Carlisle Bay The beach at Carlisle Bay is one of the island's most perfect examples:

a 500m-long crescent beach of impeccably clean white sand within a secluded bay. This means the water remains calm, while the rainforest and coconut grove behind provide further shelter. One end of the beach is reserved for the Beach Suites favored by families, the far end for couples and adults. This is also where you will find Gwendolyn who runs a stall selling local goods near the Jetty Bar.

At Carlisle Bay, our secluded, turquoise pool is located behind the beach. CARIBBEAN COOKING Every Tuesday morning our Executive Chef, Christophe Blatz,

and his award-winning chefs, Burdette “Eggs” Martin and Mark Smith, lead hands-on cooking classes (limited to 10 people or less). Explaining such culinary creations as lobster risotto or red snapper on a bed of local vegetables in a light reduction broth, the classes cost $US 70 and include lunch and a specially selected bottle of wine from our cellar.

WINE Curtain Bluff has one of the finest wine cellars in the

Caribbean, with over 25,000 bottles priced between $US 40 and $US 2,000. Over the past year we have expanded our subterranean cellar and added a tasting area so guests can enjoy the wines in context. Tastings take place in the cellar on Friday afternoons ($US 70 per person).
