Comfort food: Britons stick to just fourrecipes at home

Research shows that most people in Britainregularly cook just 4.1 dishes. This is affectingBritain’s growing reputation as a nation of peoplewho know a lot about and enjoy cooking.

An increasing number look for exotic flavourswhen eating out, but at home a combination oflack of time and lack of confidence means thatBritons tend to stick to what they know.

One of the most popular dishes, spaghettibolognese, is cooked at least twice a week by 6.1million nationwide. The dish is servedapproximately 670 million times a year across theUK.

Although men often boast that they produce thebest chefs, the average male appears to be muchless adventurous. A survey by YouGov found thatmost male cooks had a range of just 3.5 dishescompared to 4.5 for women. Young adults aged25 to 34 are the most adventurous, with almostfive recipes each. Those aged between 45 and 54cooked just 3.2 dishes regularly.

Despite the increasing number of cookeryprogrammes on television, the research foundmany people were unwilling to experiment in thekitchen.

Two in three claimed to be very interested in newideas but rarely put them into action. Almost 40per cent of people blamed time pressures, but onein five admitted they just did not have theconfidence to be more adventurous with theircooking.

The researchers found that about 20 million platesof pasta are eaten in the UK every week. Atraditional roast remained in the top favouritedishes, with 10.25 million plates eaten each week.

Traditional British favourites such as fish andchips remain among the top 10, but they are nowreplaced by stir-fries - the eastern dish is eaten by7.59 million Britons each week.

Almost a third of people said that 10 years agothey cooked more traditional dishes. The Scottishwere the most progressive - 39 per cent said theycook more exotic dishes than before, while cooksin southern England were most loyal to oldfavourites.

"It seems that a combination of time pressure andfear of failure is limiting our culinary range, particularly on weekdays," a televisionbroadcaster said.

"The best way to start is to take a differentingredient and add it to an old favourite. I alwayshave a number of ingredients ready in my kitchenjust for this purpose; they include lemons, limesand dried chillies." And he added: "For example, ifyou’re going to cook a chicken breast, cover itwith pancetta and add rosemary for extra flavour;it’s a simple way to give the dish a twist."

"Cooking with more variety on a daily basisdoesn’t have to be time-consuming or risky."
