Sequels to successful plays, mov-ies, or TV series are often fraught with uncertainty and trepidation of not be-ing able to live up to the original work.  “Forever Plaid” creator, writer, choreog-rapher, and director Stuart Ross, makes sure that his old fans and new fans alike, need not have worried about his sequel disappointing his audiences.  This spar-kling Christmas Holiday production con-tinues the musical journey where the original show left off.

        The story of “Plaid Tidings” con-tinues the celestial journey of the 1950’s singing group whose lives were lost in an accident involving a busload of teens en route to see “The Ed Sullivan Show”.  In the sequel, the Plaids are encouraged by a heavenly phone call from Rosemary Clooney, urging the high-spirited, four-part harmony boys of “Forever Plaid” – Frankie, Sparky, Jinx, and Smudge, to once more, return to Mother Earth from the ethereal cosmos, to stage a nostalgic musical singing extravaganza for world-weary inhabitants on our troubled plan-et.

        The show is chock full of such standards as “Mr. Santa,” “Let it Snow”, “Have Yourself A Merry Little Christmas”, and “Home For The Holidays.  These are among more than thirty-four songs, and musical numbers that are cleverly and freshly arranged by James Raitt, Brad Ellis, Raymond Berg, and David Snyder. Snyder’s fingerprints are all over this

wonderful Holiday show.  He’s princi-pally responsible for the superb musical continuity and vocal arrangements in the show, all under the watchful eye of director Stuart Ross.

     “Forever Plaid” was presented at The Old Globe in the summer of 1991 and soon became the hottest show of that year.  It was such an overwhelming success, the production returned for a second two-month engagement the fol-lowing November.  Fans kept pressing for a sequel to the ever-popular story of the Four Plaids. Ross, clever fellow that he is, understands that everything on earth has a season and a time for doing what all talented and successful creators do – they write a sequel.

        “Plaid Tidings” may sport a new cast in this iteration, but the magic is still there.  The cast of “Plaid Tidings – A Special Holiday Edition of Forever Plaid” stars four extremely talented singers, dancers, and actors: David Brannen as Sparky, Leo Daignault as Jinx, Jason Heil as Smudge, and Michael Winther as Frankie.  The quartette is the epitome of a smooth-working ensemble who send-out the vibe that they really enjoy work-ing together. Their production numbers highlighting various songs, such as “Ja-maica Farewell”, “Kingston Market” “Mo-ments To Remember” “Mele Kalikimaka”, “Let It Snow”, and “Carol of the Bells” (where they bring onstage an audience member to help with the number), are

splendidly clever and creatively staged.  The musical selections in the show give each star an opportunity to show his individual stuff. And there’s plenty of “stuff” from this “fab four” to show their audience. 

        The state-of-the-art, 250-seat Sheryl and Harvey White venue is a good fit for this Holiday show.  We get to see the entire stage area being used by Ross, as he put his energetic cast through their paces.  There isn’t a dull moment in this musical valentine to four-part har-mony groups.    According to Ross, The Plaids perform in the style of the great 50’s and 60’s groups like: The Four Lads, the Hi Lo’s, The Four Freshmen, and The Four Aces.    

          “Plaid Tidings – A Special Holi-day Edition of Forever Plaid” is a Holiday show for the entire family, but it really resonates with folks over 50.  However, I did see some under-twelve year olds on opening night who seemed to be really involved with the on-stage antics of the four Plaids.  The show runs through De-cember 26th.

W ell, justice fans – have the State “Supremes” done it again? American students

and California taxpayers are getting the short end of the stick!!!

The California State Supreme Court recently ruled that ILLEGAL ALIENS CAN ATTEND COLLEGE PAYING THE IN-STATE TUITION RATE, while the California taxpayers foot the bill. At the same time, AMERICAN CITIZENS LIVING IN OTHER STATES CANNOT!

The controversial decision came about as the result of a suit filed in 2005 by 42 US born students and their parents, arguing that the 2001 California law which extended to “UNDOCUMENTED ILLEGALS” the “RIGHT” to pay the in-state tuition in the state’s colleges and universities was unfair to both in-state and out-of-state American born students.

