The Navigator | Friday, December 22, 2017—Volume 2, Issue 37 Page 3

Ingredients: -1

1/4 cups all-purpose flour

-1/3 cup unsweetened cocoa powder (see note) -1/2 teaspoon baking soda -1 stick plus 3 tablespoons unsalted butter, at room temperature -2/3 cup packed light brown sugar -1/4 cup granulated sugar -1/4 teaspoon fine sea salt -1 teaspoon pure vanilla extract -3/4 cup bittersweet mini chocolate chips Instructions: 1. Sift the flour, cocoa and baking soda together. 2. Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter on medium speed until soft and creamy. Add both sugars, the salt and vanilla extract and beat for 2 minutes more. 3. Turn off the mixer. Pour in the dry ingredients, drape a kitchen towel over the stand mixer to protect yourself and your kitchen from flying flour and pulse the mixer at low speed about 5 times, a second or two each time. Take a peek — if there is still a lot of flour on the surface of the dough, pulse a couple of times more; if not, remove the towel. Continuing at low speed, mix for about 30 seconds more, just until the flour disappears into the dough — for the best texture, work the dough as little as possible once the flour is added, and don't be concerned if the dough looks a little crumbly. Toss in the chocolate pieces and mix only to incorporate. 4. Turn the dough out onto a work surface, gather it togeth-er and divide it in half. Working with one half at a time, shape the dough into logs that are 1 1/2 inches in diameter. Wrap the logs in plastic wrap and refrigerate them for at least 3 hours. (The dough can be refrigerated for up to 3 days or frozen for up to 2 months. If you've frozen the dough, you needn't defrost it before baking — just slice the logs into cookies and bake the cookies 1 minute longer.) 5. Center a rack in the oven and preheat the oven to 325 °F. Line two baking sheets with parchment or silicone mats. 6. Using a sharp thin knife, slice the logs into rounds that are 1/2 inch thick. (The rounds are likely to crack as you're cutting them — don't be concerned, just squeeze the bits back onto each cookie.) Arrange the rounds on the baking sheets, leaving about 1 inch between them. 7. Bake the cookies one sheet at a time for 12 minutes — they won't look done, nor will they be firm, but that's just the way they should be. Transfer the baking sheet to a cooling rack and let the cookies rest until they are only just warm, at which point you can serve them or let them reach room temperature. ORIGINAL NOTE: If measuring by volume, it's important to measure the flour and cocoa lightly, as follows: stir flour briefly in the container or bag, spoon into the measuring

cup until it's heaped above the rim, then level it with a straight-edged knife or spatula. If you dip the measuring cup into the container, you'll have more flour and cocoa and a drier, crumblier, more difficult dough. THE NAVIGATOR’S NOTE: When researching this recipe, I found it posted many places. I chose this version because it seems to be the original version. I would suggest finding this recipe in a few places and reading the reviews/comments to see what alterations people have made. It appears that with the original recipe the dough can be crumbly and the cookies come out flat. Nonetheless, eve-ryone says they taste amazing! Good luck!! Serves: Yields 3 dozen

T hat was the nick-name given to

me by a former co-worker of mine when I first moved to Montrose from Ohio. When I first moved here ten years ago I was the news director at the three-station cluster of what is now Cherry Creek Media. Jim Kerschner was the sports director then and also had his morning show on KUBC. After a nearly two-year battle with renal cancer, it is heartbreaking to say that he passed away last Saturday. There are so many people who knew Jim! He moved to Montrose when he was a teenager and had been here ever since. I am certain that every person who knew Jim has a different story to tell. It is my experience to know him only profes-sionally, but even at work, he clearly had a heart of gold and affected so many in a positive way. Jim never liked to take credit for things he did. He was extremely humble and although he was in the radio limelight, he stepped out of that light whenever he could. I think that is the thing I remember about him the most. In the short time I knew him, I couldn’t count the times he went out of his way to help people. Jim might’ve thought he was just a regular guy, but the truth is, he was leaving footprints on so many people’s hearts along the way. When we come into this world, we begin a new ripple effect. Our ripple chang-es the world—whether we believe it or not. Unfortunately, some people’s ripples have negative effects on the world while other people have an astounding impact on the world. Those in the middle—the “regular” people—also leave ripples that may posi-tively or negatively affect all those around them. It doesn’t take a famous person, a infamous person, or even a hero to leave a legacy. We all leave a piece of us behind when we die. The question is...what are you leaving behind? I would say that as young as our

early teenage years we start wondering about our life’s purpose. This question can follow us into our late adulthood, even. When most people think of leaving a legacy, they think of money or some major world break-through. We all want to believe that the world is a better place because of our existence. Humans are emotional beings. We hope that our lives will forever have meaning, but all too often, we’re left wondering why we feel so alone. If you’ve ever wondered that, then maybe it’s time to rethink your purpose. Aside from obvious material things, when we leave this earth, we also hand down our values, wis-dom, and generosity. Are you living your life passionately and are you sharing your passion with oth-ers? If you find that you aren’t too passion-ate about anything, just make sure you’re living live with passion. Do you spend time with others? Money and gifts are great but nothing can replace time spent together. Do you leave things better than you found them? What better example can you give others than by offering your help whenever you are able? Who influences you? The legacy left to you doesn’t have to be the same leg-acy you leave behind. Some people leave a legacy by asking what the world needs, but we can also leave a legacy by simply embracing our unique selves, both of which require us to immerse ourselves completely into the life we have been given. The legacy we leave behind is a result of the life we lived.

What will be your legacy?
