Wednesday October 2009 Fall Traditions & Missed Opportunities By Cheryl Davis, Director of Ministry Outreach - MOPS International I love the fall season! I love the leaves, I love the smells and I love the change in temperature. Each year, my kids and I go out and pick colorful leaves to create fall wreaths. We have done this for years. We carefully stick each leaf to paper plate circle. Each wreath has a different look. Some years are very lopsided, others very precise. The day we planned to pick the leaves this fall got too full of other things - breakfast with my sister and early Christmas shopping, taking a nap, and watching football. That night, as I heard the rain pouring down outside my window , I remembered that we hadn’t gotten around to picking leaves. My heart sank. I knew what the rain was doing to those precious trees and their colorful but fragile leaves. The next morning, while driving around town I could see the bare trees. No longer were they orange and gold capped. How had I let the experience of picking leaves with my children pass? Why did I put other things like coffee and shopping ahead of this special time we shared? I had taken our tradition for granted, and hadn’t made it a priority. Sometimes I think we may treat prayer like it’s a tradition that is always there. We forget to make it a priority on our calendar, and we expect it to just happen. Like my forgotten fall leaf tra- dition, prayer can be something we forget until the rain comes. God wants our relationship with him to be constant and grow- ing, rather than full of the regret of missed opportunities. He desires us to be in constant communication with him. “Pray without ceasing” is Paul’s instruction in 1 Thessalonians 5:17. Pumpkin RecipesBeyond Jack-O-Lanterns...

The Perfect Pumpkin Pie16 oz can pumpkin14 oz can sweetened condensed milk2 eggs1 t cinnamon1/4 t ginger1/4 t nutmeg1/2 t saltPreheat oven to 425 degrees and bake for 15 minutes.Reduce oven to 350 degrees and bake 35 to 40 minutesmore.

Pumpkin Pie Topping4 graham crackers, crushed2 T butter, melted1/4 cup brown sugar2 T flour1 t cinnamon1/2 cup walnut piecesDash saltMix all ingredients and sprinkle on top of pie for final10 minutes of baking.

Pumpkin CheesecakeMix ingredients below for crust. Press into bottom of 10 inch spring form pan and freeze for 15 minutes.3/4 cup graham crackers, crushed1/2 stick butter, melted1/2 cup chopped pecans1/4 cup packed dark brown sugar1/4 cup white sugarWhisk together the ingredients below for the pumpkinfilling, then set aside.1 cup pumpkin

3 eggs1 1/2 t cinnamon1/2 t nutmeg1/2 t ginger1/2 t salt3/4 cup sugarWith an electric mixer, cream in a large bowl: 1 1/2lbs cream cheese. 1/4 cup sugar + 2 T sugar. Add 2 Theavy cream, 1 t vanilla, and 1 T cornstarch. Beatin pumpkin filling. Pour into crust. Bake 45 minutes.Garnish as desired, after cooling on a rack and chilling

for 8 to 12 hours.

Double Layer Pumpkin PieMix 4 oz softened cream cheese, 1 T milk, and 1 Tsugar with a wire whisk until smooth. Gently stir in 1

1/2 cups thawed whipped topping.Spread onto the bottom of 1 prepared graham crackercrust (6 oz).In a large bowl, mix together:1 cup cold milk16 oz can pumpkin2 packages vanilla flavor instant pudding & pie filling1 t cinnamon1/2 t ginger1/2 t clovesBeat with a wire whisk (mixture will be thick).Spread over cream cheese layer.Refrigerate 4 hours until set. Garnish as desire.Refrigerate leftovers.

Pumpkin CakeReserve 1 cup from 1 package of yellow cake mix.Combine remaining mix with 1/2 cup slightly softenedbutter and 1 egg. Using a spatula or long woodenspoon, press in a 13x9 cake pan (or 2 smaller ones).

In a bowl, combine:1 15 oz can pumpkin

1 cup sugar1/2 cup brown sugar1/2 t salt1/4 t nutmeg3 eggs1 cup milk2 t cinnamonPour evenly over cake mix.

In separate bowl, prepare topping:1 cup reserved cake mix1/2 cup sugar

1 t cinnamon1/4 cup slightly softened butter1 cup chopped walnuts or pecans (optional)Mix until crumbly and sprinkle evenly on top of cake.Bake for 40-50 minutes at 350 degrees. Garnish withwhipped topping, if desired. Refrigerate leftovers.
