The southern Rhône valley From the south of Montélimar down to Avignon, the southern Rhône valley, located on a very diverse, often poor soil, is subject to a mediterranean climate.
At least 8 grape varieties are in use: Grenache, Syrah, Mourvèdre, Cinsault, Clairette, Bourboulenc and Roussane.
Many varieties come from Spain and were introduced, during the 17th century. The Grenache remains the main variety and produces robust, full-‐bodied, sensuous wines.

The Northern Rhone valley The northern vineyard of the Rhône valley is located between Vienne and Valence, on 4 700 hectares along the Rhône.
This region is characterized by granitic soils and steep narrow hillsides, where the vine has to accommodate to a small space.
This particularity of the northern Côtes-‐du-‐Rhône produces a powerful wine, with nice colors, that usually ages well, and exhibits pepper, leather and spice flavors. Although many varieties of grapes are used in the whites, (Marsanne, Roussanne, Viognier), the vineyards of each appellation often favor individual productions.

Burgundy Burgundy is located in the Centre-‐East of France, in between Auxerre and Mâcon. With 27 200 hectares, this vineyard represents 3% of the French AOC vineyard.
Burgundy is characterized by climate variations from one sub-‐region to another and a lot of local microclimates.
In Burgundy, the grape varieties have a clay and limestone quality. This geographic climatic and geologic mix is a perfect environment for pinot noir and chardonnay.

Bordeaux The Bordeaux region lies in between the Atlantic on its left side and Gironde on its right. With 119 000 ha and 60 appellations, it is the largest French AOC vineyard.
The main red grape varieties in this region are merlot, cabernet-‐sauvignon and cabernet franc. The three white grape varieties are sémillon, sauvignon and muscadelle. The Bordeaux region produces 90% red wines.
Bordeaux offers a lot of rankings that reward both the quality of soil and the work done. The most famous are the 1855 ranking, the Graves ranking, the Saint-‐Emilion ranking and the ranking of the Crus Bourgeois du Médoc.

The Champagne region Champagne is a sparkling wine named after its appellation. It is the only region with only one main appellation.
The Champagne vineyard covers 33 000 hectares split between Marne, Aube and Aisne. Three main grape varieties are the basis for the creation of champagnes: pinot noir, pinot meunier and chardonnay.
Before it becomes a Champagne, it is a still wine, undergoing a slow transformation to become sparkling after what is called "foam taking". According to the legend, this wine-‐making method comes from a monk called Dom Pérignon.
