(maybe even a 1/2
cup). Every
Thanksgiving and
Christmas I make
these pies for
family and
friends. I guess I
have become the
Pecan Pie Elf.
1 (9-inch) unbaked pie crust
36 individually wrapped caramels, unwrapped
1/4 cup butter
1/4 cup milk
3/4 cup sugar
3 eggs
1/2 tsp. vanilla extract
1/4 tsp. salt
1 cup pecan halves
Preheat oven to 350. In a saucepan over low heat,
combine caramels, butter and milk. Cook, stirring
frequently, until smooth. Remove from heat and set
aside.
In a large bowl, combine sugar, eggs, vanilla and
salt. Gradually mix in the melted caramel mixture. Stirin pecans. Pour filling into unbaked pie crust.
Bake in the preheated oven for 45 to 50 minutes, or
until pastry is golden brown. Allow to cool until filling
is firm.
Makes one 9-inch pie.

Cookies:
1/2 cup sugar
1/6 cup butter*
1/6 cup coconut oil (shelf solid kind)*
1 egg
1/2 cup unsulfured molasses
1/2 cup water
2 cups flour
1 tsp. ground ginger
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. ground cinnamon
*You may substitute 1/3 cup shortening if you prefer
Mix the butter and coconut oil together, then mix
with the egg, molasses and water. Stir in the remaining
ingredients. Cover and refrigerate 1 hour. Heat oven to
375.
Drop dough by rounded teaspoonfuls about 2-inches
apart onto an ungreased cookie sheet. Bake until
almost no indentation remains when touched, about 7
minutes. Immediately remove from cookie sheet. Cool;
then frost with cream cheese frosting. Yield
approximately 4-dozen cookies.
Cream Cheese Frosting:
1 to 1-1/2 Tbls. cream cheese, softened
3 Tbls. butter, softened
1 cup, plus 3 Tbls. confectioners sugar
1/2 tsp. vanilla extract
1 to 2 tsp. lemon juice
Mix all ingredients together well and then frost the
cookies.

3/4 cup pecans
Cream butter, sugar, eggs and vanilla. Beat bananas.
Combine butter mixture, bananas, flour, salt, baking
soda and pecans.
Pour into greased and floured pan. Bake at 350 for
40 to 60 minutes.

As a young girl in Lebanon, Mo., I watched my
grandmother and my great-aunt turn out amazing pies
in their tiny, tiny kitchen. Not only did they bake for
Thanksgiving and Christmas, but every Sunday after
church I couldnt wait to see what cobbler or pie they
would have cooling on the kitchen window sill. I onlyhope that my family appreciates my pies as much as I
loved theirs. And I hope my children will carry on the
family tradition of pie baking, because its more about
the love than it is the pie.
OK, I love all things lemon. And I love meringu
obviously I love this pie. So does my husband, and
our family. So I thought I would share the recipe.
First, credit goes to the Mustard Restaurant
cookbook. Most of this recipe came from there, wit
few adjustments. It is a great cookbook, by the wa
I kind of cheat and use frozen pie crust! (My
grandmother would not be pleased.) Put a cookie s
in the oven and preheat to 400. I get deep-dish fro
pie crust and let it sit out for 5 to 10 minutes, thenprick the bottom and sides with a fork.
As you put the pie crust in the oven, you should
assemble the filling.
Filling:
6 eggs
1-1/2 cups sugar
Juice of 4 large lemons (about 2/3 to 3/4 of a cup)
1/2 cup whipping cream
1 Tbls. lemon zest
Zest and juice lemons. Whisk eggs with sugar.
in lemon juice and add whipping cream. Then pou
through a fine strainer into a pitcher or large
measuring cup/pitcher. Stir in lemon zest. This wi
very liquid.
By now the pie crust should have baked about
minutes. Open the oven door and pour the filling l
right into the pie shell. Reduce heat to 325 and bafor 35 to 40 minutes, until center is set but not firm

When it is near the time you want to serve, ma

Meringue:
6 egg whites
1/4 tsp. cream of tartar
1 cup of firmly packed brown sugar
1/4 cup water
Place the brown sugar with a 1/4 cup water in
small heavy saucepan. Turn it on high. Using a ca
thermometer bring it to about 230. Begin whippin
egg whites and cream of tartar with balloon whisk
attachment. When the candy thermometer reache
245, remove from heat and begin to pour in a thin
stream into egg whites (which should be slightly th
and foamy at this point). As the egg whites begin tsteam, pour faster, and continue to whip until soft
firm peaks form. Then place this mountain of meri
on the pie and brown with torch or in oven under
broiler. Be careful! Dont let it burn. Dont take you
eyes off of it.

