1Have you ever heard that no two snowfl akes have the same shape? It’s likely true because of the complex process of crystals forming and attaching as it falls toward the ground.

2 Snowfl akes start as ice crystals that are the size of a speck of dust. When the crystals fall, they join up with other crystals to form a snowfl ake. The size of the snowfl ake depends on how many crystals

3Snowfl akes usually have six sides and the crystals form in different but defi ned shapes, such as: irregular columns, A Neddles, hexagonal plates, stellar plates, spatial dendrites, capped columns

and hexagonal plates.

4 Because snow is frozen water, if there are not enough water droplets in the air it can’t snow.

5 It snows when water is lifted into the sky from rivers, lakes and oceans as water vapour. You cannot see water vapour but it is there. There is enough in the air to cover the earth with three feet of water.

The warmer the air, the more water vapour there is.

6 You can make your own cloud by breathing in cold weather. Or, try breathing on a mirror; there will be a clear gray cloud on it.

7 For it to snow, the tops of the clouds must be below 0 degrees Celsius, or 32 degrees Fahrenheit.

8 Snow can come from any cloud that is layered.

g above the clouds

Ladyfi ngers don’t fi t well into a champagne fl ute, baker Sheldon Molitor says as he starts to explain the engineering feat needed to craft a dessert for the Iron Lady. Rather than wedge one of the delicate biscuits into the glass for his tiramisu creation, he made his own batter then drizzled it in a mesh pattern capable of folding down into the glass.

It was a libertarian baking solution, full of the kind of entrepreneurial, competitive spirit one needs to design the last dish for a Margaret Thatcher visit to Vancouver.

His decision to leave a job in tech support behind to become a top-tier baker, well that’s another story and one he’s kindly willing to tell mid-after-noon after a hard night’s work with the ovens.

“I.T. was lucrative, but it was just constant, constant phone calls and it just drove me crazy,” he says as he recounts one phone call from a customer crawling through the ceiling to fi nd wires chewed by mice and the hour long conversations that would lead to last ditch queries like: Is the computer plugged in?

Molitor’s move to baking was completely unplanned. A relative offered him a job with a friend who ran a bakery and was desperate for staff. It was said to be terrible hours and lousy pay, but he just wanted to work and it turned out to be a life-altering decision.

Since then, he’s worked with the best, he’s taught the best and he’s become so profi cient at turning people off the street into bakers his partner, John Chou, whose background is in telecommunications, now works right along-side him as the talented cake decorator whose cakes keep fl ying out the door

of the Big White Bakery.“He just got better than me in about two days and he had the tenacity to

stick with a detailed project to make it look fantastic,” said Molitor. Mid-season Chou will be pumping out a dozen decorated cakes in a night,

the pair working from 11 p.m. through to the morning when they make their secret manoeuvre—sticking the cinnamon buns in the oven.

Yes, it’s no accident that the Big White Bakery seems to sell itself with wafts of cinnamon goodness fl oating upstairs to the guests. As any good baker knows, timing can be everything and when your cinnamon buns come in four varieties—plain white icing, cream cheese, maple and cream cheese bacon—it’s worth playing to one’s strengths.

Molitor has been a baker for 26 years, Chou for one, but they’ve been together for over a decade and can easily complete each other’s sentences, making for a great partnership in the kitchen.

The best bakery Molitor ever worked for was Van Den Bosch Patisserie Belge, he says.

In fi ve years, owner Marc Tilkin managed to grow the operation from a small shop in Vancouver’s Granville Island Market to an 11-store success sto-ry with a 10,000 square foot plant in Burnaby and a reputation that earned him a British Columbia New Canadian Entrepreneur Award in 1991.

Tilkin later sold the small chain and, rather ironically, went into IT. He was working on bakery software before developing the gluten free product line that’s now his life passion. But if you ask Molitor where he really learned to bake, he will say it was at the original Van Den Bosch Patisserie Belge ovens.

After 26 years in the industry, Big White's top baker says he's glad both he and his partner left the tech world to make bread.

“We did everything for the Radis-son, the Waterfront, the Renais-sance, the Wall Centre and Sheraton. Any hotel in Vancouver that was like four stars or better we were supply-ing all their baked goods. It was an incredible learning curve,” he said.

The specialty was liqueur mousse cakes—then dubbed with highfalu-tin monikers like The Opera, The Mozart and so forth—and included layers of different types of cake and filling all in one dessert.

Yet while Molitor learned to mas-ter these difficult creations, like the Frasier Torte, a poured mousse cake, what he really developed a knack for was the art of getting things done.

This is what he was hired to do at Fratelli’s Bakery on Commercial Drive. When he left the Vancouver establishment, they had six golden plate awards; but the beginning was not so rosy. The brothers behind the operation had little experience and a great big dream. Thankfully, they also had the kind of attitude that would lead to a big win.

Asked why he likes the baking world, Molitor has a simple, realistic answer.

“I like the transportability of the job,” he said. “ You may not make a million dollars, but you’ll always have work. Every little town has a bakery.”

