Hello there.....and welcome to issue 90. Happy birthday to us, happy

birthday to us, happy birthday dear uuuuuuuussss, happy birthdayto us!! Yep, it’s our birthday. Eight years of churning outunparallelled rubbish for you lovely people for absolutely nish ofyour hard earned money. Can’t be bad. The cover this month, bythe way, is a subtle hint to anyone who’s appreciated eight years ofus churning out unparallelled rubbish for absolutely nish of yourhard earned money as to what you can buy us when you see us...

As is customary at this time of year, we’ve consulted the childdevelopment website to find out how we’re doing and I’m pleasedto say we’re spot on, for it doth say normal characteristics are thus:Is busy and active; has frequent accidents; Makes faces, wiggles, clowns; May frequently urinate as a result of anxiety; Has goodappetite, wolfs down food, belches spontaneously - may acceptnew foods; Has improved health with a few short illnesses. Yep,[cough, wheeze] as I said, we’re spot on, although if you’reexpecting us to accept new foods it depends what you mean by‘new’, I mean, I was once served a sliced and sauteed bull’s testiclein Spain; doesn’t mean I ate it. Well, not all of it anyway, they’requite hefty...

Anyhoo... It’s June and the festival season is upon us, but we’renot talking Isle Of Wight, Reading and Leeds or Glasto, in fact,Glasto Schmlasto, no, we’re talking far more exciting than all ofthem put together, we’re talking Purley Festival! South NorwoodArts Festival! Caterham Festival! Bromley Literary Festival! CroydonFolk and Blues Festival! Oh yes, it’s all going on in June - in fact theonly thing that’s missing is the build up to Croydon Summer Festival(don’t get me started). You can find details of all these wondrousevents, and they actually are pretty good (and mostly FREE!), whatare on your very doorstep, in the what’s on pages, and we’ll seeyou at the beer tents of at least two of them.

Elsewhere, on the party front, I haven’t checked yet but younever know, I may have won the lottery, or those six donkeys I’vejust bet on might come in, in which case we’ll throw the biggestparty in the WHOLE MILKY WAY. If not, which I suspect may be

the case, we’ll just have a nightdown a boozer in July tocoincide with my actualbirthday and invite you allalong. We’ll let you know.

Right, that’s it from me foranother month, and indeedanother year. Have a fab andhopefully sunny June, and we’llsee you next month. Avanti,allons-y, CHEERS!Angelaxxx

It’s not just us who are celebrating a birthday - say congratulations to Junk Time Party, 10 years old & still regularly tearing the arse out of Croydon’s live music scene...

4

“Two carpenters, a roofer, acomputer expert and aformer all England schools

shot-putt champion walk into abar...”

Not the start of a joke, readers, but the line-up of the eternallygood fun Junk Time Party, theunlikely five-some who celebratedtheir 10th year of being a band inApril with a big old knees up at TheOval Tavern - the busiest I’ve everseen it, and the most concerned

I’ve ever been that the floor mightgive way thanks to all the dancing.

With an armoury of fantastictunes, two singers with great voicesand the sort of musicianship youcan only get from 10 years ofMonday night rehearsals (well, wesay rehearsals, it’s more usually anhour or so of music and severalhours of poker...) JTP remain one ofthe best bands around. They’vewon Battle of The Bandscompetitions (and been robbed inthe national finals of one), came2nd in Testing 123 and havesupported both The Bluetones (whovery much approved) and themighty Chas and Dave. They’vehad lineup changes, fallings out, more than a few arguments, beencalled a ‘Cockney Rock Supergroup’

by a beaten Band Battle finalist(which they quite liked), had manymore than a few beers and a hell ofa lot more fun than most bands,I’m sure, the key to which seems tobe while they take the music veryseriously, they don’t takethemselves too seriously. Go to seeJTP and you can expect banter, badjokes and amusing pseudonyms, drunkenness, sex, drugs, and rockand roll (not necessarily in thatorder), a storming cover of Cameo’s

‘Word Up’, a big old singalong tothe standard ‘You’re shit and youknow you are’ and a vaguebefuddled memory of having yourears assualted in a pleasing rock /funk fashion, and all this from 5blokes who look an unlikely bunchto even know each other, let alonebe on a stage together, for adecade.

