Dark Chocolate Chip Cookies Makes 2 dozen cookies 1 cup cold butter, cut up into small cubes ½ cup white sugar 1 cup light brown sugar 2 large eggs ½ cup unsweetened dark cocoa powder 1 cup cake flour 1 ½ cup flour 1 t. cornstarch ¾ t. baking soda ½ t. salt 1 ½ cup semi sweet dark chocolate chips Directions -Preheat oven between 400 - 425 degrees F. Cream together butter and sugars on high until light and fluffy. Add eggs one at a time, mixing well. Add cocoa, flours, cornstarch, baking soda and salt. Mix in on slow speed until all ingredients are combined. Dough should be mixed well until smooth and even in color, but not overmixed. Add chocolate chips and mix by hand…if you let the mixer mix them they get broken up a bit… “Little man” was in a hurry to ADD all the ingredients and ours were mixed with the mixer…so you do not see them in the photos…certainly not detrimental to the taste of the cookies. Chill dough for at least 15 min. We made 2 dozen cookies using the large cookie scoop. Use silicone baking mats for best results in baking these cookies. Bake cookies between 8-10 min. The surface of them will look dry, but the inside will be chewy and gooey… Remove cookies from oven and let them cool on the baking sheets. Allow 20 minutes to cool so they can set.
