I could eat Mexican food every day of the week. And it is so easy to make at home where you can create something delicious but guilt free. Today I found some great handmade corn tortillas in the refrigerator section and had to do something with them. This dish is made with extra lean beef sirloin tip and these healthy tacos get tons of smoky flavor from the Chipotle peppers. If you love your dishes fiery hot…. Add two peppers instead of one. I am kind of a “heat wimp” so one pepper plus a tablespoon of sauce is just right. This recipe is also easily doubled or tripled for a crowd or you can freeze leftovers for a quick meal anytime. Pair the meat with corn tortillas and your favorite taco toppings. Creamy avocado is perfect with the spicy meat.
