They are beads of ice cream frozen in liquid nitrogen to form little balls. There are 10 different flavours: Rainbow Ice, Cookies ‘n’ Cream, Fairy Floss, Bubble Gum, Mango Sorbet, Raspberry Ice, Fudge Nut Crunch, Strawberry Lemonade, Strawberry and Caramel Brownie. Between the two Ekka stores, they anticipate selling 50kg-60kg of ice-cream each day. Dippin’ Dots were first made by Curt Jones, a microbiologist in Kentucky USA 1987.
