Update on Get the Scoop... Highlights of this event included a picnic

lunch courtesy of our friends at Magellan.

Magellan staff prepared and served lunch,

participated in the walk to the Ritz, and

provided t-shirts and other giveaways. The

Allentown Police were on hand to help with

traffic and ensure a safe walk to the Ritz.

Members and staff walked to the Ritz BBQ

proudly displaying our banner promoting

Mental Health Awareness. Once we arrived

free ice cream was provided to passersby, as

well as literature with information about facts

vs. myths, in an effort to erase the stigma

surrounding mental health.

Changing to Low Fat Cooking By Lisa Balbach

Steps to Altering the Recipe 1. Use applesauce or fruit purees in place of butter and oil in baked goods. (I have used

2. applesauce in cake and bread recipes-it is delicious. I’ve also used a product called Lighter

Bake (made of fruit purees) in cakes and breads-it is also very good).

3. Use skim milk instead of whole milk.

4. Replace heavy cream with evaporated milk or low fat yogurt. (I usually use low fat yogurt).

5. Sour cream can be replaced by low fat yogurt or cottage cheese. (I’ve put yogurt into beef

stroganoff rather than sour cream and it still tasted great!)

6. Substitute two egg whites for one whole egg (three egg whites for two whole eggs).

Altering the way food is prepared 1. Trim all visible fat from meats before it is prepared.

2. Cook with non stick pans and cooking spray rather than using butter/oil.

3. Add vegetables or extra pasta to meat dishes to decrease the amount of meat you consume.

4. Cook with sharp cheeses and reduce the amount of cheese that you add (because the flavor is

stronger, you don’t have to use as much).

5. Cook with non fat cheeses or mix non fat with regular cheese. (Sometimes non fat cheeses

don’t melt very well, if you mix them with regular cheese, the texture is better when melted).

6. Make marinades with chicken stock rather than oil.

7. Chill stocks, soups and stews, then remove the congealed fat and reheat.

Altering the cooking methods 1. Grill meat or roast it on a rack so that the fat can drip away.

2. Steam vegetables.

3. Saute using water, broth, wine or cooking spray.

4. Try stir frying in chicken stock rather than oil.

5. Brown meats, drain the excess fat by tilting the pan and spooning it out (you can also use

6. paper towels to soak up the fat. After the fat is removed, rinse the meat with water and then

reheat it.

7. Microwave foods rather than fry-you don’t have to add any fat or liquid during the cooking

process.

You can alter recipes, change the way you

prepare foods and alter your cooking

methods to reduce the amount of fat in the

foods you prepare. My family does use these

methods and they do work!

Goodbye Yesterday…………

Hello Tomorrow

Fifteen plus years ago I assumed the position as Director of the Clubhouse of Lehigh County.

I had a vision, a belief, and an enthusiastic eagerness to build our house to become the very

best. What I never envisioned was that at some point my role as Director would end. I just

could never imagine myself facing retirement. However, time is a sneaky thing and creeps up

on you when you aren’t looking.

So I find myself writing my last article for our newsletter and struggling to determine exactly

how I feel. I am filled with so many emotions. Retirement is both a happy and a somewhat

sad time. It is both a time to reminisce and a time to look ahead.

I leave behind the work I have dedicated my life to over the years and the many individuals

who have touched my life in the process. My hope is that some of that work and some of the

lives I have touched will consider themselves a bit better for having intersected.

I know that my career has fulfilled me in many ways, and I am grateful for having been given

the opportunity to serve. There are many people I have met along the way,….. colleagues and

coworkers, advisory members, fellow directors and hundreds of other human service workers

who endeavor to support their clients throughout the county. I have learned from them, shared

both good and bad times and hopefully we have made a difference.

But most of all, I thank the members of Clubhouse of Lehigh County

whose journeys have inspired me.

Your ability to persist, to survive, to excel and to conquer against all

odds have long left me in awe. I admire you. I thank you and I love

you all. You will be missed but never forgotten.