California is one of only nine states, which allow illegal aliens to pay in-state tuition rates. The class action suit argued that over 60,000 American born students have illegally been forced to pay the much higher out-of-state tuition fees to attend the state’s higher learning institutions. As a comparison – the University of California’s in-state tuition is about $6,800 per year, while “out-of-staters” pay a whopping $24,589! Why the huge disparity? Because the state’s taxpayers pay the difference to

finance their own children’s attendance at these colleges and universities. Out-of-state students, not being “legal” California residents, are not “entitled” to the taxpayer subsidy. However, illegal aliens who have spent at least three years attending California high schools are considered to be “legal” California residents, and therefore “entitled” to pay the in-state tuition rate. Should they be – even though they are actually illegal aliens?

Here is the worst of it – when the 42 students and their parents in their lawsuit asked the University of California, the State University, and several California community colleges about the number of illegal aliens they had enrolled in its institutions, these schools of “higher learning” answer was ludicrous! They responded that they don’t maintain records on that information. The University of California finally “admitted” they only had 407 “UNDOCUMENTED STUDENTS”. The facts do not bear that “information” out.. California colleges and universities actually average a financially staggering 15,000 ILLEGAL ALIEN STUDENTS!!!

That incredible number of illegal students translates in California taxpayer dollars to over an unbelievable TWO HUNDRED SIXTY SEVEN MILLION DOLLARS A YEAR!!! This means that the state’s taxpayers are saddled with a whopping $17,800 for each of the four

years that every ILLEGAL ALIEN who attends a California college or university.

Because of this latest unjustly insane ruling by the state “Supremes,” I believe every American student and taxpayer will feel its impact – and soon. Multiply the staggering amount that California’s taxpayers are shelling out to keep these thousands of illegal aliens in the state’s higher learning institutions by the nine states, which offer illegal alien students the in-state tuition rates. You will be amazed at the massive amount of taxpayer subsidy – it is over TWO BILLION, FOUR HUNDRED BILLION DOLLARS ANNUALLY! Many of the taxpayers who reside in these nine states cannot get the same in-state tuition for their children – but the ILLEGAL ALIEN STUDENTS CAN! This is the most covert taxation heist that most American citizen taxpayers in these nine states don’t realize that they are paying! Most taxpaying Americans think the $6,800 that each illegal pays for in-state tuition covers the costs of their education. This is how progressivism works. Make the little lie work, and then expand it.

I place the blame on the unbelievable high number of illegal alien students at the feet of the federal government. If we had more secure borders, the American people would feel safer – and we wouldn’t have the vast number of illegal alien students – and rightly so.

Cherry Cannoli Cups48 wonton wrappers¼ cup butter, melted¼ cup sugar2 cups chopped hazelnuts, divided1 carton (15 oz.) part-skim ricotta cheese4 oz. cream cheese, softened3 Tbsp. confectioners’ sugar1 Tbsp. hazelnut liqueur, optional1 tsp. vanilla extract2 jars (one 16 oz., one 10 oz.) maraschino

cherries, drained

Place wonton wrappers on a work surface; brushwith melted butter. Sprinkle with sugar. Press intogreased miniature muffin cups. Sprinkle eachwonton cup with 1 tsp. hazelnuts.

Bake at 350˚ for 5-7 minutes or until lightlybrowned. Remove to a wire rack to coolcompletely.

In a large bowl, beat the ricotta, cream cheese,confectioners sugar, liqueur if desired and vanillauntil smooth. Cut 24 cherries in half and set aside.Chop remaining cherries; fold into cheese mixture.

Spoon 1 Tbsp. filling into each wonton cup.Sprinkle with remaining hazelnuts. Top with areserved cherry half. Makes 4 dozen.

Cherry-Misu2 jars (10 oz. each) maraschino cherries2 cartons (8 oz. each) mascarpone cheese

½ cup sugar2 Tbsp. amaretto or brandy1 tsp. vanilla extract1 cup heavy whipping cream

½ cup water42 crisp ladyfinger cookies

2 milk chocolate candy bars (1.55 oz each),gratedchocolate curls

Drain cherries, reserving juice and 9 cherries; setaside. Chop remaining cherries.

In a large bowl, combine the cheese, sugaramaretto, vanilla and 1 Tbsp. cherry juice. Inanother bowl, beat whipping cream until stiffpeaks form; gently fold into cheese mixture.

