Ingredients

• 1/2 C. plain yogurt

• 1/4 C. diced, seeded cucumber

• 1/4 C. mayonnaise or creamy salad dressing

• 1/4 c. chopped, pitted Kalamata olives

• 2 or 3 boneless chicken breast halves, cooked and diced*

• 2 T. sliced green onions

• 2 plum tomatoes, seeded and diced

• 1/2 C. crumbled feta cheese

*Try boiling your chicken for this recipe!

In a medium bowl combine yogurt and

mayonnaise, stirring until smooth.

Page 4: Mediterranean Chicken Salad

Chop up your boiled chicken.

Page 5: Mediterranean Chicken Salad

Chop up your veggies.

Page 6: Mediterranean Chicken Salad

Combine all these ingredients into the yogurt and

mayonnaise mixture and add a little feta cheese.

Toss until well blended.

Serve immediately or spread over sliced

cocktail buns to make sandwiches.
