our guide to...cleaning a dishwasher

Important: before attempting to clean a dishwasher it must be closed down properly. Switch it off, including its heater(s) and drain the machine.

Routine maintenance

remove scrap tray(s) and empty any food into appropriate wasteor recycle bin.

remove curtains and filter plates.

clean scrap tray(s), curtain(s) and filter plate(s) in a sink of hot detergent solution (Delphis Eco Washing-Up Liquid). Rinse with clean water and allow to air dry.

rinse the internal surfaces with clean water to remove any soiling that did not make it to the drain.

spray the internal surfaces with Delphis Eco Anti-Bacterial Sanitiser.Scrub clean any stuck on food.

rinse the machine down with clean water.

reassemble and replace scrap tray(s), curtain(s) and filter plate(s) to their proper place.

tip: descale machine regularly to maintain efficiency. Replace detergent chemical with Delphis Eco Descaler and run severalcycles without any dishes in the machine. Remember to replacethe detergent.

Note: if the dishwasher hood is left closed overnight a pinkish mold may appear called Serratia Marcescens. This bacteria grows in humid, moist conditions and requires immediate action. Spray the bacteria with Delphis Eco Anti-Bacterial Sanitiser and scrub clean. Allow to air dry with the hood open.

Important: chopping boards should always be cleaned and sanitised between use to prevent the risk of crosscontamination.

Deep cleaning

remove any visible soiling.

rinse with clean water then place in the dishwasher.

If board is too big for the dishwasher then manual cleaningis required:


using a stiff bristled brush, scrub with a hot detergent solution (Delphis Eco Washing-Up Liquid). Dip the brush frequently in the detergent solution to obtain adequate wetting.

rinse well with clean water.

Draw up a weekly cleaning schedule for the oven. Clean the exterior and remove the wire shelves at the end of each day and allow to soak overnight. Clean the inside after heavy use or at least once a week. Five minutes each day is less time than one hour a week!

Interior routine maintenance

remove wire shelving for soaking overnight in Delphis Eco Heavy Duty Degreaser. Make a solution of 1 part concentrate to up to 10 parts water.

preheat oven to between 40oC - 60oC (100F - 140F). Turn off oven.

loosen baked on grease or carbonised food with a stiff brush or scraper.

while the oven is still warm, spray the interior surfaces withDelphis Eco Foaming Oven Cleaner and leave for minimum five minutes contact time. For heavy burnt on carbon leave for longer periods.

wipe clean and rinse with clean water.

leave oven door(s) open and allow to air dry.

Exterior routine maintenance

spray surfaces with Delphis Eco Foaming Oven Cleaner.

agitate heavily soiled areas, or areas where grease has been baked on, with a stiff brush.

Deep cleaning

remove all food from the fridge and place in temporaryrefrigerated storage (if available).

How do I use Heavy Duty Degreaser?Apply a small amount to a damp cloth and wipe surface. For heavy cleaning spray directly onto surface, leave to stand and wipe clean. For larger surface areas such as floors, use a mop and bucket.

Where can I use Heavy Duty Degreaser?Anywhere heavy soiling and grease is a problem, such as: floors, walls, tiles, kitchen appliances, stainless steel work surfaces, food preparation areas, glass, machinery, industrial equipment, etc.

Important: never use equipment with baffle filters removed. Seek professional advice if damaged, faulty or ill-fitting.

Routine maintenance

Routine maintenance

as soon as the equipment is cool enough to work with, scrape all loose soil from the surfaces.

while rack surface is still warm spray it with Foaming Oven Cleanerwith and leave for minimum five minutes contact time. For heavyburnt on carbon leave for longer periods. Alternatively, soak overnight in Delphis Eco Heavy Duty Degreaser; make a solution of 1 part concentrate to up to 10 parts water.

clean the edges and sides of the grill or griddle. Scrape off the loosened soil and rinse thoroughly.

empty and clean the scrapings pan or tray and replace it back into the grill or griddle.

griddles only: as the griddle starts to heat up again, brush with food grade vegetable oil.

tip: keep the base of the equipment, the top and sides of the stand, the back plate and the spatter shield thoroughly clean atall times to avoid odours and off flavours.

Do not attempt to clean this equipment unless trained to do so. For routine maintenance:

allow fryer to cool and drain cooking oil. If oil will be reused,filter and transfer it to a clean container or reservoir.

fill the deep well with just enough water to cover heating coil.

add enough Delphis Eco Heavy Duty Degreaser to manufacturersrecommended strength when the deep well is filled with water.

thoroughly mix the cleaning solution concentrate with along-handled brush.

turn on heat and bring temperature to 80-94C.

allow coil to soak in the hot, concentrated solution until it is clean (this may take some time).

add hot water to FULL level of deep well.

run for one to two hours until clean.

brush away any heavy deposits.

brush wash outside surfaces using the same cleaning solution.

when tank is completely cleaned, turn heat off and drain unit.Add cold water to the solution as it drains to prevent rapid change in temperature or cooling too rapidly. This avoids warping of the metal. Rinse thoroughly with fresh water.

Note: screens from deep fat fry grid, burners from gas range, and any other metal equipment which is coated with baked on deposits may be cleaned quite easily by boiling them inside the deep fryer as it is being cleaned. These items should also be brushed and rinsed as above. More detergent should be added to clean the additional equipment.

Safety tips

never try to empty oil while it is still hot. Adding cold water before emptying cools the cleaning solution.

garbage items only: some items should always be thrown in the garbage as they clog the drain system, notably dental floss, sanitary pads / tampons, hair, food.