But that’s enough from me, and,I think, enough of a big-up to earnme several free pints next time Isee them, so it’s over the ourintrepid interviewer with JTPfounder member Andy P;

When did you form?“We formed in 1996 after my

first Reading festival experience. Iwas a soul boy before thatweekend, it changed me... It was

me, Gary and Chunky, who wasinvolved for about 30 seconds, andwe gave performances in our livingroom on the dining room table withone acoustic guitar and a set ofbongos.

“And then we had ‘Ned with thegimpy leg’ join, but he always had‘issues’ about life and money, andhis leg, and we did quite well, thenRicky joined on the drums when hewas 15 years old, ‘cos he was ourmate.

When was your first actual gig?“Our first actual gig was in The

Grouse and Claret and I walked offstage...”

You flounced off?“I did, I flounced off, ‘cos it

wasn’t right. If it aint right, I don’tlike it. It sounded poop. You canquote that - poop. How do youspell poop?”

P.O.O.P...“No that’s pooop, I want poop”P. Ü. P?“Yeah, give it an umlaut, It vas

fucking püp!”So the 10 year anniversary is of?“It’s the anniversary of this

lineup”You are quite an unlikely lot.“We’re the odd squad. We’re

like the Village People without thecostumes. Which one am I?”

The black one?“Ha, obviously! What did he

wear? Was he the constructionworker? Please, someone do youtube and find out if the black onewas the construction worker! Idon’t care about the hotpants, as

"Our weekend starts on a Thursday and endsat rehearsals on Monday, we have Tuesdayand Wednesday to get back to reality andthen the party starts again..."

long as he wasn’t the one with theleathers. Gary was the one with the‘tache! Mik’s the red indian!”

There wasn’t an all Englandschools shot-putt champion in theVillage People!

“Mik, are you a shot-puttchampion? I didn’t know that!”

You’ve only known him for 10years!

“We don’t talk about shot-putting. Not often anyway... That’s

why he picks up that big bass ampon his own. Sometimes I think he’sgoing to do it with his teeth - thenI’d be impressed.”

Can I put in about yourrehearsals not really beingrehearsals, more like pokersessions?

“You can put in that they’rerehearsals for the first couple ofhours... Well, as long as it takes to

do the first set. So we’ve actuallywhittled the first set down from 45minutes down to 20 minutes!”

So when was the first gig of youfive all together?

“I couldn’t tell you. I rememberplaying The Grouse with Ned, andDarren came and watched us aspart of the audience and he said tohimself, ‘I want to get in thatband’. We were quite mad andawesome as a four piece and we

got Darren and became... moreawesomer!

“You know what I like about usis essentially we’re builders - we’vegot Darren and Mik as well now -but basically when we started, wewere builders. How many bandsout there were builders? Loads ofbuilders sing on site but how manygroups out there now were formedfrom the building game? Even

though we’ve got two additionalmembers who come from white-collar work, the core is builders, two carpenters and a lead roofer. We are pretty unlikely when we’reon stage together, but we quite likethat.

“You’ve seen us long enough toknow that we’re pretty mad whenwe’ve got a crowd that’s quiteresponsive. We know we’reawesome when we’re on form, andeven half the time when we’re noton form, we’re still awesome! If wegave it another 10% of effort we’dbe groundbreaking - I don’t knowif that’s the right word, but we justdo it because we love it. Ourweekend starts on a Thursday andends on a Monday at rehearsal. Wehave Tuesday and Wednesday toget back to reality and then theweekend’s here again and it’sanother party”

And indeed it is, a Junk TimeParty, in fact. So here’s to the last10 years of mayhem, long may itcontinue!

"What I like about us is essentially, we’rebuilders, we’ve got two additional membersbut the core is two carpenters and a leadroofer. We’re pretty unlikely, but we like that"

To paraphrase Lesley Gore et al, it’s our birthday andwe’ll cook if we want to, so, to paraphrase Maria VonTrapp, here are a few of our favourite things...

