For any of you who plan to attend the Hobo Rally at Blythe, we will have a parking area together and a happy hour! Just tell the parkers you are with the Classic Airstream Club. We have been invited to attend the Four Corners Rally at Dead Horse State Park immediately after our Arizona Adventure rally by our member Bob Whitcomb who is a member of Four Corners. You can go

Get yourself in a Cajun State of Mind!
Cook Gumbo for a crowd
If you can’t go on our Cajun Classic Airstream Club Caravan, Mardi Gras is a good time for a Cajun theme rally. Here is an authentic gumbo recipe fit for a crowd.
Ingredients:1 pt. roux (*), 3 gallons water, 2 chopped onions, 1 tsp parsley flakes, 1 tsp filé, 2 fryers, cut and 3 lbs fresh pork sausage (or) shrimp, crab, oysters or crawfish for seafood gumbo, salt & pepper to taste.
Put water, onions and roux boiling (use cold water with hot roux or hot water with cold roux). Stir until roux is dissolved. Boil for an hour (for seafood gumbo, boil 2 hours then add seafood and cook 30 minutes.) Add sausage and cook for a second hour. Remove sausage and cut in bite size pieces. Add filé, seasoning and parsley flakes.Serve over rice while hot.

- Comme ci, Comme ca (come-se, come sah): so-so ***- Joie de vivre (zhwah duh viv-re): joy of living***- Café Noir (caf ay nwah) or Café-au-lait (caf-ay-o-lay):black coffee or coffee and milk or cream *** - Beignet (bin-yay): a fritter or strangely shaped doughnut without a hole, sprinkled with powdered sugar (a New Orleans favorite)***- Pirogue (pee-rogue): Cajun canoe, originally made from a dug-out cypress log*** - Cajuns Bayou (by-you or by-yo): a sluggish stream bigger than a creek and smaller than a river *** - Andouille and Boudin (ahn-doo-ee and boo dan): two types of Cajun sausage. Andouille is made with pork, boudin with pork and rice. ***- Bourée (boo-ray): popular Cajun card game, sometimes called "Cajun Bridge" *** - Cher (sha): term of endearment or "my sweet" *** - Crawfish-crayfish (craw-fish): a small fresh water crustacean related to the lobster**- Etouffée (ay too fay): method of cooking something (usually shrimp or crawfish) smothered in chopped vegetables over low flame, tightly covered until tender **- Jambalaya (jum buh lie uh): highly-seasoned mixture of any of several combinations of seafood, meat, poultry, sausage and vegetables, simmered with raw rice until liquid is absorbed**- Fais-do-do (fay-doh-doh): a type of street dance derived
