenderness. We carefully select our beef from the top of the grade to ensure that we are delivering on our promise of excellence.

AgingHow do you take a great steak and make it exquisite? You age it! Aging meat is a process that breaks down a steak and makes it more tender and flavorful. Meat is placed in special, temperature & humidity controlled refrigerators that are carefully monitored. The meat ages in this environment while its natural enzymes break down the steak. There are two types of aging – Wet and Dry.

Wet Aged BeefThe wet-aging process is carried out with the meat carefully packaged to prevent oxidation. These bags are then placed into coolers for “wet aging” before the beef is finally cut and packaged. This extra time (in a controlled atmosphere) allows the fibers of the meat to begin to break down and reach an

extra level of tenderness. Because wet-aged beef isn’t exposed to air (like its dry-aged counterpart), it doesn’t lose as much moisture through evaporation; and the result - delicious, flavorful and tender meat.

Dry Aged BeefThe dry-aging process begins in a strictlycontrolled temperature and humiditylevel–where beef ages for approximately28-40 days. During dry-aging, two thingstake place. First, the additional aging timeallows the breakdown of fibrous tissues andsecond, the monitored atmosphere causesevaporation–meaning that the meat losesits moisture. As moisture decreases and themeat consequently shrinks, the remainingflavor intensifies. Because of the extra timeand the shrinkage of the meat, dry-agedbeef commands a significantly higher pricethan wet aged beef does.

Individually RegisteredEach perfectly aged steak is individuallyvacuum sealed and placed in our attractivegift box. These boxes are then placed in areusable cooler packed with plenty of dryice to keep it frozen during shipment. Every

order is individually registered with its own unique registrationnumber to guaranteeing uncompromising quality. The carethat we put into each package ensures that every order is wellreceived, whether given as a gift orsimply as a way to treat yourself.

Shipping InformationWhen you place an order with Chicago Steak Company, we do everything we can to ensure that your package arrives in excel-lent condition. All of our steaks are vacuum wrapped and flash frozen in their natural juices to lock in the flavor. The steaks are then wrapped in our attractive food grade paper, sealed with the Chicago Steak Company gold label, and placed in our gorgeous gift box. Those gift boxes are placed inside our reusable insu-lated cooler with enough dry ice to keep them cold until arrival.

STANDARD SHIPPING - Your package will arrive in 5-7business days or less from the day we receive your order.Please review the shipping and handling rate schedule below.

EXPRESS DELIVERY - Your package will arrive in 2-3 busi-ness days from the day we receive your order. An additional $19.99 will be charged for this service. Orders placed after 4 p.m. on Tuesday will arrive the following Wednesday.

STANDARD OVERNIGHT DELIVERY - Order received by 4:00p.m. (Central Time) weekdays will be processed the next day to ship Overnight and arrive by the following business after-noon. Overnight Delivery is available Monday through Thursday for delivery Tuesday through Friday. UPS does not offer compre-hensive weekend delivery for this service. Please call 888-970-1118 if you would like Saturday delivery.