HEALTH AND WELLNESS UNIT

(First Floor): Members have been busy the month of May! Get the

Scoop was a wonderful day and we are thankful that

the weather decided to cooperate with us and not

rain! The ice cream was delicious and the members

were spirited as they distributed information about

Mental Health. The snack bar had been wonderful,

healthy choices for us to enjoy and our lunches have

been “ oh, so tasty” Ken continues to lead us in

Body & Soul and the members continue to enjoy it!

Spring has sprung, and is on the run, as summer tries

to blow in. We are decorating for Memorial Day and

planning our picnic. Please come and join us on

Memorial Day so we can celebrate together.

SERVICES UNIT (Second Floor):

As we continue to move forward, we are enjoying

the camaraderie that has developed over he last

few months. Our members have been supportive

and enthusiastically involved in coming up with

new ideas and new projects. We are pleased to

announce that Troy S has donated some

artwork, along with his bio about the piece, as

reported by Mike S. This artwork is on our Wall

of Creativity. As we write this article, our

Service Unit logo is being created by Glenn, and

we are excited to see his vision of the unit. Our

new Service Unit Mission Statement is “ We are

a unit that supports, teaches and strives to

transition our members into achieving their

vocational and educational potential.” This

coming month’s project has been updating our

Orientation power point. Things are moving

along and we have been meeting with our new

members to update and revise that power point. It

will be exciting to see that new power point. We

are moving onwards and upwards.

STANDARD OF THE MONTH The International Standards for Clubhouse Programs,

consensually agreed upon by the Worldwide Clubhouse

Community, define the Clubhouse Model of Rehabilitation.

The Standards also serve as a “bill of rights” for members and a code

of ethics for staff, board, and administrators.

The Standards insist that a Clubhouse is a place that offers

respect and opportunity to its members.

What Does It Mean? We contact members that we don’t see on a regular basis to let them know we are thinking

of them, and that they have a place to come where they are welcomed and expected.

To compete for prize money:

Weigh in weekly by Friday of each week. You

weigh yourself, on the same scale each week.

Contribute $1.00 due at time of weigh in-

pounds lost or gained will be recorded.

The Benefits of Aloe By Susan A

Aloe is becoming a common word in the American home. It is used for cuts,

sunburn and regular household burns. It can be used in beauty products and

skincare. As a healer aloe vera can be consumed internally or smoothed on

externally. From a plant, it can be grown as a houseplant by almost every

green-thumber. Easy to cultivate it grows quickly in regular light on the window

ledge. Aloe is also an anti-inflammatory. It has nutrient properties and vitamins

as well as minerals. Thought of as a growing hormone and healing agent, aloe

generates new layers of skin. It’s moisturizing effect penetrates deep and has

youth preserving effects. Just break off a shoot and skin it. Applying the

moisture-filled inner layers to the skin you exfoliate, soothe and condition the

epidermis. In history the Egyptians donned it “flora of immortality”. It’s

hydrating ability has been used for centuries. So, the next time you have a cut or

burn, turn to aloe vera as the remedy and you will be glad you did.

Recycling

The Allentown Recycling Drop Off Center is

open to everyone! The Allentown Recycling

Center is located on Martin Luther King Jr. Dr.

next to the 15th Street Bridge (Below the YMCA).

You do not have to be an Allentown resident to use

the facility. The center is open to businesses and

residents everywhere everyday. Paper is accepted

for shredding Monday-Friday 8am-4pm. Allentown

residents can recycle TVs and electronics FREE

every 1st and 3rd Saturdays from April-Nov. from

9am-12pm at the Allentown Yard Waste Site,

located at: 1401 Oxford Dr. (Oxford Dr. and Fish

Hatchery Rd.)

Get your Clubhouse T-Shirt

NOW We are now selling Clubhouse T-shirts with the Clubhouse logo on them in the upper left hand chest area. The shirts will come in charcoal grey in sizes small through 5X and the cost for sizes S, through XL is $6 per shirt. The 2X through 5X will cost $8 each. See a staff person to place order. The money must accompany the order. To get these prices we need to order at least 100 shirts at once, so please order as soon as possible. We are hoping to have orders at least approaching 100 by the end of April so we can confidently place the order and not have too many random sizes left. Thank you for your cooperation!