Combine water and remaining cherry juice.Arrange 14 ladyfingers in an ungreased 9-in. squarepan. Brush with 3/4 cup cherry juice mixture.Spread 11⁄3 cups cheese mixture over ladyfingers.Sprinkle with half of the chopped cherries andgrated chocolate. Repeat layers.

Top with remaining ladyfingers and cheesemixture. Garnish with chocolate curls and reservedcherries. Refrigerate for 1 hour before serving.

Editor’s Note: This recipe was prepared withAlessi brand crisp ladyfinger cookies.

Makes 9 servings.

Gluten-freeCherry Brownie Bites*

1 10-ounce jar maraschino cherries,drained reserving 5 tablespoons of thesyrup

8 ounces good quality bittersweet chocolatechips

1 cup unsalted butter1 teaspoon pure vanilla extract

3/4 cup granulated sugar3 large eggs, beaten

11⁄2 cups ground almonds1/4 teaspoon kosher or fine sea salt

Cherry Chocolate Ganache (recipefollows) or 1 cup whipped cream lightlysweetened with a tablespoon or two ofreserved cherry syrup

48 maraschino cherries for decoration,drained and patted dry

Preheat oven to 350 degrees. Insert paper linersin 48 mini muffin cups.

Pat the cherries dry and chop them roughly. Setaside.

Melt the chocolate chips and butter in a heatproof bowl in the microwave for 2 ½ - 3 minutes,stirring once or twice until the butter is fullymelted and the chips are almost all melted. Stiruntil all the chocolate is melted and the mixture issmooth and glossy. Stir in the vanilla extract, 2tablespoons of the reserved maraschino cherrysyrup and the sugar. Let cool slightly.

Beat in the eggs, ground almonds, salt andchopped cherries. Divide batter between theprepared muffin tins filling the tins almost full. Asmall ice cream scoop helps with this.

Bake for 10 – 14 minutes or until the tops are setand feel firmish to the touch but the insides are stillsoft. Do not over bake. Let cool in pan for 5minutes then turn out to a wire rack to finishcooling.

If using chocolate ganache, spoon some ganacheon top of the brownies, top each with amaraschino cherry and refrigerate for at least halfan hour to firm the ganache. Can be made a dayahead.

If topping with cream, pipe or dollop on thewhipped cream just before serving and top eachbrownie with a cherry.Cherry Chocolate Ganache

4 ounces good quality semi-sweet chocolatechips

1/2 cup heavy whipping cream3 tablespoons reserved cherry syrup

Pour chocolate chips into a small heatproofbowl. Heat the cream and cherry syrup in a smallpan over medium high heat until it just comes to aboil. Pour the hot milk mixture over the chocolatechips and let set for 5 minutes. Stir until smoothand glossy. Let set for about 10 – 15 minutes thenspoon over the brownies. Makes 48.

Gluten-freeSweet and Sour Pork*

11⁄2 pound lean pork tenderloin, cut into1-inch cubes

2 teaspoons finely grated fresh ginger2 garlic cloves, finely minced

1/2 teaspoon crushed red pepper flakes, divided9 tablespoons gluten free chicken stock,

divided1/4 cup ketchup1/4 cup granulated sugar

3 tablespoons apple cider vinegar3 tablespoons wheat free soy sauce3 teaspoons corn starch2 tablespoons peanut or vegetable oil1 medium white onion, cut into 1-inch

pieces2 bell peppers (green, red, yellow or orange

or a combination) cut into 1-inch pieces1 8-ounce can water sliced water chestnuts

in water, drained1 20-ounce can pineapple chunks in juice,

drained and juice reserved18 maraschino cherries, drained and patted dry

1 green onion, thinly sliced on the diagonalfor garnish

In a mixing bowl, toss the pork pieces with theginger, garlic and ¼ teaspoon crushed red pepperflakes. Let set while preparing the rest of theingredients.

Prepare the sauce by mixing ¼ cup of thereserved pineapple juice with 6 tablespoonschicken stock, the ketchup, sugar, vinegar, soy sauceand remaining ¼ teaspoon crushed red pepperflakes in a small mixing bowl.

In another small bowl mix the remaining 3tablespoons of chicken stock with the corn starchuntil well blended.

