Belgian Blues are Your Future! The Belgian Blues -“The Ultimate Beef Machine” which is “The Beef Solution” – a healthy
beef for a healthy lifestyle, what a positive for the American consumer - the philosophy the
Belgian Blue beef industry. This issue of the Belgian Blue Journal is a way to reintroduce the
great potential of the breed. Many breeders have been pioneers with goals of a leaner and
healthier beef production. Where would we be without their desire to do to be better? Now it
has come full circle for these breeders as we now are seeing the demand for locally produced
healthy foods. Our hats off to those breeders who have tirelessly strived for that lean product!
In the beef industry Belgian Blue crossbreds are a nice way to fill that lean beef demand!
Healthy eating with a healthy lifestyle is being demanded on many arenas from consumers
purchasing natural quality foods to the health care industry. The federal government and the
White House promotes healthy foods for our youth but the federal grading system and pricing
is still based on marbling as well as color dominance in the sale barns. We are ahead of the meat
industry. We are making a difference. It is interesting that as I travel, see information and visit
with breeders from various countries including Europe, South America, Australia, Hungary
and New Zealand - these countries are producing lean beef for their citizens with efficiency
of lean healthy meat, high dress out percentage, and higher rate of gain. They are breeding
Belgian Blue crosses for their goals. These countries have a great insight with global health and
efficiency not color. Does the average consumer know what the hide color it is when grilled or
is this important? There are good cattle in every breed and each breed should be assessed for
their individual qualities not penalized. The feds and beef industry have a responsibility to the
American consumer by doing what is right and be open minded not guide by a choice few. The
goal of each Blue breeder is to do what is right – a quality lean healthy product - the inside
packages not the outside cover. As a butcher at the USDA Meat Research Center stated when I
attended the seminar on the Blues said “I can’t believe the quality of these animals – this is the
way to go” which has played in my mind for many, many years. Lean beef is the way to go for
everyone’s health and more importantly it is the right thing to do for the health of our citizens
across this great land. This breed can change a commercial herd very quickly to a uniform lean
operation. As a Hereford herdsman judged a Belgian Blue county show in Missouri said of a
neighbor using a Blue bull on his commercial herd “Talk about changing a calf crop to the
better over night! I was impressed.” Belgian Blue breeders are pioneers and continue to have the
foresight of a healthy quality premium beef for the American consumer. My hope is that each
consumer will research the healthy aspects of this breed and support the breeders that bring
the very best for anyone looking to improve their lean meat consumption. We have a positive
product to give the consumer and being positive is contagious. We are doing right by the
consumer being lean pioneers!! Give these insightful pioneers a chance – you will be pleased!!

Belgian Blue Beef Breed History, Facts, & Info!
As the name implies, Belgian Blue Cattle originated in the small European country of Belgium. While today Belgian Blue cattle are their own fullblood registered breed, their roots can be tracked back well over a century to a crossing of Durham Shorthorns and Friesian cattle.
Initially the Belgian Blue was developed, as most European cattle are, for their use as a dual purpose breed or, more simply, for both milk production and meat production. For most of the early to middle 1900s the breed tried to exist in the dual role. However, even at this early stage of breed development there was an increasing movement among many breeders to develop cattle of a more ‘meaty type’. Following the second world war, a liberated European economy quickly demanded an increased quality and quantity of meat, particularly those cuts of high retail value. This economic demand accelerated the development of Belgian Blue cattle in a more heavily muscled direction.
Finally, in 1974, the breed was divided into two branches, one for continued use as a dual purpose animal and the other exclusively for meat production. The vast majority of breeders concentrated their efforts on breeding the Belgian Blue for beef production. Today we see the result of the 150 years of work in the modern Belgian Blue. An animal that is structurally correct and sound, docile in temperament, fertile in breeding, and above all the ultimate beef machine.
General Characteristics of Belgian Blue Cattle: Extraordinary muscle development Early maturity Uniformity Docility Short gestation length One of the highest yielding carcasses (meat 80%, fat%, bone 12%) with a killing out percentage of 68%-72%. Great tenderness of the meat due to the thinness of the muscle fiber Higher percentage of quality cuts More quality cuts in the forequarter