Pizza:Being a bit Italian and all that, we love a good pizza here atDeep Towers, but the base dough can be a bit of a pain in thearse to make when you’re the busy go-getters that we and allDeep readers are and don’t have the time to prove the stuff,so, what we do is pop down to Giorgio’s La SpeziaDelicatessen, (Old Pharmacy, Swan and Sugarloaf, SouthCroydon) and pick up a packet of Barilla Pizza Kit.

We only discovered this recently but it’s very cool, containing the flour you need plus a dinky tin of tomatoes, some oregano, a sheet of greaseproof paper and even a littlepouch to measure the correct amount of water. You don’thave to prove the dough and it’s all done in 15 minutes. Addbufala mozzarella and whatever other toppings you like.

The only possible drawback is that all the instructions are inItalian, but then so are mine, so it’s basically (if I rememberrightly as I don’t have a packet in front of me): make a well inthe flour, add tsp olive oil, gradually add the water to make adough, knead knead knead until it’s elastic, roll roll roll (itdoesn’t say ‘fling it about like they do in restaurants’ but ifyou’re feeling louche then please go ahead), bung on tomsand oregano, shove in oven for 10 mins, remove, addmozarella, other toppings of your choice, drizzle of olive oil, bung back in oven for 5 mins. Remove, drizzle over patentedchilli oil (see further over there on this page). Done. As abonus, while you’re picking up your pizza kit, the deli also hasgreat proscuitto ham, fantastic olives etc. Here’s a couple wemade earlier...

June Sparkle: Wimbledon, blah de blah, strawberries, blah de blah. Actuallywe love strawberries, and they’re currently in season (‘SlowFood Week’ promotional mention (see listings) - TICK!) andwe also like booze, especially champagne...You will need:• 3 and a half oz Champagne• Half oz strawberry liqueur• 1 oz pineapple juice• 1 strawberry & sugar for garnish (optional)Method:Pour into a champagne flute. Garnish with a sugar-dippedstrawberry and serve..................................................................................

Strawberry Daquiri: Oh, and rum, we like rum...You will need:• 4 fresh strawberries, plus half a strawberry to garnish• 2 tsp white sugar• 35ml / 1 and a half fl oz white rum• 1 tbsp strawberry liqueur• 25ml / 1fl oz lime juice• Cocktail shaker with strainerMethod:1. Place the strawberries, sugar, rum, strawberry liqueur andlime juice into the base of a cocktail shaker and mash (muddle)with the end of a clean rolling pin.2. Place the lid onto the cocktail shaker and shake well.3. Strain the mixture into a Martini glass and garnish with halfa strawberry..................................................................................

Chilli OIl:So you’ve been following our chilli growing guide in ‘Deep inthe Shed’ and may now have a load of chillies to use up. ChilliOil - it’s the way forward - fantastic on pizzas especially...

WARNING! Simply dumping a load of fresh chillies into abottle of oil is not a great idea as not only will they gomouldy, it can result in botulism, which is highly unpleasant.Simply boiling the oil won’t be enough to kill bacteria. Theway round it is to reduce the PH level of the chillies beforeputting them in the oil. This is achieved in the below recipeby first boiling the chillis for ten minutes in vinegar. In orderto further reduce the risk always use dried chillies, not freshand make sure you sterilise the bottle first.

You will need:• Quality Olive Oil• Chillies• Malt Vinegar

Method:1. DRYING YOUR CHILLIES: • The easiest and fastest way to do this is to puncture yourchillies, then place them on a baking tray (ideally on bakingpaper to stop them sticking) and cook on a very low heat (100degrees or less). • Timing is crucial as it can be easy to leave them in too longand burn. As a guide we would say to leave them in the oven

jun11 14/6/11 8:25 am Page 10

Page 11: Deep London June 2011

9

jun11 14/6/11 8:25 am Page 11

Page 12: Deep London June 2011

10

for about 10-15 minutes and if not fully dry then check onthem every 2-3 minutes after that. • The exact time required to dry your peppers will varyenormously depending on the type of chillies and oven youare using. • As a general rule keep the oven temperature very low andcheck them very regularly. • If using this method it can be a good idea to dry your fruitin batches to avoid losing all of your crop should you make amistake.