Heat a wok or large skillet over high heat. Addthe oil and swirl it to coat the sides and bottom ofthe pan. Add the pork mixture and stir fry for 5minutes or until cooked through. Remove the porkfrom the pan to a plate and set aside. Add theonions, peppers and sliced water chestnuts and stirfry until crisp-tender, about 3 minutes. Add thesauce mixture to the vegetables and cook, stirringuntil the sugar dissolves and it comes to a boil. Addthe cornstarch mixture, the pork (along with anyjuices that have accumulated on the plate), thepineapple chunks and the maraschino cherries.Cook until everything is heated through and thesauce has thickened, about 2 minutes.

Garnish with sliced green onions and serve withhot rice. Serves 6.

Gluten-freeVegan Magic Bars*

2 cups blanched almond flour2 tablespoons sugar

1/4 cup honey3 tablespoons melted non-dairy butter

substitute (such as Earth Balance)1/4 teaspoon kosher or fine sea salt

1 cup coconut milk – shake can well beforemeasuring

1/4 cup agave nectar or honey2 tablespoons cornstarch or arrowroot

powder2 cups dairy free chocolate chips

1/2 cup maraschino cherries, drained, patteddried and quartered

1 cup sliced or slivered almonds11⁄2 cups sweetened flaked coconut

Preheat oven to 350 degrees. Spray a 9 inch by12 inch baking dish with gluten-free non-stickcooking spray.

In a mixing bowl, mix the almond flour with thesugar, honey, melted non-dairy butter substituteand salt until well combined. Moisten hands withwater and pat the mixture into the bottom of theprepared pan.

In another mixing bowl, whisk together thecoconut milk, agave or honey and cornstarch. Pourover the almond crust. Sprinkle the chocolatechips, cherries, almonds and coconut evenly overthe top. Gently press down.

Bake for 35 – 40 minutes or until the almondsand coconut flakes are browned and toasty.

Let cool. It is easier to cut into squares if yourefrigerate for about an hour to let everything set.

Cut into squares. Make 12 3-inch squares.

Gluten-freeBlack Forest Trifle*

1 (8-serving package) box of Black Cherryor Cherry Jello gelatin

2 11-ounce cans Red Tart Cherries, liquidfrom 1 can reserved

3 tablespoons maraschino cherry juice(from a jar or maraschino cherries)

1 (6-serving package) instant Vanilla JelloPudding

21⁄2 cups milk1 8-inch gluten free chocolate cake or

brownies (preferably made the daybefore)

1 cup heavy whipping cream2 teaspoon granulated sugar

Cocoa Powder, grated chocolate orchocolate curls for garnishMaraschino Cherries for garnish

Prepare the Jello gelatin according to thedirections except only use 1 cup of cold waterinstead of two. Let firm up for at least 4 hours oryou can make the day ahead. Cut into about 1-inchsquares.

Mix the reserved juice from the can of tartcherries with the maraschino cherry juice.

Prepare the instant Jello pudding per theinstructions using 21⁄2 cups of milk instead of three.Let the pudding set up for 5 minutes.

Cut the cake or brownies into about 1 inchsquare pieces, you do not have to be very precise.Layer half of the cake into the bottom of a triflebowl or clear glass serving bowl. Spoon some ofthe cherry juice mixture onto the cake, enough tomoisten the cake but not drown it. Layer 1 can ofdrained tart cherries over the moistened cakemaking sure the cherries go all the way out to theedges so they show up in the layers. Top with halfof the pudding. Top with the cubed Jello then addthe remaining pudding, another layer of cake(moisten the same way as the first layer), and theremaining can of drained cherries.

Whip the cream on high speed with the sugaruntil soft peaks form. Spread over the top of thetrifle.

Top with a dusting of cocoa powder, somegrated chocolate or chocolate curls and maraschinocherries. Refrigerate for about an hour to let theflavors meld or up to several hours ahead.

To make chocolate curls, take a bar of chocolateand warm it for about 15 seconds in themicrowave. Run a vegetable peeler down the side ofthe chocolate. If curls do not form then thechocolate is not warn enough, warm a few moreseconds. Keep cold until using.

