A Message from our Co-President ~~~~~~~~~

‘Tistheseasonforcitrus,andthistimeofyearI’malwayslookingforcleverwaystouseourbackyard’sbounty.Myhusbanddoesn’tliketowateranythinghecan’teat,somuchofouryardislandscapedinedibles,includingmanycitrusandotherfruittrees.

SoitseemedlikeJanuarywouldbeagreatmonthforourresidentexpert,JanFetler,toenlightenusonthechoosing,planting,andcareoffruittrees.

Thisisthetimeofyeartoprotectcitrusfromfrost.OurdeciduousfruittreesareallskeletonsnowandIcanseehowmuchtheyneedaproperpruning.“Pruningstimulatesnewgrowth,controlsthetreesize,andimprovesthesizeandqualityofthefruit,”saystheNationalGardeningAssociation.Ithinkitmakesthefruiteasiertopickandmakesthetreenicerlooking,whichisimportantwhenfruittreesareyourchoiceforlandscaping.

Thistimeofyearcitrusfruitisbeginningtoripen.We’vebeenpickinglimesanddutifullymakingmargaritastousethemup.TheMeyerlemonsarereadytopickandlemoncurdisfuntocookandmakesagreatgift.Thisrecipe(seepage6)thatI’vebeenusingitforyearscomesfromtheCookingLightwebsite.It’slighterandmuchlessrichthantraditionallemoncurd,andittastesgreatonscones.

CranberryorangesconesservedwithMeyerlemoncurdmightjustbeourfirstbreakfastoftheNewYear!

Lemon Curd Yield: 1 ½ cups

Ingredients• 3/4 cup sugar • 1 tablespoon grated lemon rind • 2 large eggs • 2/3 cup fresh lemon juice (about 3 large lemons) • 2 tablespoons butter or stick margarine

Preparation Combine the first 3 ingredients in a saucepan over medium heat, stirring with a silicone spatula. Cook until sugar dissolves and mixture is light in color (about 3 minutes). Stir in lemon juice and butter; cook for 5-10 minutes or until mixture thinly coats the back of a spoon, stirring constantly. Cool. Cover and chill (the mixture will thicken as it cools).

Note: Lemon Curd freezes nicely. If you over-heat the curd you might get a little bit of scrambled egg looking bits in it- just strain it and it will be lovely.
