6 egg yolks, well beaten

"2 cup bo i l i ng water

1 teaspoon lemon juice

Sift flour once, measure, add bak-

ing powder, and sift together three

times. Add sugar gradual ly to egg

yolks, then add water, beat ing

constantly. A d d flour gradual ly

and beat wel l . A d d lemon juice.

Bake i n two ungreased 9-inch layer

pans in slow oven 25 to 30

minutes. Put layers together w i t h

lemon coconut filling. Dus t top

of cake w i th powdered sugar.

£ cup sultana raisins

£ cup butter

5 egg whites stiffly beaten

Sift flour once, measure, ad<J

bak ing powder and salt, and sift

together three times. Sift J cup

flour over a lmonds and fruit and

mix thoroughly. Cream butter

thoroughly, add sugar gradual ly,

and cream together unt i l l ight and

fluffy. A d d remain ing flour to

creamed mixture, a small amount

at a time, beat ing after each addi-

tion unti l smooth. A d d coconut,

floured nuts and fruits and flavour-

ings. Fold in egg whites. Bake

in greased, paper-lined loaf pan ,

3 x 4 x 8 inches, in s low oven

1 hour and 30 minutes. Makes

i f lbs. fruit cake. For larger cake

doub le recipe and bake in greased

paper-lined angel food pan for 2

hours.

How To Toast Coconut

Spread "Desikoko" in a thin layer on baking dish

or sheet. Place in a hot oven and toast until coconut

is a golden brown, stirring frequently and taking

care that it does not burn. Toasted "Desikoko" has

a delicious flavour, and may be used for sweet

making, as topping on cake icings or meringues, or

as a garnish for puddings, ice creams and other

desserts.

Sift flour once, measure, add bak-ing p o w d e r and soda, and sif t to-

ge ther three times. Cream butter thoroughly , add sugar gradual ly , and cream together unt i l l ight and fluffy. Add egg yolks, chocolate, and coconut, then flour alternately wi th milk, a small amount at a t ime. Beat af ter each addit ion unti l smooth . Add vanil la, fo ld in egg whi tes . Bake in two greased 9- inch layer tins in slow oven, 25 to 30 minutes . D o u b l e recipe to make three 10-inch lay-ers. W h e n cool, spread Coconut But ter Fros t ing between layers and on top of cake.
