As always, safety remains a top priority in the window coverings industry . Fried-land supplies schools with custom-sized blackout roller shades to cover exterior, interior and classroom door windows . Shades can be made as small as nine inches wide to accommodate even the smallest window . During an emergency it is important that visibility into the school building and classrooms can be blocked .

Gus turned 12 years old at the end of May . Two months before, he started planning for his birthday party . With-out me even men-tioning it, he began inviting people to his cookout . As usual, he invited everyone! He asked everyone he met, “You comin’ to my cookout?” Thank goodness he didn’t give the exact date or our address because he asked everyone at school, everyone at church and of course ev-eryone he met, (including strang-ers) everywhere he went . If it were up to Gus, he would have all of Surry County and half of Wilkes County at his birth-day party .

I asked Gus a few times what he want-ed for his birthday . Usually he would say birthday cake . He wanted a choco-late cake with choc-olate icing . This was a big change from just a couple years ago . Until Gus was nine or ten years old, he didn’t ask for anything specific for his birthday or Christmas. This year he got more specific. He never asked me for a truck but anytime he saw a red, Peterbilt on the road he would say, “That’s what I get for my birthday, a big, red, Peterbilt .” I have to admit, Gus has me trained . Anytime I went somewhere that sells toys, usually a farm store, I looked for a red Peterbilt . I ended up order-ing one on the Internet . To keep him from seeing it, I had it shipped to Ron and Roxie . I asked Roxie to wrap it for me and bring it to the party . When they showed up with a big box, Gus had no doubt what was in the box . It was all I could do to get him to eat his hot dog before he ripped into the box . We told Gus it was from me and his father, but to this day he thinks Ron and Roxie gave him the big, red Peterbilt . Of course Gus got lots of other presents: a bubble gun, a water gun, red clothes, a tractor book, and

continued from page 3GUSa Surry Central shirt to match his big brother Brandon .

I made the mistake of telling my sister that Gus loves cards that make noise . So what does she do? She stopped on the way to the party and bought every noisy card the store had . Since she brought a carload of folks, everyone picked out a card and signed it . Gus en-joyed opening all those noisy cards . He still walks around the house laughing with one of those cards in his hand .

I wrote an article recently about Gus riding a tricycle at school . I was hoping Gus would get one for his birthday but our request for a tricycle was denied through his ser-vices . The PT at school told me to bring the tricycle home from school for the summer . I made sure she understood it might not survive the summer at our house . The day be-fore Gus got out of school, he got in trouble with it . Two girls from the sixth grade came to get Gus after lunch so the class could sign his yearbook . The teacher told Gus he could ride his tricycle since he had such a good day . They headed to the sixth grade class and a few minutes later the teacher got a phone call . It was the assistant principal asking, “Do you know where Gus is?” Turns out she was watching the school monitors and Gus was making laps in the hallways around the school and the two girls couldn’t catch him . Gus made four laps around the school before he made a turn to go to class . Gus and the teacher both got in trouble for that adventure . The tricycle came home with us that evening but Gus didn’t get to ride it since he got in trouble with it earlier . It is a favorite past time now, he has ridden it everyday since we brought it home .

visit with the exhibitors . Without their support we could not provide the successful conventions we are accustomed to . The money we make from our con-ventions each year keeps us going financially and we need the continued strong support we’ve had in the past from our exhibitors . Door prizes will be awarded during exhibitor visitation on September 24 from 2-5 pm and September 25 from 8-10 am . You must be present to win, so plan on visiting with the exhibitors .

There will be 27 workshops offered this year including workshops for continuing education credits . There will be renewal credit hours classes for Wastewater (6), Pesticide Ornamental (4), Pesticide Structural (4), Locksmith (6) and Electrical (8) . Many sched-uled workshops should prove to be of interest to all maintenance personnel as well as public school ad-ministrators . Widely known professionals with years of experience will conduct workshops and programs . Please see the tentative agenda in this issue of The Maintenance Beacon for more details .

While on vacation I had a Southwestern Salad at Fancy Gap Deli in Fancy Gap, VA . I really liked it so I had to try and make it at home . It turned out great . Theirs was served with Southwestern Ranch Dress-ing but I made a honey lime dressing using a recipe from All Recipes . It is very light and refreshing for these hot days .

Southwestern Salad

Ingredients2 Chicken Breasts EVOO to rub on chickenPack of El Paso Fajita Seasoning Red pepper Can of black beans 2 Ears of corn Cheese (however much you want) Leaf lettuce Tortilla chips

Dressing Ingredients1/4 cup fresh lime juice1/4 cup EVOO2 tablespoons honey 2 tablespoons chopped fresh cilantro 1 garlic clove, peeled and chopped1 teaspoon chopped jalapeño pepper

DirectionsMix dressing ingredients together well and set aside . Rinse and pat chicken dry . Rub on olive oil . Sprinkle both sides of chicken with fajita seasoning (reserv-ing some of the seasoning) . Place chicken on lightly greased baking sheet . Preheat oven to 400 degrees . Cook chicken in preheated oven for 15 minutes on one side and flip and cook 10 more minutes. The breasts I had were large so I cooked 15 on each side .

While chicken cooks; shuck, clean and grill corn (or use canned corn) .Cut it off the cob and place in bowl . Chop red pep-per and add to bowl . Rinse and drain black beans and add to bowl . Stir in reserved fajita seasoning . Shred cheese and set aside . When chicken is done, remove from oven, cover lightly with foil and let rest for 5-10 minutes and then slice .

Place lettuce on plate and top with corn, bean and pepper mixture . Add chicken and put cheese on top of chicken (the remaining heat from the chicken will melt it slightly) . Serve with dressing and tortilla chips .

Makes four servings . Enjoy!