2. MAKING THE OIL:• Take a handful of dried red chillies. About 7 or 8 mediumsize chillies should do the job – it all depends how hot you likeit! Add them to a pan of hot malt vinegar and simmer, stirringoccasionally to make sure all the chillies are submerged.• After 10 minutes remove the chillies and allow the vinegarto drain off by placing on some kitchen roll. • Next, add the chillies (you can leave them whole, or chopthem, or have a mixture of both) to a pan of olive oil andgently heat (don’t bring to the boil) for about 5 minutes. • Leave the pan and the chillies to cool.

3. STERILISING YOUR CONTAINER:• Always use a glass container, obviously, whether it be theoriginal bottle your olive oil came in, a pretty bottle, even ajam jar or old pasta sauce jar etc. If you are reusing old bottlesor jars, check for cracks - if there are any, chuck the thing out.• Wash in hot, soapy water and rinse in freshly boiled water, then turn upside-down on a clean tea towel to drain • To heat sterilise your bottles or jars, preheat the oven toGas3/170C. Stand them on a baking sheet and heat in theoven for 10 minutes. Obviously if your container has a plasticlid, don’t cook that, it’ll melt - just wash in hot soapy water.• Or put the clean bottles / jars in a deep pan and cover withboiling water. Bring to the boil and boil for 10 minutes. • It is also possible to sterilise in the microwave. Half-fillbottles / jars with fresh water and microwave on full poweruntil the water boils.

4. FINISH:When your oil is cool and your bottle / jar is dry, simply bungthe oil complete with all the chillies into it. Done. If you canget a pouring spout even better. Store in a cool dark space.

Chilli Chutney: We’ve only tried making this recently, to use up our chillies, and it’s lovely. Ours is also incredibly hot, but in a nice, rounded way, if you see what I mean. Anyway, give it a go, itturns out looking like Branston, but with a lot more poke.

We also did a version adding pear pieces toward the end ofthe cooking time, just long enough for them to soften, andthat was brilliant too...

You will need:• about 7 small chopped chillies (dried or fresh)• 2 large onions, quartered or chopped• 100ml of malt vinegar• half a teaspoon of garam masala• 4 table spoons of brown sugar• 1 clove of garlic• 500 ml of water

Method:1. Add all of the ingredients except the vinegar to a saucepanand bring to the boil. Cover and simmer for about 30 mins.2. Add the vinegar and simmer with the lid off for a further 20minutes to reduce down some of the liquid. 3. Sterilise a glass container as per chilli oil recipe, when dry,add the chutney. Particularly nice when snaffled with ham!

.................................................................................

Granita al Limone:A traditional Italian palate-cleanser / dessert / breakfast (withbrioche), and possibly the simplest thing on the planet tomake, assuming you have a freezer. Think swish Slush-Puppy,but a million times nicer. (Serves 6-8).

You will need:• Water - 3 cups• Sugar - 1 1/2 cups• Fresh lemon juice - 1 cup

Method:1. Bring 1 cup of the water and the sugar to a boil in asaucepan, stirring to dissolve the sugar. Continue boiling for 8to 10 minutes. Remove from heat and let to cool.2. Stir in the remaining water and lemon juice. Pour themixture into a glass baking dish (or tupperware) and set in thefreezer for one or two hours until it starts to get slushy. Theshallower the dish, the quicker it’ll freeze. 3. Stir well with a fork, breaking up any large chunks of ice orice crystals. Repeat this process every 20 minutes or so untilthe granita is frozen solid.4. Place scoops in small glasses or dessert bowls and serve.

NB. If you want, garnish the granita with some lemon zest. Our chilli oil, pokey and, as an added result, finding a use forthe empty bottle of that Blue Curacao we bought at Xmas....

‘Deep Chilli Chutney’. There was more of it, but we ate it.

