www.MDfitnessRecipes.blogspot.com Chipotle Beef Tacos Ingredients 1 tablespoon olive oil 1 onion, chopped 2 garlic cloves, minced 15 ounce can tomato sauce, low sodium 1 canned Chipotle pepper with 1 tablespoon Adobo sauce (save the rest of the can for other dishes) 1 cup water 2 lbs sirloin tip, trimmed of fat 1/2 lime, juiced 16 Corn tortillas taco sized 2 cups shredded lettuce (optional topping) 2 tomatoes, chopped (optional topping) 1 avocado, sliced (optional topping) 1/2 cup 2% Mexican shredded Cheese blend (optional topping) Directions 1.) Preheat oven to 350 degrees F. 2.) In a large ovenproof pot / Dutch oven, heat olive oil on stove top. 3.) Add onions and garlic and cook for 34 minutes until softened. 4.) Add the tomato sauce, lime juice, Chipotle pepper, adobo sauce and water. Smash the pepper with a hand potato masher. 5.) Place the beef in the sauce and spoon sauce over the meat. Cover and place in the oven for 2 hours. 6.) Remove from the oven and mash with a potato masher until beef is shredded. 7.) Cover and roast another hour until the meat is tender and the sauce is thick. 8.) Serve in warmed corn tortillas with your favorite toppings. Serves 8~ at 365 calories per serving (two tacos per serving). I could eat Mexican food every day of the week. And it is so easy to make at home where you can create something delicious but guilt free. Today I found some great handmade corn tortillas in the refrigerator section and had to do something with them. This dish is made with extra lean beef sirloin tip and these healthy tacos get tons of smoky flavor from the Chipotle peppers. If you love your dishes fiery hot…. Add two peppers instead of one. I am kind of a “heat wimp” so one pepper plus a tablespoon of sauce is just right. This recipe is also easily doubled or tripled for a crowd or you can freeze leftovers for a quick meal anytime. Pair the meat with corn tortillas and your favorite taco toppings. Creamy avocado is perfect with the spicy meat.

Ingredients
