Don't Waste, MutateA taste of speculative gastronomy
Nico Soballa - Corey McLaughlin - Ágota Vonya Annestina Anthony - Naomi Swagten
Mutating Statistics
“ It takes the same amount of water to produce one kilogram of beef as one year worth of showers (15.000 litres of water).”
“One-third of the food produced world-wide is wasted”
“In Denmark alone, we each year waste 700,000 tons of food that could have been eaten.”
Make people aware that we cannot continue wasting resources as we do nowadays. This can result in many changes and “mutations” which would change our lives radically and disrupt our surroundings forever.

A Taste of the Future
The participants choose their favourite ingredients
A participant shouted after calculating the water of the taco dish: “Wow, that’s a lot.”
13/11/19
They create world-famous dishes
By calculating the amount of water, they become more aware of the water needed for production
Discussing which mutations would happen to the food of the future
This team decided against mutation because they are afraid of the bad consequences

Sour, Sweet and Salty
Adding flavours
The added sugar improved its’ taste
It has a jelly-like texture which floats on my tongue, and once I take a bite, I taste a splash of water.
Ingredients of Mutation
Baking the strings
Add some creamto modify the genes
Baking the DNA cookies
Add jellies on DNA

Printing DNA Cookies
A cookie dough paste recipe from byFlow
18 - 19/11/19
Elzelinde van Doleweerd, who has a 3D food printing company, suggested us to pick an end and a start in the 3D file.
The recipe turned out to be a little bit too dry, so we added some water to make it more fluid.
Brushed dough on, to make it sticky
Difficult to get cookie off the plate
Although this process is very appealing, the cookies were not consistent and broke easily.
It would not stick well
Mixing ingredients19/11/19
Mutations and it’s consequences for each role
Narrating 2121 and its food experience
Aqua Lessarice - Uses less water to grow
Narcissuroxide - Makes it look perfect
Engorgio Incomonate - Increases yields
Enduro Maxima - Longer lasting
Mortus Gonamo - Resistance to disease
Clark Kentoxide - Super seed, increases vitamins and nutrition
Water is scarce
So there is a need to mutate food
There is general unrest surrounding new foods and
their health implications
Hunger has increased among the poor
Small scale and organic farming is no longer possible
Most foods are considered luxury items now
The rich can afford perfectly balanced meals which they
3-D print at home - the ultimate status symbol
Because of this: eating is more of a social activity
than ever before
Farmers rely solely on the seed company to sell them mutated
seeds.
The global government is threatened by the power the seed company is now gaining Posting photos of your food on
social media platforms acts as a social currency.
Food in the year 2121
Narrating 2121 and its food experience
Farmer - wants more yield
Consumer - perfect looking food
Supermarket - longer lasting food
Seed company - sell their seeds to the farmers
Eu - lessen the water footprint
Facilitated Mutations
The participants think of mutations, based on a role
They keep track of the mutations by drawing the shapes next to their names
The company focussed on making food look goodwhile it made less profit

Provided information about 2121
Limiting the amount of mutations to be selected to 3 provoked a discussion of the most relevant ones.

Reflecting & Speculating25/11/19
Provide more information about 2121 to make a more informed decision on whether or not mutations are the step forward.
Make use of the surprise element of the first workshop, in which we had the amount of water written on the back of each token.
Include a more in-depth discussion about what we could do today to make mutations more widely accepted, and if mutations will provide a bright future.
Guide the participants into the room and provide them with information so they can start thinking about it before everyone has entered the room.
