NEW Ile De France

The original Blue Brie - first produced in eastern France in 1951.

Blue de Bresse is a small mild cheese. Its creamy interior, similar in texture to brie, is white and the

centre will have patches of blue that tends to create small explosions of flavour. Like all blue

cheeses, Blue de Bresse grows more pungent with age and should be use within a few days of

purchase; it is best brought to room temperature before serving.

Coulommiers (pron: KOO-lom-YAY) has a close association with Brie. The cheese is around 350 gm and because of its size, possesses a sweeter, nuttier flavour than Brie. Foi Epi Cheese

Cheddar cheese was originally produced in the region called West Country which includes the shires Devon,

Somerset and Dorset. These lush pastures have been lovingly tended by generations of families who started

farming the land some 450 years ago.

The West Country cheese makers was formed by a group of 12 relatively small cheese makers, who together

spread across Devon, Somerset & Dorset working together sharing information on cheese making thus providing a

quality hand-made cheese on the farm. Dorset Drum is presented in a 2 kg round, coated in black wax to protect

the cheese. Inside the paste is a pale yellow colour and is perfectly sized to portion for cheese plates and retail

sales. Dorset Drum is hand-made English Cheddar using milk sourced exclusively from farms in the Dorset district.

This cheddar has a soft creamy texture, a long sweet flavour and just the right amount of bite. Serve at room

temperature with Oat Cakes, Baguette and Butter, quince paste or a great match with our Mostarda di Milano from

Italy. Good Wine pairings can be made with full bodied dry white wines such as aged Chardonnay, Hunter Valley

Semillon, or full bodied reds, desert wines & fortified wines.

Chaumes Cheeses

St Andre is the classic French triple cream. Made from Cows milk, the fat content is around 75%. Traditionally, St Andre is manufactured in Coutances near Normandy in France. The texture can be buttery to soft and the rind should be bloomy with a tang. The shape and size of the St Andre make it unique and the cheese compliments beer well. St Andre has a short shelf life and should be consumed with much enthusiasm quickly & regularly.

The beautiful colour of sun kissed straw! That is how you could describe Chaumes, a smooth soft cheese full of fruity flavour, with a soft rind whose aroma is enriched with a dash of subtle smokiness. Crozier Blue is a delicious, creamy sheep milk blue with a good balance of earthy

sheep milk flavour, and savoury blue cheese bite. It has a good salt balance and as

with all good cheese, matures well with age to develop long palate flavours.

Buttery, luxurious and soft best describe the initial impression of Caprice des Dieux

(translates to “whim of the gods”). The texture is firm with no trace of bitterness.

Caprice des Dieux is one of the biggest selling cheeses in Europe. The striking

True Gorgonzola carries the DOP status (Denomination of Origin Protected), which guarantees the cheese is

made from milk originating in the specified geographic area. Gorgonzola Dolce Latte is imported by air freighted

every two weeks to Australia. This ensures a quality of Gorgonzola equal to that served in the best restaurants in

Italy. There is a world of difference between this and cheese that has been shipped over in bulk on sea containers.

Gorgonzola Dolce is a soft, creamy blue cheese. The taste is sweet, savoury and has a velvet texture.

This is a traditional Lombardian classic, and is the original gorgonzola before modern taste dictated a creamier,

milder blue. Our Gorgonzola featured here differs greatly. To begin with it is produced by small scale cheese-

makers in the Valsassina Alps, in the province of Lecco. The alpine pastures produce a variety of flowers and

herbs which without question contribute to the high quality and unique flavour of the milk that goes into making

these alpine cheeses. The first curd is produced the day before and left to cool, the second curd is warm and full of

whey. The two curds are then layered, alternating between rich warm curds and the previous day's cool curds. This

is a unique natural process, as opposed to the industrial method used by modern cheese makers. This is often

referred to as Mountain Gorgonzola or Natural Two Curd Gorgonzola and is produced in very limited quantities. Its

flavour begins with a savoury, creamy taste and then as the cheese ages the taste becomes more robust, more

intense and piquant.

This is true Artisan French farmhouse cheese, Brie Fermier is a made exclusively from fresh milk

from the Tremlaye Farm's own milking herd, making this a true French Farmhouse Brie. The cheese

first appears with it's typical chalking centre which is preferred by many French - soft and creamy

just under the delicate white rind, then a contrasting firmer centre with a gentle acidic tang. As the

cheese develops in the following weeks the aroma gets stronger and the brie chalk line gradually

disappears as the full ripeness and rich flavour of Brie Fermier is revealed.

This marvellous creation of Stefano Sarti on the Co-operative farm Il Forteto

in Vicchio, Firenze, Italy is now available in Australia. Here he has added

local white truffles, a combination that makes this cheese memorable for

anyone who tries it. A pure, 100% sheep milk pecorino, which is delicate

and well balanced, not too strong in sheep milk flavour and not overly salty.