Chopped nuts
2 loaves frozen bread dough
1 package butterscotch pudding, not instant
1/2 cup butter
1/2 cup brown sugar, packed
Butter an angel food cake pan. Sprinkle chopped
nuts in the bottom.
Slice two loaves of frozen bread dough into 1-inch
pieces and arrange in pan. Sprinkle package of
butterscotch pudding over the frozen bread (not
instant).
Boil 1/2 cup of butter together with 1/2 cup of brown
sugar and pour over frozen bread. Let rise.
Bake at 350 about 35 to 40 minutes. May be
prepared the night before and served for breakfast.

My family loves these brownies. We make them everyholiday season and on special occasions. If you come to
our home you will find the ingredients on hand so we
are ready to make our guests feel special and enjoy this
fabulous treat. I always get requests for this recipe after
our open house. After a large holiday event you will find
the leftovers in our fridge with a small knife ready so we
can have a quick little bite of our favorite holiday treat.
This looks like a lot of steps but they go fast and are
well worth it!
Part 1 Bottom Layer
Brownie box mix Make according to box directions.
Do not over bake.
Part 2 Middle Layer
Beat together: 3/4 of a stick of margarine, softened
2 Tbls. of instant French vanilla pudding
Couple tablespoons of cream cheese
Then gradually add, while beating, 2 cups of
powdered sugar
Optional: Add a bit of holiday food coloring if you
want it to be a bit more festive.
Beat middle layer until smooth.
Spread middle layer on cooled brownies. Then
refrigerate for awhile.
Part 3 Top Layer
Melt together 2 Tbls. margarine and 1/2 cup
semisweet chocolate chips.
Spread on top of cream cheese layer and cool in the
refrigerator.
Keep all refrigerated until serving. Small portions
are fabulous!

When my two oldest children were in college, I wou
send them a care package in the fall. I would send
various favorites, muddie buddies, chocolate chip
cookies, cocoa mix and a loaf of spiced chocolate ch
pumpkin bread. After receiving their package they
would give an obligatory thank you for the other go
in the box, but it was the pumpkin bread that was
most treasured and looked forward to by themselve
roommates and friends. By their third year of colle
I was requested to send two loaves of bread, one fo
them and one for their roommates that college
education was starting to pay off.
1-1/2 cups of sugar1-1/2 cups of brown sugar
3 eggs
1 cup vegetable oil
1 (16-oz.) can of solid pack pumpkin
3 cups flour
1 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
1 cup chocolate chips
Heat oven to 350. Butter and flour two 9x5x3
loaf pans. Beat sugars and oil in large bowl to blen
Mix in eggs and pumpkin. Sift flour, cloves, cinnam
nutmeg, baking soda, salt and baking powder into
another large bowl. Stir in pumpkin mixture in twadditions. Fold in chocolate chips.
Divide batter between two pans. Bake until cen
comes out clean, about 1 hour. Let stand 10 minu
then turn out loaves onto cooling rack to cool
completely.

empty fast food bags in recycle bins
throughout St. Louis with my fingerprints on them to
prove it. The closest I get is a hamburger or pork steak
on a BBQ grill a couple of times in the summer. I just
throw those on and burn em smothered in BBQ sauce whatever brand is in the fridge at the time. I may dilute
it with a little beer (is that a secret recipe?).

Every year wed travel over the Meramec River and
through the Kirkwoods to hang out at Grandmas house,
a tiny abode filled with porcelain figurines and pristine
furniture. Shed fill us with hard candy, cold Fresca,
and her famous Super Messy Chocolate Crunchy
Christmas Wreaths. Except for the small fire incident,
I dont remember my brother and I ever making a big
mess. I guess she really loved us. Thanks Grandma!
Heres what youll need
1 (11.5 oz.) bag of chocolate chips, semi-sweet, milk
or dark chocolate
1 cup of cornflakes cereal, any brand
A double-boiler pan (or any method of melting thechocolate)
Accoutrements (thats fancy talk for sprinkles, red
hots or whatever floats your boat)
A chimpanzee wearing a funny hat and lederhosen to
lick the pot. OK, thats no longer appropriate. A
small child wearing a funny hat and lederhosen will
work just fine.
Lots of wet wipes
Heres what youll need to do
Melt the chocolate in the double boiler
Once the chocolates melted, pour in the cornflakes,
stir and mash
Scoop out heaping tablespoons and plop on a baking
sheet or wax paper
Use the handle of your spoon to make a hole in the
middle of your chocolate blobs
Add accoutrements
Store in a cold place to harden Lick the double boiler
This method makes about 10 wreaths. Watch out;
they melt in your hands, not in your mouth. Happy