Cherry Whoopie Pies1 jar (10 oz.) maraschino cherries1 pkg. (18-1/4 oz.) red velvet cake mix3 eggs

½ cup canola oil1 tsp. almond extract

Filling:1/4 cup butter, softened

4 ounces cream cheese, room temperature1 jar (7 oz.) marshmallow cream1 jar (10 oz.) maraschino cherries, drained

and chopped

Cut 22 cherries in half (save remaining cherriesfor another use). In a large bowl, combine the cakemix, eggs, oil and extract; beat on low speed for 30seconds. Beat on medium for 2 minutes.

Drop by tablespoonfuls 2 in. apart onto greasedbaking sheets. Top each with a cherry half. Bake at350˚ for 8-10 minutes or until edges are set. Coolfor 2 minutes before removing to wire racks to coolcompletely.

Filling: Mix butter and cream cheese untilsmooth; fold in marshmallow cream; fold incherries. Spread filling on the bottoms of half ofthe cookies; top with remaining cookies. Store nthe refrigerator. Makes about 2 dozen

Tie gala was held at Hotel Zoso in Palm Springs on Dec. 4th. Thursday nights private celebrity party was held at the Blue Pear with music by Lola Rossi. Friday was the Registration and Pairing party held at Hotel Zoso where guests and players could meet this years Celebrity Host, Baseballs Hall of Famer, Rollie Fingers’.

The golf tournament was held

at Cathedral Canyon Golf and Tennis Club on Saturday Dec. 4 and Sunday Dec. 5th. Each golfer received a Tee bag full of goodies. Teams consisted of 5 players with a celebrity in each of the 27 teams.

Awards were presented after golf during a buffet at the club house at Cathedral Canyon Golf . Celebrities are from the sports and entertainment world.

The Black Tie Gala started with a champagne Reception and Silent auction. The Silent auction items were varied by golf packages to fine din-ners at local restaurants, Hotel pack-ages and autographed memorabilia to mention just a few. Guests mingled during the reception to talk over the days golf games and renew old friend-ships and make new ones.

A live auction of ten items was followed by a Gala Dinner. This years Scholarship Award winners were an-nounced. A star studded Hollywood type show was next on the agenda. Dancing to the Pat Rizzo Orchestra was open to anyone wanting to dance during the festivities.

The entertainment started with the Showing of the Colors by our local veterans All veterans were asked to come toward the stage to be honored. Oscar nominee Carol Conners came on stage in her Rocky outfit as she was nominated for an Oscar for co-writing the theme song for the Rocky movie… Another of her famous songs everyone knows is: To Know Him is to Love Him.

Entertainment was provided by many other famous singers, Jessie Davis sang some of his most famous songs and was joined in song with Dorothy Daniels Our own vocalist Lola Rossi was followed by Singer/actress Carole Hamption. Virgil Gibson from the Platters sang songs made famous by the Platters and brought back many memories from that era. Pat Rizzo’s Orchestra accompanied all the artists and continued to play for those that wanted to end the eyeing danc-ing to this great band.

T he 13th Annual Holiday Voices Gala was held at Rancho Las Palmas Resort

and Spa on Dec. 3rd, This wonderful Christmas event is a highlight of the season for Eisenhower Medical center. 2 well deserved honorees were given high awards in excellence at Eisenhower Hospital.

Special recognition was given to Honorary Co-Chairs Harry and Joy Goldstein. Harry is a former chairman of Eisenhower and continues to serve as chairman Emeritas and a Director. He has garnered many awards in his career. Eisenhower became one of the top 100 hospitals during his tenure as chairman. He stressed excellence in patient care. With his expertise, the Lucy Curci Cancer Center and Smilow Heart Center were opened along with other expansions at Eisenhower. Joy Goldstein was a major force in Fundraising efforts.

Two Physicians were given the Ei-senhower Medical Center Distinguished Service Award for outstanding Patient care in their fields.

Enrique G. Jacome MD and Robert Waterbor MD,PhD, FACP were chosen by their peers for these honors. These 2 men have exhibited excellent patient care at Eisenhower for many years.

Doctor Jacome is a gynecologist and has received the highest praise for his work in robotic surgeries perform-ing over 200. He is a leader in minimally invasive surgeries and has performed over 1500 laparoscopic surgeries. He is the first physician in Riverside County to

perform Surgery using the da Vinci S-HD robotic system.

