For the RiceLong grain Basmati Rice 2 cupsBay leaf 2Cloves 3 4Black peppercorn 3 4Cinnamon piece 1 inchSalt to taste
For the VegetablesYogurt 1 cupMix vegetables ( I used a mix of carrot, beans, peas and potato ) 2 cupsWater 1/4 cupSalt to tasteTurmeric powder 1/2 tspGhee 3 tbspsShahi Zeera 1/2 tspOnion 1 cupGinger garlic green chile paste 2 tspsGaram masala powder 1/2 tsp
STEPS
1. For the Rice
2. Wash the rice and soak in enough water for 30 minutes.
3. Drain the water.
4. Add rice, bay leaf, cloves, black peppercorns, cinnamon and salt in a pan.
5. Add 4 cups of water and cover and cook on low heat till rice is 80 % done.
6. For the Vegetables
7. Heat 1 cup water in a pan.
8. Add salt and turmeric powder and the vegetables.
9. Cover and cook on low heat till vegetables are slightly done and the water is evaporated.
10. Heat ghee in a pan.

11. Add shahi zeera and let it crackle for a few seconds.
12. Add onion and fry till it turns transparent.
13. Add ginger garlic green chilli paste, garam masala, salt and cook for 34 minutes.
14. Add whisked yogurt and cook for another 34 minutes.
15. Add boiled vegetables and cook for another 34 minutes.
16. Assembly
17. Transfer half of the rice in a heavy bottom pan.
18. Top with the vegetable mixture.
19. Cover with the remaining rive.
20. Pour the liquid left from the vegetables over the top of the rice.
21. Cover the pan tightly and cook the pulao on very low heat for 1012 minutes.
22. Remove the pan from heat and let the pulao rest for 5 minutes.
23. Fluff the pulao gently with a fork.
24. Serve hot with Raita.