Cake:
1 package (2-layer size) devils food cake mix1 package (4 serving size) chocolate instant pudding
Frosting:
1-1/2 bricks cream cheese (12 oz. total), softened
1/2 cup butter, softened
1-1/2 tsp. vanilla
6 cups powdered sugar
2 cups Cool Whip whipped topping
4 squares Bakers Premium 70 percent Cacao Dark
Chocolate
Heat oven to 350. Prepare
cake batter and bake as
directed on package for two (9
inch) round cake layers,
blending dry pudding mix into
batter before pouring into
prepared pans. Cool 10
minutes. Loosen cakes fromsides of pans with knife. Invert onto wire racks; gently
remove pans. Cool cakes completely.
Meanwhile, beat cream cheese, butter and vanilla in
large bowl with mixer until blended. Gradually beat in
powdered sugar.
Cut each cake layer horizontally in half, using
toothpicks inserted halfway up the side of the layer as
cutting guides. Cut with serrated knife.
Stack on plate, spreading 3/4 cup of cream cheese
frosting between each layer. Spread remaining frosting
onto top and side of cake.
Microwave Cool Whip and chocolate in
microwaveable bowl on high 1-1/2 minutes, st irring
after 1 minute; stir until chocolate is completely melted
and mixture is well blended. Cool 5 minutes. Pour over
cake, letting excess drip down side.
Garnish with white and semi-sweet chocolate curls if
desired. (Slightly soften a 3 to 4-inch chunk of chocolate
in the microwave on medium (50 percent power). Using
a vegetable peeler, scrape the blade lengthwise across
the softened chocolate to create pretty, delicate curls.
Refrigerate the curls until ready to use.)

cucumbers thinking they were zucchini!
The trick here is the brown sugar. And, while I hav
tried it, grated apples might work.
3 eggs
1 cup vegetable oil
1-1/2 cups sugar
1/2 cup brown sugar1 Tbls. vanilla
2 cups flour
1/2 tsp. salt
1/2 tsp. baking soda
2 tsp. baking powder
1/2 tsp. cinnamon
2 cups grated zucchini
1/2 cup walnuts pieces
Grease two loaf pans (preferably with margarin
and dust the pans with sugar. Turn oven to 350.
Grate zucchini.
Beat eggs well, add oil and continue beating, ad
sugar and beat well. Add vanilla and beat. Add all
ingredients and mix thoroughly, then add zucchini
nuts, mixing well.
Put in two loaf pans. Bake for about 45 to 50minutes.

German Rouladen
with Traditional
Swabian Spaetzle______________________________________

Rouladen is a German dish that is traditionally served
with Spaetzle as a Christmas Eve family meal. Spaetzle
are egg noodles that are a staple in German cuisine.
Having grown up in a family where we cherished our
cultural roots, I have attempted to continue many of the
traditional dishes made by my grandmother and
mother, as well as the customs and heritage. I have had
the opportunity to travel to Germany and Austria to
visit and meet with family. While there, I had numerous
opportunities to learn many of the traditional dishes.
Having stayed with family in the small village of
Hozelfingen in the Swabian Alb of Southern Germany,
I was introduced to various Swabian dishes including
Schnitzels, Goulash, Gaisburger Marsch, Dumplings
and the Swabian specialty of Spaetzle.
Rouladen:1-1/2 pounds top round (6 1/4-inch slices, available
from your butcher)
1/2 pound slab bacon
German-style mustard
Whole kosher dill pickle (cut into strips)
1 large onion (1 cup finely chopped and finely sliced
onion slivers for the meat roll)
1 cup carrots
1 cup celery
1 Tbls. butter
1 cup wine (I prefer red; however, you may use
whatever you have open at the time)
1 Tbls. Hungarian paprika
1 Tbls. granulated garlic
Salt to taste
Pepper to taste
2 Tbls. oil
1 Tbls. Vegeta all-purpose seasoning (available locally)
2-1/2 cups beef stock
1 to 2 Tbls. cornstarch or flour
Milk
Season meat filet with salt, pepper, paprika and a
sprinkle of Vegeta. Generously spread one side of each
filet with mustard to taste. Place bacon, onion slivers
and pickle slices on each filet and form into a roll. Use
string or toothpicks to hold the roll together.
Brown the meat rolls in 2 Tbls. oil. Remove meat
and add 1 cup onion, 1 cup carrots, 1 cup celery (I
prefer to finely chop the vegetables in a food processor)
and 1 Tbls. butter to the pan. Saut the mixture for
approximately 5 minutes then deglaze pan with 1 cup
wine. Add 2-1/2 cups beef stock and 1 Tbls. paprika
and return the meat to the pan and bring to a boil.
Turn down heat and simmer mixture for 1-1/2 hours or
until meat is tender, stirring occasionally (may add
additional stock if desired).
When done, remove meat from the pan. Bring broth
to a simmer, add 1 Tbls. Vegeta, and thicken the sauce
with 1 to 2 Tbls. of flour/cornstarch and milk mixture
slurry. Continue to simmer until thickened.
Spaetzle:
3 cups flour
6 large eggs (additional eggs may be needed to ach
proper consistency, I have used as many as 10)
Spaetzle is simply a mixture of flour and eggs
combined to a consistency similar to a sticky batte

