When Thomas Ky
decided to open a
Japanese-style
restaurant on the site of a
former Chinese restaurant
in Kapolei, he changed the
business pattern he’s em-
ployed for more than 20
years.
Best known for his chain,
Assaggio, where a value-
driven menu of American-
Italian food has inspired a
strong, loyal following, Ky
chose to open Yellow Fin
Sushi last March.
What first impresses
when you enter YFS is the
décor. Contemporary, sleek
and in a bold color scheme
of yellow ochre, purple and
burnt sienna that projects
a confident air, the restau-
rant has an appealing ambi-
ence.
I recently sat down with
Ky to chat about his 20
years of restaurant experi-
ence, why the economy in-
spired his decision to open
YFS, and the business phi-
losophy that keeps him —
and his staff — opening
new restaurants, even dur-
ing tough economic times.
JJMM:: I have to ask you
first about the color
scheme and the design of
the restaurant. It’s unrecog-
nizable as its former Chi-
nese restaurant space.
Who did the design?
TThhoommaass KKyy:: I did. I love
color and design. I’ m a
cook, so I enjoy putting dif-
ferent colors together. I like
the flow of the restaurant. I
enjoy design. I’ m glad you
think the colors match
well. It’s contemporary, a
little Asian, I think …
JJMM:: Tell me about your
decision to change your As-
saggio model — which is
reasonably priced, Ameri-
can-Italian food — to this, a
contemporary Japanese
restaurant.
TTKK:: Well, the Chinese
restaurant that was here
wasn’t doing well, but I did-
n’t want to close the
restaurant and put all of
the staff out on the street.
So many people are losing
jobs right now. I just didn’t
want to do that.
By creating a new restau-
rant, I can hopefully keep
this staff working and,
hopefully, the economy will
turn around sometime
soon.
JJMM:: You have a very un-
usual approach to your
staff, as you encourage
them all to own restau-
rants.
TTKK:: Yes, all of the Assag-
gios — there are six of
them now — are partly
owned by our employees.
When they have been with
us for five years, and when
they know the business, we
open a new restaurant and
offer them a partnership.
Of course, many times they
don’t have any money, but
we believe in them and we
want them to do well.
JJMM:: OK, so why a Japan-
ese restaurant this time
around?
TTKK:: Well, I like Japanese
food. It’s the only kind of
food I eat when I go out.
And I also believe that peo-
ple are concerned more
with their health and more
with eating well nowadays.
The menu here at Yellow
Fin Sushi offers a lot of
smaller portions if you
want them, and fresh,
healthy ingredients that are
grown locally.

our cook goes to the mar-
ket and chooses it himself
every morning — and a
lot of the vegetables and
produce are locally grown
or organically grown.
JJMM:: What are some of
the things on the menu
that you’d recommend to
people coming for the
first time to Yellow Fin
Sushi?
TTKK:: Well, I wanted to
keep the menu simple, to
make it healthy and to
keep it popular and con-
temporary. And to also
make sure that for lunch
there were a lot of quick
options. There are a lot of
combo plates at lunch,
which are good. The but-
terfish is good. It’s mari-
nated for four to five
hours, and it’s tender and
moist. People seem to re-
ally like it. And we have
sushi rolls and the kind of
Japanese dishes that peo-
ple will recognize and ex-
pect from a casual
restaurant of this kind:
chawanmushi, teriyaki
chicken, udon noodles.
JJMM:: I really enjoyed the
tempura. It’s light, clean,
crisp and with good fla-
vor.
TTKK:: Yes, we change the
oil every day, of course,
so it always has that
fresh, clean taste. The
idea is that I want to make
healthy food and I want to
make food that people can
afford. Yellow Fin Sushi is
reasonable and it carries
the Assaggio style of good
value with hopefully a
good atmosphere.
JJMM:: What’s the signa-
ture dish at Yellow Fin
Sushi?
TTKK:: I think the cooks
would tell you that the
steak is very good. It’s a
New York strip that’s re-
ally different. There are
mushrooms on top with a
creamy wasabi sauce, and
it’s one of the dishes that
our guests really like. Af-
ter the first bite, you
sense the wasabi.