Dr Waterbor has been at Eisenhower for over 35 years. He has seen many out standing changes. The explosion of knowledge and precedures is amazing. Dr Waterbor is serving as Chief of the Medical Staff at Eisenhower.

The future for Eisenhower is very exciting. Paperwork has been submitted to make Eisenhower a teaching Hospital by 2013. That could see up to 50 new resident Doctors here. It would be a step forward to bringing some of the top doctors to our Valley. Eisenhower recently opened a new hospital area on campus. Last month two new outpa-tient centers were opened. Eisenhower is known for its quality of care for all patients.

The volunteers were duly honored by all speakers as the foundation for patient care. They staff the hospital and also the Collectors Corner and gift shops. The Eisenhower auxiliary has raised mil-lions of dollars and is the soul of Eisen-hower Medical Center.

Guests were treated to Christmas Carols by The Palm Desert High School Chamber Singers. Entertainment was provided by music from the Pat Rizzo Band.

Vocalist Patricia Welch sang songs from her Broadway performances and also put in her performance some Christ-mas Carols as it is the season for such songs.

The Dennis James Golf Classic held their 15th annual Gala at Rancho Las Palmas Resort and Spa on Sunday Dec. 5th. Golfers and Celebrity players joined in the festivities starting with a silent auction of golf packages, dinners, hotel stays and other items too numerous to mention. The Gala is held prior to the Golf Classic that is held on Monday Dec. 6th at Mission Hills Country Club.

Master of ceremonies was Jim “Fitz” Fitzgerald, Dennis James son, Brad James and Greg Wetmore.

Fitz introduced a UCP center Video explaining what the charity does and who it helps. This moving video showed people that have been and are still being helped. Proceeds from the Gala and Golf Tournament benefit United Cerebral Palsy programs for Children with Developemental Disabilities. The charity is for all children with disabilities including Autism, Down Syndrome and many other physical and mental disabilities. Their motto is Life Without Limits for each client.

State funding was cut for many programs of UCP. With continued support UCP will be re-opening 3

after school programs suspended last year. State budget cuts have hurt so many charities that it is heartening to see People with big hearts helping by attending these events. These fundraisers are so extremely important in todays economy to keep the necessary benefits they provide alive.

Dennis James was a Television Pioneer. He hosted the first telethon for UCP in 1950. He continued with the telethon for 45 years and would have continued even longer if he could have. He passed away in 1997 and his wife Micki has continued to support this cause.

Entertainment was provided by the one and only Peter Marshall. He told us how he got started in show business at age 14. He was started in the business by none other than Al Jolson. He reminisced about his career and all the famous people that he met and those that helped him during his career. He sang songs from his era and some that were made famous by friends. He thrilled the guests with his renditions of these songs for over an hour. He is a true Celebrity.

Davis Gaines made an audience at the Annenberg Theater jump to its feet several times at his concert on November 27. I wished I felt the same.

In his opening number, “Hey, Look Me Over” from the Broadway musical “Wildcat”, Gaines walked offstage to greet members of the audience seated in the front row. When he took his microphone away from his mouth and I could not hear him, I felt like saying, “Hello! What about the rest of us not in the front row?” From that point forward, he lost me.

Gaines, the tenor best known for having played over 2000 performances in the title role of the Andrew Lloyd Webber musical, “The Phantom of The Opera” has a powerful, rich voice. It would have better served him to hit more than one note with it. Every song started out light, got very big when the key modulated, then finished on a light note. That’s good for one or two songs, but can’t possibly carry a performer through an entire concert.

Also, my date for the evening turned to me mid-concert to exclaim what a relaxing voice Gaines has. Next time I looked at my date, he was fast asleep.

Gaines’ patter in-between songs came across as forced and unnatural. A couple of times it seemed as if he had flubbed his lines. The spotlight on him throughout the performance cut him off at the knees. He has a youthful appearance, but his black suit blended into the dark background so much that it was difficult to tell where he ended and the background

began. He kept on asking his sound-man for “more of me”, meaning he wanted to hear more of himself out of the monitor speakers at the foot of the stage. I wished he had been more concerned with being himself then he was with hearing himself. A conceited, inward turned version of the Lerner and Lowe classic, “If Ever I Would Leave You” from “Camelot” didn’t help matters much.