The Belgian Blue breed is hardy and adaptable to a wide range of terrain and climates. They prosper in the bitter Canadian winters, as well as the hot Texas summers. The characteristics of the breed allow the production of crossbreds of the best possible conformation.
Belgian Blue Beef Breed History, Facts, & Info!The Belgian Blue crossbreds show 16% less marbling and 14.2% more ribeye area than the average carcass. USDA at the Meat Animal Research Center at Clay Center, Nebraska.
Why would I want to produce 20% more meat from my calves? A 1200 pound live weight feeder calf will have a dressing % of 60% or less from most cattle breeds but the Belgian Blue crossbred calf will have a dressing % of 64% or more. That is at least 48lbs more meat hanging on the rail before processing. About 63% retail cuts will be produced from most of the other breeds but the Belgian Blue cross will produce at least 71%. All these numbers equal to 92lbs more eatable meat from a Belgian Blue Crossbred calf or if you put an average price of $4.00 per pound for the meat that is $288.00 more money. Why would I want to produce more meat with 12% less feed?The average feed conversion for one pound of gain on an average feeder calf is slightly over 8 pounds of feed. The average for a Belgian Blue crossbred calf is slightly under 7 pounds of feed per pound of gain. That equates to over 12%. Basing this ratio on feeding a calf from 600 pounds to 1200 pounds, you would use at
least 600 pounds less feed for the Belgian Blue crossbred calf. With feed being at $260 per ton that is $46.20 you would save. Why eat a Belgian Blue Crossbred Rib Eye Steak?A Belgian Blue crossbred calf has a tenderness score, a flavor score and a juiciness score that is equal to or higher that certified Angus beef or Herford beef yet much higher in moisture and protein than any other breed. The Belgian Blue crossbred also has much less fat and cholesterol than a skinless Chicken breast. That may not be more money but it is much better health wise. Ask yourself, what is my families health worth!

Breeding QualitiesThe Belgian Blues are a hearty breed. Herds are thriving in hot and dry Texas as well as in bitter cold Canada. The average calving age is 32 months although with intensive production herds, calving can begin as early as 25 months. The gestation length is 282 days with a suggested calving interval of 13 months. The average birthweight is 96.8 pounds for a Belgian Blue and 79.9 for a crossbred calf. The Belgian Blue, a moderately framed animal with a rounded outline, possesses extraordinary muscles. The shoulder, back, loin and rump are heavily muscled. The back is straight, rump is sloping and the tail set is prominent. It has fine but strong legs and can walk easy. The coats can be white, blue roan or black. The breed is known for its quiet temperament. Adult fullblood bulls can weigh an average of 2750 pounds, while females can have an average of 1650 pounds.

2009 Premier Breeder - JSH Blues, James and Sharon Hunt In 2009 the title of Premier Breeder was earned by JSH Blues, owned and operated by James and Sharon Hunt from Walnut Grove, Missouri. The Hunts first discovered Belgian Blue Cattle in 1999 in Central California at a local county fair. After further research on the Internet and learning about the health benefits of these cattle for today’s health conscious consumers, the Hunts began their Belgian Blue adventure for their beef business and for their own needs for a healthy beef product. An instant success with positive response from their customers. Business became too busy for their small operation and limited time while working full time jobs. Their love of Belgian Blue Cattle took over and subsequently they migrated to the Midwest to be more centrally located with breeders and sanctioned shows for their new love, showing their Belgian Blue Cattle. After just four years showing Belgian Blues, the Hunts have proudly bred and produced several Champion and Grand Champion heifers and bulls with the goal of continuing the traits of this wonderful breed of cattle and introducing more of America to a healthier beef choice. Now maintaining a herd of 130+ head of percentage to fullblood cattle, the Hunts would be more than happy to help new and existing breeders of all types to grow and expand this wonderful breed of cattle.