This has proven to be very true at Big White where Chou and Moli-tor live year-round with plenty of time for long holiday sojourns in the summer.

Chou originally handled the front of the house and dealt with computer problems, until Molitor tapped him for his creative talents.

The bakery produces some of the best fresh and healthy food options on the mountain with salads, home-made granola and yogurt parfaits. And don’t forget to try the baguette, a traditional bread made by allowing the flour’s natural yeast to surface.

23Snow cover is part of the cryosphere, which traces its origins to the Greek work kayos for frost. When scientists talk about the cryosphere, they mean the places where water is in its

solid form, frozen into ice or snow. It refers to: snow cover, fl oating ice glaciers, ice caps, ice sheets, seasonally frozen ground and perennially frozen ground (permafrost).

24Snow is a mineral because it is made of frozen water, or ice. A mineral is a naturally occurring homogeneous solid, inorganically formed, with a defi nite chemical composition

and an ordered atomic arrangement.

Nothing goes better with a hot cinnamon bun than a smooth cup of coffee, but don’t ask barista Kim Leonard to grab you a Starbucks.

Originally from Shoalhaven Heads, a small town south of Sydney, Australia, he fell in love with the ski lifestyle right out of school and pro-ceeded to fi nd his niche behind the coffee bar, where he describes his profession as a mix of art and science.

His favourite daily drink is a three-quarter latté and he can rattle off the name in Spanish and Portu-guese, “um pingu.”

“Mainly, when you’re behind the coffee machine, the espresso shot is about trying to get the right extraction, to get the coffee and the caffeine out of the ground bean,” he says.

Leonard talks about coffee the way some of the best skiers and snowboarders talk about snow; he’s serious about it. And coffee can be quite complicated.

In the last town he lived, he was working at sea level and the hardware behind the bar had to be set completely differently from Big White. The boiling point of water drops as you go up in altitude, so the machines need to be calibrated to compensate or they will explode, he said. And then there is the atmo-sphere.

“The humidity (in Australia) could be really severe which re-ally changes everything. You have to

constantly adjust for it,” he said, not-ing he presses his espresso by hand for more control.

By and large, getting a coffee from a top barrister isn’t about ma-chines. Where chain coffee shops will use a pneumatic tamp that

presses the beans exactly the same each time, a trained coffee master learns to feel his or her way through the task, watching the speed of the pour and the amount of foam, or crema, on each shot to fi nd the per-fect balance.

The coffee beans too in a top cof-fee bar aren’t sourced by region, but mixed and blended to fi nd the an exact consistent taste, sometimes by pulling in beans from different con-tinents to achieve the right quality.

As for those complicated coffee drinks one hears people order in line, Leonard says there’s really not much to the mixes at all.

“Once you understand coffee, it’s easy enough to make. The only difference between a latté and a cap-puccino is the amount of foam,” he said.

When he wants to get compli-cated, Leonard talks about ingredi-ents. His latest creation, for example, is a blood orange mocha and it’s got plenty of punch.

First, he takes blood oranges and mixes them with sugar to cre-ate a syrup. From there, he adds a quadruple ristretto shot. (Ristretto, to coffee novices, is a short espresso shot that’s dense, strong in fl avour and high in caffeine.) He then adds foamed milk and fi nishes it off with a drizzle of condensed milk and a mocha made from espresso and bit-ter chocolate.

Behind the bar at Beano Coffee Parlour he’s known to make plenty of Canadiano Mistos, a fi ltered cof-fee and steamed milk creation with a double shot of espresso that’s de-signed to blast away a hangover.

However those potatoes con-geal there’s no denying the velvet soft pillow, both fl uffy and fi lling, is nothing short of scrumptious once bathed in its cream sauce—the unique element of the dish.

“I don’t even know how I came

up with it,” Cecil said from his main restaurant, a double sto-rey, diner-style eatery stationed in Kelowna’s industrial North End.

Dill-infused with an aura of rich salmon dinners, Cecil says his sauce cooks for 30 to 40 hours before his guests start lining up to collect their perogies from his sta-tion on the hill.

Cecil’s Perogies opened on Valentine’s Day 21 years ago and it does boast its own unique love story.

Cecil and his wife, Darlene, run the business, but when the former got the fi rst restaurant underway they had yet to reunite. The pair were married for 15 years, apart for a decade and have been back

together for another perfect dozen years.

around in two and a half hours, and Cecil makes all his own bread every morning, starting at 6 a.m.

They’ll put out between 1700 and 2000 perogies in a day and, work a 12-hour day in the win-ter—seven days a week—but it’s all worth it to them.

“You want to know how I did it? We started from the bottom and worked our way up. If we didn’t have something, we did without,” Cecil explained.

That meant washing dishes by hand. And there were no gas stoves or fancy hoods in the original res-taurant, which sits across from their new Kelowna location.

Today, both the restaurant and the truck Cecil drives to the hill each morning are fully decked out with equipment, and in the truck’s

case, there are those studded tires to make the drive.

