FROM THE COFFEE COLLECTION These coffees are just a couple of many that we have purchased from the Mierisch family over the years. They have an unequalled commitment to quality and are constantly striving to improve their farms and coffees through both variety and processing experiments. It is safe to say that they are running an experimental coffee lab on nearly all of their farms and processing mills. This commitment has produced outstanding results and these “Java-Nica” and “Yellow Pacamara” varieties from the Limoncillo farm are the fruits of this labor. Truly a nature lover’s paradise, Limoncillo is a model of sustainability for a coffee farm. Heavy forest provides shade for coffee and habitat for numerous species of birds, animals, and insects while receiving an annual rainfall of about 150 inches. The farm was given its name from an unusual growth of lemon trees that was originally found there. PROCESSING NOTES The “Yellow Pacamara” cultivar is a natural mutation of the red fruit variety that is found on the farm. The fruits were separated and seed stock was taken and this year is really the first year of there being a viable harvest of this coffee. These giant beans are striking in both appearance and cup profile. In it you will find flavors of pineapple and mango. The tropical fruit quality is unmistakable and the finish will remind you of a fine aged dark rum. This is a fully washed coffee. The “Java Nica” cultivar is a special heirloom variety that gained notoriety when it took second place in the 2008 Nicaragua Cup of Excellence. This particular variety is of “typica” decent and its roots can be traced back to the origins of coffee in Eastern Africa. This lot was harvested over the course of three days and is considered a “pulp natural” or semi-washed coffee. This particular process leaves more mucilage on the parchment when it dries, and creates a fruitier cup profile. That process combines with the flavors of this variety to create yet another truly unique cup profile. Both floral and fruity, this cup is clean and satisfying. It has striking aromatics of strawberry and jasmine, yet is a mild and sweet cup. Once again both of these offerings are great examples of how a producer can use deliberate choices like process and variety to have a significant impact on cup quality and profile. Enjoy!