Spaetzle making with my cousin Sabine while in
Germany. Unlike other Spaetzle recipes, tradition
Swabian Spaetzle consists only of flour and eggs.

fresh from scratch.
In a large bowl, combine flour and eggs until sm

to a boil. Use a Spaetzle press (available online) t

or until noodles are tender and float. Remove with

These hot from the oven rolls make every dinner special.
They are remarkably fast and easy. The recipe makes a
couple dozen rolls, always important for a large crowd.
The yeast adds that special flavor that makes them a
family favorite.
2 packages yeast
2 cups water
1/2 cup sugar
2 tsp. salt
6-1/2 to 7 cups flour (add gradually)
1 egg
1/4 cup Mazzola oil
Soften yeast in 2 cups water (hot to touch, but not
boiling) in a bowl. Add sugar and salt. Gradually stir in
half of flour.
Beat by hand for 2 minutes. Add egg and oil. Beat in
remaining flour until smooth.
Cover with a damp cloth. Let rise until doubled in
size then punch it down. Form into rolls with a spoon.
(Rolls are easier to handle if you first put flour on your
hands.) Place on non-stick or greased cookie sheet.
Bake at 400 for 12 to 16 minutes. Makes 24 rolls.

1 (15-1/4 oz.) can whole kernel corn, drained
1 (14-3/4 oz.) can cream corn
1 (8 oz.) package Jiffy corn muffin mix
1 cup sour cream
1/2 cup (1 stick) butter, melted
1-1/2 cups shredded cheddar cheese
Preheat oven to 350.
In a large bowl stir together the two cans of corn,
corn muffin mix, sour cream, melted butter and half
the cheese. Pour into a small greased casserole dish. It
should be about 1-1/2 to 2 inches tall. Bake for 45minutes or until golden brown. Remove from oven and
top with remaining cheddar cheese. Return to oven for
5 more minutes or until cheese is melted. Let stand for
5 minutes and then serve warm.
Makes 10 servings.
This recipe has been used in my family for more than 50
years. It is a staple at Thanksgiving dinner. It is easily
doubled, just use a larger casserole dish.

For the meatloaf, combine all ingredients:
2/3 cup oatmeal
2 eggs
1 teaspoon salt
1-1/2 pounds ground beef
2 Tbls. chopped onion
Place in greased casserole or loaf pan.
For the topping, combine all ingredients:
1/3 cup brown sugar
1/4 cup ketchup
1/4 tsp. nutmeg
1/2 tsp. dry mustard
Spread topping to cover meatloaf. Bake in oven
350 until done, approximately 50 minutes.

My Aunt Ginny Williams, who
passed away in 1999, was a Sister
of Loretto who taught at Nerinx
High School and Webster College.
For years, our family celebrated on
Christmas Eve at a party thrown
by Aunt Ginny and another Loretto
nun, Sister Mary Lou Denny. This
was the one time of the year that
the Welsch and Denny families got
together. There was always plenty
of good food and drink. One of my
favorite dishes was this Loretto Vegetable Dip (as I call
it).
I have always loved dips, but admit that many of them
tend to sameness especially during the holiday season
when there are dips at every party. This dip alwaysstands out, though. The addition of the B-V Sauce gives
it a different bite, which is a nice change.
I dont know where the recipe came from. But every time
I make it and I usually do so during the holiday
season I think of my Aunt Ginny Williams and the
many good parties she and Mary Lou hosted for our
families.
Taste is a powerful memory booster!
Its not always easy to find the B-V Sauce in the grocery
store but it is well worth the search to make this
unusual, thick and rich recipe. I usually find it near the
bottled gravies.
2 8-oz. packages of cream cheese
1 4-oz. packet of blue cheese
1 small jar of Hellmans mayonnaise
1 jar of B-V sauce
Green onions, chopped, to taste
1 Tbls. of Worcestershire sauce
Mix everything together until it is creamy. Makes a
lot of vegetable dip.

