I put it down to stress,’’ he says. ‘‘You have the cameras, the contestants looking at you, and you know 1.5 million viewers are going to watch you. Sometimes I can’t find the words.’’ My Kitchen Rules has turned his fortunes around. He has a hit TV show, an acclaimed rest- aurant, a new tapas-style eatery and a just-released cook book.
