DESCRIPTION
A recipe for excellent chocolate ginger cookies.TRANSCRIPT
Demon Cookies:
2 cups all-purpose flour (have an extra 1/4th cup on the side if
texture is too wet - depends on the humidity)
2 tsp. ground ginger (if you like a little more kick, I use 2
heaping tsp)
1 tsp. baking soda
1/4 cup cocoa powder (I like dutch process, but will be fine as
long as you have a good brand)
3/4 tsp. ground cinnamon (fresh if you have the time or
equipment)
1/2 tsp. ground cloves (" ")
1/4 tsp. salt
3/4 cups butter (unsalted)
1 cup sugar + 2 Tbsp sugar for rolling (raw or turbinado sugar is
great for finishing)
1 large egg (can go jumbo before medium)
1/4 cup molasses
1 cup chocolate chips (or even better, 365 dark chocolate mini
chunks)
1/4 cup finely chopped crystallized ginger
Combine flour, cocoa, ginger, soda, cinnamon, cloves and salt, set
aside.
In a large mixing bowl, beat butter, with an electric mixer on low
speed for 30 seconds to soften. Gradually add the 1 cup sugar; beat
until fluffy. Add egg and molasses; beat well. Stir dry ingredients
into beaten mixture, in 2 batches. Lastly fold in the the chocolate
chips and crystallized ginger with a rubber spatula.
Shape into 1 1/2 inch balls (or one heaping tablespoon) roll in the
2 tablespoons sugar and place on a cookie sheet lined with
parchment paper, giving good room for them to flatten out.
Bake in a 350' oven about 10 minutes or til light brown and still
puffed. (Do not overcook!) Let stand for 2 minutes before
transferring to a wire racks to cool completely.