Hello, good evening and welcome.Following a distressing spate ofgarden thefts (what is the world

coming to?), Edith and I have beenspearheading a nationwide campaign toreturn our pet gnomes Trumpton andCamberwick Green to their rightfulhome. This has involved an extensiveflyering exercise covering the length andbreadth of the country. Edith has beenholed up in the attic with the printingpress running full-tilt and I have beenrelentlessly flyering every major city in abid to keep the situation at the forefrontof people's minds. Trumpton andCamberwick Green, for reasons bestknown to themselves, are committedfootball fans so, with this in mind we’relogging our progress in the form of afootball themed competition. Email meat [email protected] with alist of all the football teams featured inmy report, and anybody who gets themall correct will go into a draw to win a“Grow Your Own Nigella” kit and otherrandom goodies. Competition closes atthe end of July to be safe, as I haven’tthe faintest idea when your favouritelistings rag will hit the streets [Meneither - Ed].

“Last week, my crew Stanley Black,Paul and I headed to Manchester, unitedin the knowledge that this was a keylocation. We started up West, hamsandwiches and Everton mints safelystowed in Stanley's back pocket, until hefell, his jeans torn asunder, landing onhis arse and all our lunch got squashed. So we stopped at a café to stoke up - Ichose the liver, Paul opted for turnipswhich he loves, and Stanley nibbled onsome red Leicester. Unfortunately Stanhad a panic attack in the gents becausethe door had no bolt on – wandererskept opening the door so he had to gooutside for some fresh air. Later wepressed on towards the ports, mouthswatering at the thought of some Lincolnsausages and Dundee cake.

The next day, we headed south andas we neared Wycombe, wandererstagged along with us. By evening morecame and swelled our ranks. Donationsto our cause started to come in, but theloot only weighed us down so we had tobury it.

Today I am heading off to Accrington.Stanley is going to meet me at thestation at the south end en route fromPlymouth, Argyll socks flashing beneathhis cycling shorts, barnet blowing in thefierce wind, on time hopefully. He'll beequipped with a huge satchel, seeing ifhe can beat his pasting record each day.If not, I send him to Coventry - thisreally spurs him on. I'm then planning todo Sheffield Wednesday, hoping thisleads to more publicity. Stanley is goingto put his wig on, athletic though he is,as last time he was in Queens Park, rangers tried to arrest him for torchingsome barns, leaving him with a black

burn Lee had to see tourgently. We'replanning to completelycover the mill wallbefore heading back toBrighton and Hove. I'llbe on my way toNottingham for rest bythen.

I'll be happy to gohome as I'm really aQueen of the Southand I know Stan misseshis mother – wellwouldn't you?”

So send us a card ifyou spot our waywardgnomes.anywhere.

And on the subjectof competitions, a greatnight was had by allwho attended Richie &Keef’s Bizarre QuizNight at the Ship.Featuring a plethora oftotally randomquestions, mostlyconcerning peanuts, giraffes and obscurelaws, and punctuatedby uncontrollablegiggling from thequestion masters, theproud and worthy

winners were The Flim FlamMollywoking Platoon of Doom, whowon the fantastic prize of a pint ofmoney. I was disappointed not to winthe Cock Soup but walked away withsome fine Nigella seeds, hence my abilityto offer them on as a prize in my owncompetition.

Anyway, that’s it for another month.Stay safe, happy and upright.

Auntie May returns next month. . .

Birthday greetings from the DeepShed! We’ve put up bunting andeverything...

Strawberries! Contrary to popularopinion, strawberries are pretty easy togrow, and can be grown inside in awindowbox, thus avoiding problemsfrom slugs, birds and frost etc.

To grow indoors in a windowbox youwill need: a window box (well d’ur!),potting compost (if possible withfertiliser already added), some gravel, pebbles or hydroponic material, andeither strawberry seeds or strawberryplants.

You really want to use the deepestwindow box you can find, to avoid toomuch moisture being lost - the deeperthe box, the more water it can hold andthe slower the compost will dry out.

Put a layer of gravel, pebbles orhydroponic material at the bottom of thewindow box, approx. 1 inch thick, tohelp drainage (we use the hydroponicstuff).

Fill the box with compost until youreach about 2 inches from the rim. Firmthe compost down lightly and refill withmore compost if necessary.