Sushi Izakaya Gaku isone of those eaterieseveryone seems to
want to experience. Patrons — which include
many of the island’s topchefs — flock to its cozyconfines on a nightly basis,basking in the warmth ofthe South King Streetrestaurant. Upon enteringthe establishment with theoversized front door, cus-tomers immediately noticethe jazz notes and lights,which are muted — lendingto the intimacy of the loca-tion’s six tables and 13-seatsushi bar.
The ambiance createdby chef/owner ManabuKikuchi is admirable, butit’s the savory delights thatkeep everyone comingback for more.
Oysters ($18.50) are ahot ticket, served up in aponzu sauce and toppedwith spicy radish. Theirfreshness is readily appar-ent and the radish givesjust the right tinge tomarry it to the citrus notesof the ponzu.
For sushi, there are Kin-medai and Golden EyeSnapper ($8.50), as well asthe highly sought-after
Seared Toro with garlic.The latter is prepared witha delicate touch and just ahint of garlic so that thetenderness of the fattytuna isn’t overwhelmed.
For those interested in a“salad” course, there isRock Fish Carpaccio($14.50). Served with freshchopped red onion in a gar-lic ponzu sauce and toppedwith tobiko and thethinnest of slices ofjalapeno to give it a bit of akick, this dish is simple, yetdelightful.
The flavorful Baked KingCrab ($12.50) is another
popular choice. The crab issteamed, then mixed withmayonnaise, tobiko andgreen onions before it’s fi-nally baked in its shell.When served, the dishcomes in three pieces andis utilitarian in presenta-tion.
Finally, there is the SpicyNegihamachi Tartar($9.50), served in Gaku’soriginal spicy sauce andtopped with a raw quailegg. Mix it yourself, ladle itonto the nori provided, andexperience the flavor of thehamachi as it burststhrough.

• Preheat your steamer at high
• On a steamable plate, pour veg-etable oil and lay fish down. This willprevent the fish from sticking to plateafter you steam.
• Add ginger, oyster sauce, sesameoil, shiitake mushroom, Scotch-whisky , black pepper and greenonion, then steam for about 10-15minutes.
• In a sauté pan, cook the bacon until
it turns crisp (no need to add any oil,as the bacon will release the oil by it-self), then add garlic, chives and 2 ta-blespoons of chicken stock or hotwater. Cook for a minute or two (oruntil the chives are cooked).
• Before serving, remove the whitepart of green onion and ginger, andtop with sautéed chive and bacon.
• For the green onion, cut in half be-tween the white and green part. Usethe white part for steaming on top of
the fish, then slice the green part andput aside for garnish later.

owners Fred and Cheryl DeAngelo have

“The great thing aboutbeing on wheels is that youcan move locations,” saysSagaran, who hopes hisplans to broaden the reachof Indian food will encour-age the growth of otherquality Indian restaurantsin Hawaii. “Some people
have no idea what this foodis, so we present it in an at-mosphere that’s affordableand let them try the fla-vors.”
And if you still think of In-dian food as spicy, thenyou’re missing out on someincredible dishes.
“A lot of our dishes arecurries,” says Sagaran,“but not the Japanese kindthat many people are usedto. Our curries have manydifferent flavors, and theycan be extremely mildwith almost no spicinessat all.”
On the lunch wagon atDon Quijote are dozens ofdishes that have proven tobe best sellers at the origi-nal India Café at KilohanaSquare. Among the mostpopular is a South Indianchicken curry served withjasmine rice and sides ofvegetables, salad and araita (yogurt and cucum-ber) dressing.

Little restaurantbegan as a market
When Patrick Changlaunched the originalBangkok Chef in Nuuanu,the start-up was done al-most as an afterthought.
“We opened it as a pro-duce market with no
restaurant in mind,” he ex-plains. “We were sellingfresh, locally grown pro-duce as we have lots offarmer friends and somefamily farmers in Waianaeand North Shore and Ewaand the like. So we wantedto sell their produce, and atthe same time we also soldingredients for Thai food.Then, I met my wife, whowas a great cook, and thenwe thought, ‘Why not opena Thai restaurant?’”
One table eventuallyturned into two, whichturned into a small restau-rant with no room left for
the produce store. Today,the popular Thai restauranthas a new location inManoa, serving quality, yetinexpensive food to a loyalfollowing.
