Teppanyaki-style cooking and grilling has quickly become a must-have for every home chef's kitchen, indoors or out, traditional or contemporary design. Cook-NDine shares opinions of home-owners and design professionals on their Outdoor Cooking Spaces. If you love to socialize, cook and eat, all in the same place, particularly outdoors, and you are a believer in quality of life, we recommend investing in a welcoming retreat at home, thus in happiness. Linda Ashom of Quail Creek, FL, has built an outdoor oasis that is nearly as large as the house itself. Cook-N-Dine's Teppanyaki-Style Grill "We entertain three or four times a week. People are always driving by on golf carts, yelling 'What's for dinner?'" she says. Linda built a bar big enough to prepare and serve food, and to seat 12 people. "Now I can do dinner outside in a snap." Her kitchen has all the ingredients of a serious cook's kitchen, graced by Brazilian Ipe Wood cabinets and Marble countertops. Strategically located at the end of the bar she placed a round, 27 inch built-in CDS Teppanyaki grill. "The teppanyaki flat top contact grill allows everyone to be involved in the cooking process," she explains.

“In Jamaica, it's done over a smoking 55 gallon drum. In Vietnam, t's done over a dimi-nutive charcoal contraption. And, in America, it's done atop a stainless steel gas grill with electronic ignition, halogen lights, sideburners and a rotisserie. It's a true testament to our indoor-outdoor way of life that, these days, some outdoor kitchens are better equipped than their indoor counterparts."

"Most people do a 30-inch grill, an outdoor fridge, a burner and a sink," says Zury Jaeger, owner of Dreamscapes by Zury in Plantation, Florida. "How we arrange things varies according to their needs, but I usually suggest installing the grill in an island so the cook can have a view and look out at people, not against the wall." In Naples, Vincent Schiro was driven to his dual-Tiki outdoor kitchen design by different thoughts. "For me this is MY kitchen, where I can rule independently." he says. "I spent about one year planning it and got hooked on the CDS Teppanyaki grill. I also ordered a stainless steel barbeque grill. The teppanyaki was installed first and after I had cooked a few times I quickly realized that the BBQ grill hasbecome obsolete and I cancelled it. Everything I like can be cooked on the teppan griddle. Besides steaks and breakfast my favorite is fried rice. For me the built-in CDS teppanyaki grill is the best thing since sliced bread." Even if covered outdoor kitchens are impacted by the elements, so materials must be extra durable. Good choices include stainless steel, granite and stone veneer. by failing to provide enough coun-

ter space for food preparation, stor-

age, and serving. A prime example is

when there is no space between a side

burner and the grill. Here comes one

spouse with a tray of food ready to be

cooked, but the spot next to the grill

is taken up by a pot for boiling corn

on the cob. Likewise, when delicious

morsels are being taken off the grill,

where will the serving platter go? And

when the pot needs to be moved off

the side burner, is there room to scoot

it over? Think it all through. Your cli-

ents will love you for it.

Lighting the Kitchen

Because decks so often get used at

night, lighting an outdoor kitchen is

as important as lighting an indoor one

(Figure 5 ). In addition to the regular

railing and step lighting, it’s good to

add hanging fixtures for soft down

lighting on the countertop. To be able

to see what’s cooking, add directional

spotlights to brightly light the barbe-

cue. A switch will be needed to turn off

the spots when not in use. Hanging

lights will need to attach to an over-

head structure. These lights are usually

low voltage and run off the same trans-

former as the rest of the deck lighting.

Finally, make sure the deck is able

to support the added weight of the

kitchen (Figure 6). You’ll need to cal-

culate the weight the appliances and

cabinets will add and check that the

existing joists can handle the addi-

tional load. ?

In Jamaica, it’s done over a smoking 55-gallon drum. In Vietnam, it’s done over a diminutive charcoal contraption. And, in Florida, it’s done atop a $6,000 stainless steel gas grill with electronic ignition, halogenlights, side-burners and a rotisserie. Outdoor entertaining in the Sunshine State is becoming an ever more elaborate affair, replete with luxuries like weatherproof entertainment systems and everyimaginable appliance adapted for outdoor use. It’s a true testament to Florida’s indoor-outdoor way of life that, these days, some outdoor kitchens are better-equipped (and more expensive) than their indoor counterparts. We called on cutting-edge outdoor design professionals to put together this guide to creating the outdoor kitchen of your dreams.

HAVE A PLANAs with indoor kitchens, an efficient layout is everything: All the expensive equipment in the world will be for naught if you’re constantly having to lug hot, dripping pots from one end of the kitchen to the other. Depending on your space and equipment, a linear design, an L-shape or a U-shape may work best, but be sure to locate the sink, cooking surface and fridge within easy reach of one another.“Most people do a 30-inch grill, an outdoor fridge, a burner and a sink,” says Zury Jaeger, owner of Dreamscapes by Zury in Plantation. “How we arrange things varies according to their needs, but I usuallysuggest putting the grill on an island, not against the wall, so they can look out at the view. And if you’re going to have a burner, it’s more useful to put it on the right side of the grill.”One relatively simple design option is a prefabricated, customizable grill island, which can be hooked up in as little as a day (Cal Spas’ “Ultimate Series” islands can include everything from a blender stationto a fireplace to a pop-up TV). But even if you’re just plopping a portable grill out on the patio, it’s agood idea to include some sort of work surface, like a rolling prep cart (Viking’s version comes with filtered running water and an ice bin). There are lots of foods that benefit from beingprepared on a flattop grill. While this

mayhave Japanese food at the heart of its design,the reality is can be prepared withease and delicious results.

I have in mind one particular street food ofwhich I happen to be fond: the bacon-wrappedhot dog. Hot dog carts selling these tubes ofpork delight have been gaining in popularity inrecent years. (I first remember seeing them in Mexico many years ago, but that's a different story.)

However, creating the ultimate form of the hot dog as it was meant tobe enjoyed is not as easy as it looks.