Ensure the compost is damp, but notwet. We REALLY recommend youinclude hydroponic balls in the compost,as these will help the water retention.Just sprinkle a handful or so with thecompost while filling below the plantinglevel.

Pop your strawberry plants into thebox, spreading the roots out evenly if

transferring from a different part of thegarden.

If you are growing strawberries fromseed, fill the compost to about 1 1/2inches from the rim and spread the seedsout evenly along the edges.

The plants don't want to be backedup against the side of the box, butappreciate a space of about 1/2 inchbetween themselves and the windowbox wall.

Add compost to about an inch fromthe top of the box, firming each plant ingently as you go along.

Water generously and don't worry ifthe plants look a bit wilted to begin with- they will pick up within a few days.

Remember to water VERY regularlyand add liquid fertiliser after about 6weeks.

If you have planted seeds, keep thebox or basket in a warm place until theseeds have germinated and the youngplants have established themselves, thenslowly acclimatise them to livingoutdoors - unless you intend to continueto grow strawberries on the insidewindowsill. The plant will benefit frombeing placed on a windowsill or balconywhere they receive a lot of sunlight.

Watch The Skies!

Shed Of The Month

In honour of a summer of English cricket, our June shed of the month is more of apavilion. This little (I say little, it’s biggerthan my flat) beauty is the Avon 500Grande Log Cabin and if you happen tohave just over three grand (or six for thedeluxe version) down the back of thesofa it can be yours! See your shed here!Send a pic to [email protected].

This month’s main event is a totaleclipse of the moon on June 15th. The Moon rises during the total phase ofthe eclipse as the Sun sets. Moonrisetime varies with location, with observersin London seeing this at 2113 BST (2013GMT). The total eclipse ends at 2203BST (2103 GMT), when the Moonbegins to leave the darkest part of theEarth's shadow or umbra. By this time itstands only 5 degrees above the south-eastern horizon from London. The Moonthen moves into the penumbra, thelighter part of the Earth's shadow andwill likely have a yellowish hue. Theeclipse comes to an end when the Moonleaves the penumbra at 0002 BST on 16June (2302 GMT on 15 June). The Moon's low altitude in the skyduring the total phase of the eclipsemeans that observers will need anexcellent horizon and clear skies to see itwell, but if it is visible it could be aspectacular opportunity forphotographers. And unlike their solarcounterparts, lunar eclipses need nospecial equipment and are perfectly safeto watch with the unaided eye. View itwith The Baker Street IrregularAstronomers (astronomical societyrunning a free public eclipse event inRegent's Park, London)www.bakerstreetastro.org.uk

What to Plant Now:

Creature-Watch:We’re always on the lookout forinteresting animal based stuff here in theshed, so we’re happy to tell you all thatyou can go walking with wolves nearReading. Yes, really. Pop along tohttp://wildlifewatching.org/ and selectwolves from the dropbox (or baskingsharks, badgers, edible dormice or a hostof other animals). According to the siteit’s “a unique experience of walking withsocialised wolves through beautifulwoodland. The wolves are handled by anexperienced team and will interact withyou as you walk, often walking inamongst you.” How very, very cool. Thewalk costs £30 and the next availableslots are in September, so if you fancy itit’s probably best to book now as they fillup fast. The event is run by the UK WolfConservation Trust, so you’re in goodhands, and they also have open days(next one 29th August) and other eventsthroughout the year. Excitement abounds in theDeep Shed this month as ouradventure in home-brewing

has begun! Well, I say homebrewing, it’s more home fermentingas we’ve eschewed the beerbrewing option, as we don’t drinkthat much beer, and gone straightto wine-making, as we drink a lotof wine. Unfortunately, a quick search ont’internet reveals that not only doeswinemaking require moreequipment than beer making, butthat it’s also a bit more technical(cue outrage from beer brewerseverywhere, but we can only tell itas we see it). Happily though, asIan Dury once sagely opined ‘thereaint ‘alf been some clever bastards’,and the good people at

www.brewuk.co.uk seem to besome of them as they’ve produceda ‘wine starter kit’ which includeseverything, and we meaneverything, you need to get startedin winemaking (around £40 for areusable six bottle kit).

