Chorizo Breakfast Burrito

This breakfast burrito is a carnivore’s dream come true. The tomato and avocado “salsa” balances out the heavy, meaty flavors and tones down the spiciness of the chorizo. For those who want

even more spiciness, add some liberal doses of your favorite bacon-flavored hot sauce.

1 10–12-strip bacon weave, cooked(see page 18)

¼ avocado, diced ¼ tomato, diced 2 tablespoons onion, diced 1 tablespoon fresh cilantro salt and pepper ¼ cup chorizo 2 eggs, beaten 1 cup jack cheese, shredded 1 12" tortilla

1 Prepare the bacon weave by weaving 10–12 strips of bacon together. Carefully place the weave on a parchment-lined baking sheet and bake at 375°F for 25–30 minutes until bacon starts to crisp. Remove from oven and drain on paper towels.

2 In a small bowl, combine avocado, tomato, onion, cilantro, salt, and pepper to taste. Stir until well combined. Refrigerate until ready to use.

3 Cook the chorizo in a skillet over medium heat. When the chorizo is cooked, add the beaten eggs and scramble together. Cook until eggs are cooked through. Add cheese to skillet and remove from heat.

4 To assemble, lay the bacon weave on top of the tortilla. Spoon the egg mixture in a line in the center of the bacon weave, then top with avocado/tomato mixture and roll into the shape of a burrito. Serve immediately with hot sauce or your favorite salsa.

Bacon Fireballs

These fireballs have a spicy kick to them! Stuffed with pepper jack cheese and jalapeños, you can make them even spicier by substituting hotter chiles or peppers. Be careful cooking these on the barbecue, though, because bacon grease can easily catch fire.

2 pounds bacon, divided 1 pound ground beef 4 ounces pepper jack cheese,

shredded 2 jalapeños, seeded and chopped 1 large onion wooden skewers, soaked in water BBQ sauce

1 Reserve 12 raw strips of bacon and cook the rest until the fat starts to render out, but does not start to crisp. Chop the cooked bacon finely, then combine with ground beef. Form into 12 uniform patties. Spoon some pepper jack cheese and jalapeños onto each patty, then form into a ball, sealing the cheese and jalapeños inside.

2 Cut off both ends of the onion and cut it in half. Using the smaller layers of onion, cup each fireball in 2 onion halves. Cut the larger layers into 4 pieces and use 2 of these pieces to cup a fireball. Wrap each fireball in 1 strip of uncooked bacon and secure with a wooden skewer.

3 Brush each of the fireballs with your favorite barbecue sauce, then grill them until the internal temperature reaches 145°F, about 15–20 minutes. Let them rest for 5 minutes, then serve warm.

1 If you’re using chicken tenders, remove the sinews. If you’re using chicken breasts, cut them into 12 strips of roughly equal size and length. Season the chicken with salt and pepper. Slice the cheese into 12 finger-length strips. Skewer each chicken strip lengthwise, starting at one end and running lengthwise to the opposite end. Leave very little of the skewer’s pointed tip exposed, as it will burn.

2 Lay a strip of cheese on each chicken skewer. Top with a basil leaf. Secure the basil leaf and cheese to the chicken by wrapping the piece of bacon around each chicken skewer. To keep the bacon from uncoiling as it cooks, tuck the top end of the bacon under the first winding and secure with butchers string.

3 Set up the grill for direct grilling and preheat to medium-high.

4 When you’re ready to cook, brush and oil the grill grate. Place the folded aluminum foil grill shield toward the front of the grill grate. Arrange the spiedini on the grill grate, using the grill shield to protect the exposed ends of the skewers. Rotate the skewers every 2–3 minutes so the bacon browns evenly. If flare-ups occur, pull the spiedini forward so they’re protected by the grill shield. When the fire dies down, return them to their original positions.

5 Transfer the cooked spiedini to a platter or plates. Serve immediately.