With the addition of small quantities of White Truffle, the cheese becomes

enveloped with the aroma of the truffle, adding a different dimension to

the cheese.

symbolizes all the strengths and riches of its rustic origin. Etorki has a smooth, velvety texture and

rich, hazelnut (almost burnt caramel-like) flavour. Its aroma is sweet and buttery, and the cheese is

voluptuous on the tongue. Because of its supple texture ,Etorki is characterized by its ivory-coloured

centre, firm but supple texture and thin, brownish-orange rind. Etorki is perfect in recipes calling for

grated or melted cheese, Etorki is a very supple cheese; you can bend it a bit without breaking.

According to tradition of the Basque shepherds - Etorki should be served with black cherry jam on

West Haven Dairy is located in Launceston, Tasmania. Hand made in a traditional

Greek style from cows milk. West Haven fetta can be described as having a firm

consistency, slightly crumbly with a somewhat salty texture. It's slightly sharp in flavour

appealing to lovers of original Greek or Turkish style fetta cheese. The fetta is cured

and stored in brine giving it a shelf life of up to 6 months

The Danes have made a superb replication of the original Italian product. Soft, elastic

and very creamy when melted, it can be used as a stuffing, in sauces or even in

Fondue.

Fontal originates from Northern Ital and is styled on the traditional Fontina Valle

d'Aosta, a raw milk mountain cheese that has a protected denomination of Origin

(DOP). As true Fontina DOP can only be produced from Alpine milk in a specified

geographic zone, most factories commercially produce this cheese in the mountain

and lower lying dairies in Piemonte and Lombardian and legally must be labelled

"Fontal" Fontal is produced in 12Kg round forms, has a very soft and supple texture

which is tender. The rind is usually removed and a food grade film applied to retain

moisture and avoid cracking and unwanted moulds. Fontal is a particularly good

melting cheese suitable for pasta, arranchini, pizza and Panini.

This very traditional cheese is produced mainly in Northern Greece especially in Western Macedonia from sheep milk or a blend of sheep and goat milk. Kefalograviera is circular in shape, with a yellowish to light brown hard and thin rind. Slightly salty with a firm texture, ideal for melting, grating or served as a table cheese. Kefalograviera is usually the cheese ingredient for the cheese dish Saganaki.

Manchego, or, Queso Manchego is a native cheese of the La Mancha region in Spain. To be granted a PDO (Protected Designation or Origin), Queso Manchego is to be made from milk of the Manchega breed of sheep. Casa del Campo is a Gran Reserva Manchego which has been aged 6 months. It carries a PDO status which confirms the heritage and authenticity of this famous cheese from La Mancha. Casa Del Campo Manchego has won many European cheese show awards and is regarded as one of the finest Manchego Cheeses from Spain. A firm texture with a mild, buttery flavour, the colour is white to ivory and the cheese can be enjoyed in many ways.

If you have ever tasted Pecorino Toscano from Italy, you will know there is a world of difference between the

widely used Pecorino Romano, and the delicate but complex taste of real Tuscan Pecorino. We are

particularly impressed with its founder, Stefano Sarti who manages the farm. Stefano is a truly unique man

who is dedicated not only to producing outstanding quality cheese, but also to maintaining traditional aspects

of Tuscan cuisine (he also produces beef from the rare white breed of Chianina cattle for the restaurants of

Italy). Depending on where the milk originates the cheese will vary according to the pastures sheep graze in,

the breed of sheep used, and the cheese maker's techniques. Pecorino Toscano Stagionato is matured for

three to four months and develops more complex, rich flavours. A Traditional Pecorino cheese with a flavour

unique to Tuscany.

St Andre is the classic French triple cream. Made from Cows milk, the fat content is

around 75%. Traditionally, St Andre is manufactured in Coutances near Normandy in

France. The texture can be buttery to soft and the rind should be bloomy with a tang.

The shape and size of the St Andre make it unique and the cheese compliments beer

well. St Andre has a short shelf life and should be consumed with much enthusiasm

quickly & regularly.

This Taleggio is from our Northern Italian supplier of Gorgonzola Dolce Latte and Picante. Taleggio is a Denominazione di Origine Protetta cheese which is made exclusively with cows' milk. Its name is derived from the Taleggio Valley, a characteristic valley in the upper Bergamo area. Taleggio cheese is salted in brine and ripened in pinewood cases for approx. 35 days in the characteristic cellars of the Taleggio Valley, at a temperature of 3'f8C and 95% humidity. The rind is thin and pinkish, with some grey and light green sage colour mould. Indeed the thin covering of these moulds is a very natural and expected occurrence for Taleggio. The cheese is compact and soft with a few small eyes and colour which varies from white to straw-coloured. we air freight our Taleggios direct from Italy, this means the cheese's flavour will be sweet and delicate, but at the same time unique, making our Taleggio a cheese that is appreciated especially by those who do not like strong aromas and flavours. The flavour is sweet and fruity, with a slightly sour tangy taste, sometimes with a truffle aftertaste. Excellent spread on our Italian Flat Bread, Taleggio is also a wonderful cheese to cook with.