And lo, a couple of days later abig exciting box arrives containingwidgets and grommets, pots andpotions, sachets and intriguing glassmeasuring devices, all of whichlook very much like a nascent madscientist set and a little bitdaunting, but, bolstered by PetalDunwoody’s revelations aboutgetting a ‘C’ in O’Level Chemistrywe plough on and discover that thekit also contains pretty much idiot-proof instructions - hurrah!

As with most other things in themag this month (see chilli oil, chutney etc), the first task issterilising our demijohn (seriously, since May 15th I’ve done exactly

100% of all the sterilising I’veever done) after which, andafter a brief hiatus as we tryfor about half an hour to getthe lid off (the instructionsneed to be MORE idiot-proof)it’s time to add the grape juiceand various other sachetsincluding oak chips (we’remaking a Sav Blanc, btw), fizzup the yeast and add that, then bung it all in the airingcupboard (it needs to be in awarm, dark place) to let it doits thing for 7 days. In just 4short weeks, we’ll have wine, you know.

To say the concoction lookspleasant in this 7 day stagewould be overstating it. Itlooks like off milk with bits of

black stufffloating in it,and is, in quitea sinister way,‘breathing’through it’s littlefermentationlock lid as thegas escapes, and making aconstant quiethissing noise.

After about 5days, the mistsare starting toclear and we’releft with whatlooks very muchlike a distressingurine samplewith a lot ofmagnolia-to-brown tintedsediment at thebottom. Lovely.

We want the finest winesavailable to humanity! We

want them here and we wantthem... in about 4 weeks!

The kit looks like a nascent mad scientistset, but Petal got a ‘C’ in O’LevelChemistry so we’re confident...

After 7 days it’s time to try outour hydrometer, like a bigthermometer which measuresspecific gravity. The instructions tellus what parameters we should bewithin and... we are! Time tosterilise the second demijohn andthe syphon and get the wine fromone to t’other sans sediment. A bitof a tricky job, and I leave theactual sucking of the syphon to getthe wine moving to Petal, as I reallydon’t want any of the gloop in mymouth. Petal duly obliges andreports that it tastes like very weakwine (yes, I know that’s what it’ssupposed to taste like, but we werestill surprised that it actually did), ormaybe one of those Schloer grapedrinks with vodka in it. When thesmall amount of sediment wedidn’t manage to syphon outsettles, the stuff looks like, well, wine, and it’s back into the airingcupboard for another 12 days untilstage three, when we have to add‘finings’ and other odd sachets.

But that, I’m afraid, will have to

wait as this is where wehave to leave you, ontenterhooks no doubt, asthe next stage doesn’tstart until after we’ll havegone to print, but sufficeto say by the next timewe see you we’ll either besitting in the shed sippinga young and fruity SavBlanc or writing the magfrom the gastro-intestinalunit of the nearest A&E.Either way, we’ll let youknow next month...

Pictures: 1) Excitement with boxes & doodads; 2) Let the wine-making process begin!; 3) Mmm, lovely; 4) The sinister breathinggrommet; 5) I can see clearly now the yeast has gone; 6) Petal, infull mad professor mode, has fun with syphons; 7) That looks a bitlike wine - we’re as surprised as you...

(1) A summer afternoon under the gaze of Queen Victoria in The Spread Eagle; (2) Fun at The Derby 1 - I don’t know if youcan see it but this bloke came dressed, in polyurethane, as a jockey, complete with inflatable horse (but not big white arrow over

his head). It was about 90 degrees. We didn’t see him again. (3) Why is that horse staring at me? Is it because it knows it’sabout to lose me £20... Yep! (4) Fun at The Derby 2 - the music stage; (5) Every time I walk past East Croydon a bit more is

disappearing - this used to be Amy Johnson House. Open your world, by flattening it. (6) Do Not Feed the Toilet Rolls...; (7) The Deep-London Sunny Summer Sunday Park Hill Park Cricket Society (DLSSSPHPCS) - lunch; (8) A view from the bar
