Know Your Local Producers

The magic of Sweet Mama Janisse has touched many aspects of the food world. Marie Wilkins, also known as Sweet Mama Janisse, was taught the art and discipline of cooking by her Louisiana grandmother, and she has been preparing food since the age of seven. Marie’s gift with food and her Creole touch with seasoning is her grandmother’s legacy. Her medal winning sauces have been used to season what she calls real good cooking, southern style, using ingredients on hand and using her sauces to make a unique meal. Soul Q Sauce, Soy Gin Sauce, Chili Pepper Paste and Sticky Love Sauce are sure to add flavor your cooking adventures. See pages 5 and 6 for sale items.

Classic Corned Beef and Cabbage • Courtesy of Onion River Co-opIngredients• corned beef brisket (2 lbs)• bay leaf• black pepper (to taste)• red potatoes (quartered)• carrots (sliced into 1/4” rounds)• 1 head green cabbage, cored and wedged

Preparation Rinse brisket to remove the surface brine. Place in a large pot and add water to cover. Add bay leaf and freshly ground black pepper. Simmer, covered, until a fork can easily slide into the center, about 3 hours. In the last 30 minutes of cooking, add potatoes and carrots. Allow to cook 10 minutes, then add cabbage. Cook another 15-20 minutes, until cabbage is tender. To serve, slice meat and place on serving platter. Remove vegetables with a slotted spoon and add to serving platter.