I believe this one-note style of singing is indicative of an unspoken “epidemic’ in the Broadway community these days. An actor originating a role winds up being the paradigm for the actors who follow. If you play “Elphaba” in “Wicked”, it’s fine if you sound like Idina Menzel. If you play the “Phantom”, sounding like Michael Crawford wouldn’t hurt.

I have trained with a singing teacher for 10 years, one of the best in New York City. The first time she heard me sing in someone else’s style, she stopped me. She informed me that it is never going to be the way I think it is going to sound. She always taught me to sing in my own voice, no matter what the song or who originated it.

The evening was not without it’s high points. An exceptional three-piece combo featuring his Musical Director, Carol Anderson on piano, backed up Gaines. They are exceptional musicians, engaging and

thoroughly enjoyable. The arrangement Ms. Anderson wrote for “The Music of The Night” from “Phantom” was by far the best rendition of the song I have heard. Mr. Gaines’ performance of that song was the highlight of the evening.

I look forward to hearing Mr. Gaines perform again sometime in the future, though I hope he does not put my dates to sleep. That’s my job.

Marvelous Mushroom Cups

Get your holiday dinner off to a great startwith an easy-to-make mushroom cup

appetizer that’s sure to please.Makes: 16 cups

Prep Time: 15 minutes • Cook Time: 25 minutes

8 Sister Schubert’s Dinner Yeast Rolls,defrosted

6 tablespoons melted butter, divided4 scallions, chopped finely8 oz. mushrooms, chopped finely8 oz. plain cream cheese

Salt and pepper, to taste2 tablespoons chopped parsleyPreheat oven to 350 degrees F. Lightly mist two

regular muffin tins with non-stick spray.Slice Sister Schubert’s Dinner Yeast Rolls in half

horizontally. Gently press each piece with palm ofyour hand to flatten. Using your fingers, line sidesof each muffin cup, with each roll, to create a smallbread cup. Brush “cups” using 3 tablespoons meltedbutter. Bake 8 to 9 minutes or until golden. Remove“cups” from pans and transfer to a wire rack tocool.

For filling, add remaining butter and scallions toa skillet and sauté for 3 minutes. Add mushroomsand sauté until all moisture is evaporated; removefrom heat. Stir in cream cheese, salt, pepper andparsley. Fill “cups” with warm mixture and serve.

Flavorful Garlic Shrimp ToastThis tasty toast, which offers a mouthwatering

blend of garlic and shrimp, makes a great-tastingcomplement to your family’s favorite holiday meals.

Serves: 10

Prep Time: 20 minutes • Cook Time: 15 to 20 minutes

1 bag Sister Schubert’s Dinner Yeast Rolls(10 rolls), thawed

6 tablespoons butter, softened1 teaspoon salt1 tablespoon fresh chopped garlic1 teaspoon fresh chopped tarragon or ¼ teaspoon

dried1 tablespoon hot sauce2 tablespoons chopped parley11⁄2 pounds (32-37 count) raw shrimp, defrosted

and drainedPreheat oven to 350 degrees F. Line a baking sheet with

parchment paper.Cut top third section off each roll. Save lid. Scoop out

center from each roll and transfer bread pieces to a bowl.Crumble bread pieces.

In a large mixing bowl, combine butter, salt, garlic,tarragon, hot sauce and parsley. Spread some of the buttermixture into each hollow space. Fill each opening withshrimp and sprinkle tops with 1 tablespoon breadcrumbs.Spread remaining butter mixture on shrimp and top eachwith bread lid. Wrap each roll in aluminum foil. Place on abaking pan and bake 10 minutes. Unwrap each roll andbake 4 to 6 minutes or until shrimp are cooked thoroughly.Serve warm.

and set aside. In a small bowl, combine rum and raisins and set aside. In a bowl of an electric mixer, add egg yolks, egg and 1/4

Transfer mixture to a large bowl. In abowl, whip heavy cream and remaining 1 tablespoon sugaruntil thick. Fold whipped cream into egg mixture.

To assemble dessert, dip half of roll pieces in espressoand place into an 8 x 8-inch baking dish. Sprinkle with halfof raisins and cover with half of Mascarpone mixture andspread into an even layer. Repeat layering process and dustwith cinnamon. Cover with plastic wrap and refrigerate forseveral hours or overnight. Serve chilled.
