CÉMOI ATTENDS SIRHA IN LYON FOR THE FIRST TIME
CÉMOI will unveil its international product offer and innovative chocolate creations at this worldwide hospitality and food service trade
exhibition
The CÉMOI Group will attend its first SIRHA exhibition from January 21st
to 25th in Lyon (hall 4, booth 4F02). Its goal is to strengthen its position in
the food service market and promote its Made in France chocolate-
making expertise internationally.
Putting Quality and Creativity to Work for Professionals This third-generation family-owned Group crafts specific products for
food service professionals and artisans, allowing them to create
chocolate products infused with CÉMOI’s quality and creativity. CÉMOI is
part of so many indulgent moments with ready-to-use products made for countertop displays,
vending machines, coffee breaks, and more. It also provides ingredients that allow professionals to
unleash their creativity, such as couverture chocolate, cocoa paste, decorative chocolate and
fillings.
New Products to Explore CÉMOI will use this important event to internationally launch two new Gourmet ranges for
professionals creating chocolate recipes in hotels, restaurants, confectioneries, bakeries, pastry
shops, etc.
CÉMOI will also offer pastry-making demonstrations each day for exhibition visitors. They will be
led by Franck Michel, Meilleur Ouvrier de France in Pastry and Pastry World Champion; and by
Kivanç Kaymak, pastry chef and CÉMOI technical advisor, who is making a special trip from the
United States for this event.
The new ready-to-use products for the food service industry will be highlighted on the booth, with
innovations tailor-made for countertop displays, vending machines, coffee breaks, and more.
Among these new products, there will be the Authentique Petit Ourson Guimauve and the
essential Quadro Pocket, products sure to make a splash in original shapes for new moments of
indulgence.

The Gourmet Empreinte Range: an intense flavour signature
The “Empreinte” range offers professionals a collection of high-end products composed of 3 cocoa pastes and 3 pure origin dark couverture chocolates.
These products are made with 100% Sélection Cacao Frais and have a very unique flavour profile that reflects their geographic origin: Dominican Republic, Cote d’Ivoire or Ecuador. The quality of their recipes is endorsed by the most well-known pastry Chefs.
The “Empreinte” range is presented in dark, sober and elegant packaging, highlighting the high-quality nature of these products.
This range meets the needs of the most exacting professionals. The chocolate is presented in 2.5 kg fully-hermetic resealable bags that optimally preserve the rheology and flavour profile of these products.
Sélection Cacao Frais—enhanced by CÉMOI’s exceptional control over the fermentation and drying processes Fermentation—a key stage for CÉMOI—brings out the beans’ richest flavours. The Sélection Cacao Frais beans are carefully chosen by the producer partners. They are delivered fresh to CÉMOI centres on the same day they are shelled. The cocoa is then fermented on location by CÉMOI experts.

The Gourmet Succession Range: A historical expertise
The “Succession” range offers professionals the possibility to create recipes with couverture chocolate crafted according to 200 years of chocolate-making tradition. The brand offers a large selection of couverture chocolates, from 72% dark to white! The Succession range offers a total of 8 couverture chocolates:
5 dark couverture chocolates, from 72% to 50% cocoa
2 alpine milk couverture chocolates: 1 dark chocolate and 1 light chocolate
1 white alpine milk chocolate These chocolate buttons easily melt for a smooth texture, which is ideal for all uses. Each variety of “Succession” couverture chocolates is represented by a unique colour, making it easier to identify the different recipes. Similar to the “Empreinte” range, the “Succession” range is presented in fresh packs that are 100% hermetic and resealable to better preserve the flavours and rheology. “Succession” couverture chocolates are available in 5 kg bags in matt packaging that brings to mind traditional kraft paper bags, a reference to CÉMOI’s historical chocolate-making expertise.