1/4 pound ham
1/4 pound Italian sausage
(or some combination of the above I use pepperoni
that I have degreased in the microwave instead of
sausage or ham)
2 cloves garlic or 2 tsp. of chopped garlic from a jar
2 onions, chopped
2 or 3 stalks celery, chopped
1 or 2 zucchini, depending on the size
Salt and pepper
Allspice
2 quarts chicken broth or soup stock (I generally use
chicken, but beef or vegetable or some combination
would work as well)
This minestrone looks sort of
complicated, but except for the
cutting up of things, is really quick
and so good. This was my mothers recipe. You cantomit the wine, it really makes the soup.
2 cups shredded cabbage
1 can beans, drained and rinsed (kidney, great
northern, whatever you prefer)
1 cup red wine (moderate to dry red is best, wine you
will drink, not cooking wine)
1/2 cup elbow macaroni
1 (16 oz.) can diced tomatoes
1/4 cup fresh basil or 1 Tbls. dried basil
Parmesan cheese
Fry the meat together in a heavy skillet (unless
using degreased pepperoni, then save it until serving).
Add garlic, onion, celery, zucchini, salt and pepper to
taste and a pinch of allspice. Let cook 10 minutes.
In soup kettle, combine the following: 2 quarts
chicken broth or soup stock, cabbage, beans and red
wine.
Heat until simmering, and then add: contents of
skillet, elbow macaroni and diced tomatoes.
Cook about 10 to 15 minutes until pasta is tender.
About 3 minutes before pasta is done, add fresh basil
or dried basil.
Serve with parmesan cheese (and the wine).

This recipe is my moms much-in-demand potluck
offering. Personally, I recommend grass-fed ground beef
or ground bison.
Meatballs:
3 lbs. ground beef (ground chuck or better grade)
12 oz. or 13 oz. can of evaporated milk
3 cups quick oatmeal (needs to be the quick-cooking
kind)2 eggs (beaten)
1 cup onion chopped
2 tsp. salt
1/2 tsp. pepper
2 tsp. chili powder
Mix well in large mixing bowl. Wash hands and
then roll half-handful of mixture to make 2-inch
meatballs. Place meatballs in 9x13 baking dish. (My
recipe didnt quite fit and I used a small additional
baking dish). Refrigerate while making the sauce and
pre-heat the oven to 350.
Barbecue Sauce:
2 cups catsup
2 Tbls. liquid smoke
1-1/2 cups brown sugar
1/2 tsp. garlic powder
Stir together ingredients for sauce and pour over
meatballs.* Bake one hour at 350.
*I reserved half of the sauce to pour over meatballs
when I transferred them to a crockpot to keep warm
until serving after baking.

3/4 pound ground Italian sausage (some prefer jus
using ground beef, but the sausage spices it up
nicely)
1 medium onion, chopped
1 20-oz. can of crushed tomatoes
2 Tbls. Worcestershire sauce
Salt and pepper to taste
1 cup cooked rice
1 cup shredded cheddar cheese
Grated parmesan cheese
Cut the tops off the peppers and remove the se
Boil in water with a touch of salt until semi-soft (a

Brown meat with the onion, then drain.
Add the tomatoes and Worcestershire. If you li

Simmer and stir for 15 to 20 minutes.
Add the rice, simmer and stir for another 10
minutes, then remove from the burner.
Add the cheddar cheese and stir until its blend
(Youll be surprised how many people comment on
extra taste the cheddar lends.)
Stuff the peppers with the mixture and sprinkl
some Parmesan cheese on top.
Bake uncovered at 350 for about 20 minutes. Dont bake them now if youre going to freeze them
Serve up and dig in. (A dash of Tabasco is advised
the brave.)

2 pork tenderloins (1 to 1-1/2 pounds each)
Marinade:
1 cup soy sauce1/2 cup sesame seeds
5 Tbls. sugar
3 Tbls. minced onion
2 Tbls. ground ginger
1 Tbls. garlic powder
Mix ingredients and marinade pork tenderloin
24 hours, turning occasionally. Drain marinade an
reserve.
Bake tenderloins for 45 minutes at 350. Cool a
slice thin. Set slices back in marinade and heat.
May freeze sliced and marinated for 2 months.
We like to serve this in a chafing dish with dollar