“People come in from Calgary, Toronto, they get off the plane and they’re going to Cecil’s Perogies. It’s the fi rst place they come,” says Cecil.

Cecil and Darlene are comfort-able now, golfi ng the summers, the occasional holiday in the mix; but it took years of hard work to get to this point.

“If you’re determined to do something, you have to sacrifi ce,” Cecil said.

A few moments later he adds: “I love my job. I’m never going to stop. I just love it.”

Every child learns to ski in his or her own way and own time, but at Big White Ski and Snowboard School it’s evident there’s a way to make that learning curve much smoother.

One of the new lessons the crew has introduced involves taking an instructor out on a family lesson called Mom and Me Go Skiing (or Dad and me, of course).

“A lot of times, mom and dad want to be able to ski with their

child, but don’t know what to say to their child to help them learn,” said Bill Slaney, assistant ski & board school director.

This can be complicated. Figur-ing out the best way to ask a three or four-year-old to transfer their weight to their right foot is gen-erally to ask them to touch their outside boot, for example, but it’s taken some time for ski schools to develop all the techniques.

Ski instructors can also be

quite helpful in noticing the little things as well. A child might not know where their heel is, for ex-ample, making it diffi cult to un-derstand what “push your heels out” means if a parent or friend unaccustomed to the task is giving teaching a go.

“Lessons are one of the best ways for your child to get a good foundation in the skills and tech-nique needed to become a good skier or snowboarder,” said Slaney,

noting he describes it to parents as similar to teaching a child to drive versus sending him or her to driv-ing school.

“Parents are amazed at what we’re able to get a child to do as opposed to what they’re able to do,” he said. “We’re teaching the most effi cient way to ski, so the child doesn’t pick up any bad hab-its.”

Vintage shops from coast to coast are selling out of gaudy and ill-adorned woollies, thanks to the ugly sweater party phenomenon.

But at Big White, ugly isn’t on the menu. Launching the fi rst Sweater Ball on Big White’s of-fi cial birthday, Saturday, Dec. 7, guests were asked to come up with the perfect knit fi nery for a party that harkened back to a time when

wool pullovers and toques made great all weather wear for a ski bunny.

The event featured a few famil-iar faces as we took a look back at the families who really started the hill.

“We really wanted to honour those families that have been with us since the start,” said Addy Gowe, Big White guest services and event

manager. And what better way to cel-

ebrate than by raising money for one of the most worthy charities in the area, the Kelowna General Hospital Foundation. We don’t know how much we’ve raised yet, but we’re hoping to make giving back to the community a part of our holiday season annually.

For those who missed it, here a few fun facts about Big White:

- downhill skiing got started in the Central Okanagan in the 1920s in Black Mountain, a small community nestled in the grass-lands on the way out of Kelowna (en route to Big White)

- Big White was founded by Doug Mervyn and Cliff Serwa in 1963 with the opening of the main T-bar

- Mervyn and Serwa lob-bied the province to get an access route to their new mountain and Highway 33, the road that leads to the resort, was born

- in 1965, the snow ghosts, our famous snow-encrusted pine trees were discovered (you can fi nd them on the Gem Lake runs)

- by 1968 our fi rst on-moun-tain accommodation went in with skiers treated to a stay just steps from the runs

- the 1970s were a time of ma-jor expansion with the Ridge Double Chair going in in 1971, the Easter Triple Chair in 1976 and the Powder Triple Chair in 1979

- the Schumann Familypurchased the resort in 1985 with a goal of building a world-class resort and expansion took off

- in 1987 Big White held its fi rst snowboard-only event as the family set about adding chairlifts and expanding runs

- by the 1990s Kelowna’s air-port expanded enough to put the mountain on the map for tour-ists from all over North America

anxiety, having a parent come along for the fi rst few rounds of lessons can also alleviate just enough tension to make enjoying the experience and getting hooked on snow more likely.

And Slaney says he understands fi rsthand that every child takes his or her own time to get into the sport. His fi rst daughter—who raced and taught ski school by 15 years old—went out three times in her fi rst year and never made it out of the parking lot as she didn’t like the feel of the boots on her feet. His second daughter, on the other hand, spent the summer she was two years old wearing skis and boots around the house and trying to ski down the stairs. She was out on the hills, skipping the magic carpet, before she was three.

Group lessons are offered for three to four-year-olds, fi ve to sev-

en-year-olds and eight to 12-year-olds, in those age groups.

Slaney also noted that getting the right equipment is as impor-tant as the right teacher. Most reputable ski and board shops now have buy back programs to help with the cost and a good store will have the right staff on hand to help ensure the equipment is fi t right, the edges aren’t too worn and the skis are waxed and ready to go to give every child the right start.

Big White offers a $130 rental program to get kids started with the basics they need—whether boots and a snowboard or skis, poles and ski boots—for the sea-son if they’re riding on a season’s pass.

“Skiing is actually pretty af-fordable compared to many activi-ties and the best part is you get to do it with your kids,” Slaney said.
