Zucchini Stir
Fry with
Black Bean
Sauce
Ingredients
1 tablespoon vegetable oil
3 to 4 (500 g) zucchini , seeded and
sliced
2 tablespoons fermented black beans
2 cloves garlic, crushed
1 tablespoon Chinese cooking wine
1/2 tablespoon vegetable oil
1 teaspoon light soy sauce (or soy sauce)
1/2 teaspoon sugar
1. Rinse the fermented black beans with tap
water, drain, and transfer to a bowl. Use the
back of a fork to smash the beans. Add
garlic, cooking wine, light soy sauce, and
sugar. Mix well.
2. Cut zucchini in half lengthways. Remove seeds and slice thinly. Heat oil in a large frying pan over medium high heat until hot.
Add oil and swirl the pan to coat well. Add zucchini. Cook and stir for a minute to coat the zucchini evenly with oil.
Add the black bean sauce (or two
tablespoons pre-made black bean sauce).
Stir and cook until the zucchini is just cooked
through, but not too soft. Carefully taste the
zucchini.
Adjust the seasoning by adding
more pre-made sauce (or salt), if necessary.
3. Serve warm as a side.
